WELSH ONION CAKE WITH CAERPHILLY
Take this Welsh classic to the next level by adding sharp, salty cheese and sweet leeks. It's the perfect dish for St David's Day or an easy family dinner

- In a large pan, heat a knob of the butter with a drizzle of oil. Once the butter is foaming, add the onions, leek and some seasoning and cook for 15 mins until the onions are soft and sticky, stirring occasionally. Butter a 22cm cake tin or baking dish (alternatively, you can assemble the cake in the pan you're already using if it's ovenproof).
- In a separate pan, melt the remaining butter. Toss the sliced potatoes with the melted butter and plenty of seasoning. Heat oven to 200C/180C fan/gas 6.
- Arrange the potato slices over the base of the dish in a spiral or in concentric circles. Top with some of the onion mix, sprinkle over a layer of cheese and continue layering, finishing with a final round of potato slices. Press down firmly with your hands to compact the layers. Bake for 45-50 mins until the potatoes are golden brown and tender; cover with foil if the cake starts to take on too much colour. Turn out onto a plate to serve.

- Heat about a quarter of the butter in a large pan, set over a medium heat. Sweat the onions with a little salt and the rosemary sprig. Slowly cook on a gentle heat with a lid on for about 20 mins. Remove rosemary and set aside.
- Heat oven to 190C/170C fan/gas 5. Peel the potatoes and immediately cut into wafer-thin slices directly into a bowl containing the rest of the warm butter. Season with salt and pepper. The thinner the potatoes, the better the dish will be. Do not wash them once they are sliced, as you want all of the starch to stick the potatoes together.
- Line an ovenproof, non-stick frying pan with a round of baking parchment. Layer potatoes neatly into the dish in a circle, slightly overlapping. The bottom of the pan will become the presentation side. Continue to pile in half of the potatoes, then add the melted onions. On top of the onions continue with the potatoes until all used up. Set the pan over a medium heat and gently begin to colour the bottom of the dish for 5 mins, then transfer to the oven and cook for 45-50 mins until the potatoes are soft.
- Remove from the oven and leave to rest for 10 mins. Invert onto a serving plate, then slice into wedges with a very sharp knife.

WELSH ONION CAKE
Today's recipe for Welsh Onion Cake is a traditional Welsh recipe, where the humble potato takes centre stage along with onions and butter. Welsh Onion Cake, or "teisen winwns" and "teisen nionod", as it is known in Wales, is classic comfort food that is cheap and easy to make. (If you live in North Wales, where I live, you may know this recipe as "cacon nionod") It's a simple recipe of layered potatoes and onions, with butter, that is baked in a cake tin, or an enamel pie tin, until it is soft, sticky and golden. It's usually made as an accompaniment, for sausages, roast meat or roast chicken, but is equally delicious when served as a main meal with salad leaves or even crusty bread. There are many versions in Wales, some have herbs in them, such as rosemary, parsley or sage, and some also add cheese, usually Caerphilly cheese, to the layers of potatoes and onions. A Welsh Onion cake falls into the genre of baked potato dishes, that are popular all over the world; such as Pommes Anna in France, and that other French dish of Gratin Dauphinoise, as well as Scalloped Potatoes, the creamy version which is popular in the States. I expect this recipe was borne of frugality when times were hard, and potatoes and onions were readily available. The butter is a fairly luxurious, and probably modern addition. I am sure housewives in the past would have used dripping in place of butter, or even some stock. For a recipe with just three ingredients and seasoning, it's super tasty and very filling too. I made my last Welsh Onion Cake for lunch, and we enjoyed it between the four of us with salad as a main meal. But, it makes a fabulous side dish for any roast meat or chicken, and once all the slicing has been done and the cake has been layered in the cooking dish, it gently cooks away in the oven for an hour and a half, with no need to baste or turn over etc. So, it is a very forgiving recipe!

- Pre-heat the oven to 200C/180C Fan/400F/Gas mark 6. Butter a 8" (20cm) round cake tin or pie tin generously with butter and line the bottom with a circle of greaseproof paper.
- Layer the potatoes and onions in the prepared tin, seasoning with salt, pepper and adding bits of butter between each layer. Finish layering the Welsh Onion Cake with a layer of potatoes.
- Melt the remaining butter and pour it over the cake.
- Cover loosely with foil and bake in pre-heated oven for 1 1/2 hours, removing the foil for the last 15 minutes.
- Remove from the oven, scatter the parsley and cheese over if using, then allow to settle for 10 minutes to make it easier to lift the cake onto a serving plate.
- Cut into wedges and serve with sausages, roast meat and chicken, or as a main meal with salad.

WELSH ONION CAKE
This Welsh onion cake is simple to make and layered with buttery, crispy, sliced potatoes and onions, with some grated cheese.

- First pre-heat your oven to around 180 degrees fan / Gas Mark 6. BUT, if you are already using your oven to roast your Sunday lunch, just maintain that temperature - this Welsh onion cake is hardy and can cope with whatever temperature you throw at it!
- Firstly slice all of your potatoes as thinly as you can (but don't worry yourself too much if they are a bit thick - I don't use a mandolin or anything like that). I don't peel my potatoes either - it's up to you if you want to.
- Slice your onions thinly and grate your cheese.
- Generously butter your dish.
- Layer your buttered dish with a layer of potatoes (I use up the halves and scraps of potato for this bottom layer, which won't really be seen).
- Add a layer of sliced onions and some grated cheese, then season with salt and pepper.
- Repeat with more layers of potato, onion, cheese and seasoning (I normally get 2 layers of each plus a final one of potatoes).
- Try to save the nicest looking whole slices of potato to top the dish, as this will be the layer you see when you take the dish to the table (if you care about that kind of thing!).
- Top the Welsh onion cake with a few knobs of butter and cover loosely with tin foil.
- Bake for one hour covered, and then for a further 30 minutes uncovered, leaving you with soft potatoes and onions underneath a buttery, crispy layer of potatoes (my favourite bit).

- Grease a 7 inch souffle dish and place a layer of potatoes on the bottom and then a layer of onions, dot with butter and sprinkle with salt and pepper.

- 1. Heat about 1/4 of the butter in a large pan, set over medium heat.
- 2. Sweat the onions with a little salt and the rosemary sprig. Slowly cook on a gentle heat with a lid on for about 20 minutes. Remove rosemary and set aside.
- 3. Grease an oven proof dish and on the bottom of the dish, place a thick layer of potatoes, well seasoned with salt and pepper.
- 4. Add a layer of onions.
- 5. Dot each layer with butter and thyme (if using), and repeat this again, or until the dish is full, ending with a layer of potatoes.
- 6. The top layer should also be dotted with butter, using more than given above, if necessary. Cover with a lid or foil and bake in a moderate oven (350F.) for about one and a half hours, removing the lid for the last half hour.
- 7. Note: The variety of potato makes it difficult to give a precise cooking time: very floury ones can cook in 1 hour where as waxy ones will take longer. If using the cheese, sprinkle a little bit on each layer.

- 1. Preheat the oven to 200C/gas 6. (400F).
- 2. Peel the potatoes and slice very finely with a mandolin or sharp knife.
- 3. Toss with the melted butter and season with plenty of salt and black pepper.
- 4. Brush a shallow ovenproof dish with a little a little more melted butter.
- 5. Layer the potato and onion in the dish, starting with potato and finishing with a neat layer of overlapping potato slices.
- 6. Drizzle any remaining butter over the top.
- 7. Cover the dish with foil and bake in the oven for 1 hour.
- 8. Meanwhile, take the lamb out of the fridge to come to room temperature.
- 9. After the onion cake has had an hour in the oven, remove the tin foil.
- 10. Sit the lamb racks on top with their bones interlaced and tuck the rosemary sprig in the middle.
- 11. Return to the oven for 15-25 minutes, depending on the size of the racks and how you like your lamb cooked.
- 12. By now the potatoes should be beautifully tender and browned on the top.
