SCALLOPED POTATOES



Scalloped Potatoes image

The perfect side dish to an elegant or celebratory main course, or the welcome addition to any potluck supper, scalloped potatoes are one of those dishes that seem complicated, but are deceptively simple. You'll need to put in a bit of "peeler time" to get the spuds ready for the oven, but after that it's just a long bake and a short standing period to let the sauce thicken. Then, voila! you're ready to serve.

4 tablespoons butter
1 small onion, finely chopped (1/3 cup)
3 tablespoons Gold Medal™ all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
2 1/2 cups milk
6 medium peeled or unpeeled potatoes, thinly sliced (6 cups)

Steps:

  • Heat oven to 350°F. Grease 2-quart casserole with shortening or cooking spray.
  • In 2-quart saucepan, melt 3 tablespoons of the butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute.
  • Spread potatoes in casserole. Pour sauce over potatoes. Cut remaining 1 tablespoon butter into small pieces; sprinkle over potatoes.
  • Cover; bake 30 minutes. Uncover; bake 1 hour to 1 hour 10 minutes longer or until potatoes are tender. Let stand 5 to 10 minutes before serving (sauce thickens as it stands).

2 1/3 c water
2/3 c milk
2 Tbsp butter
1/2 c frozen peas
8 hot dogs sliced
1 c shredded cheddar cheese
sliced chives for garnish

Steps:

  • 1. Stir the potatoes , sauce mix, water and milk in a large skillet. Add the butter and peas and heat to boiling reduce to a simmer and simmer 20 minutes.
  • 2. Stir in the hot dogs and cheese and cook until cheese is melted. Garnish with chives.

Steps:

  • Stir potatoes,Sauce mix, hot water and milk in skillet.
  • Stir in frozen peas or other canned or frozen vegetables.
  • Heat to boiling, cover and simmer 15 minute.
  • Stir occasionally, until potatoes are tender.
  • Stir in weiners; cover and heat 5 minutes or until weiners are hot.
  • Sprinkle cheese over all.
  • Cover and let stand 5 minutes until cheese melts.

2 small red potatoes, sliced 1/4 inch thick
2 tablespoons olive oil, divided
1/4 pound bay scallops
1 garlic clove, minced
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1/8 teaspoon salt
Dash pepper
Lemon slice or wedge, optional

Steps:

  • In a small skillet over medium heat, cook potatoes in 1 tablespoon oil until golden brown and tender, about 12 minutes. Remove and keep warm. In the same skillet, heat remaining oil. Cook and stir scallops for 2 minutes. Add garlic and lemon juice; cook and stir 1-2 minutes longer or until scallops are firm and opaque., Add parsley, salt and pepper. Return potatoes to pan; heat through. Serve with lemon if desired.

1/4 cup all-purpose flour
1-1/2 teaspoons salt
1/8 teaspoon pepper

1 cup shredded Swiss cheese
2 tablespoons minced fresh parsley
5 medium potatoes, peeled and thinly sliced
8 hot dogs, halved and sliced

Steps:

  • In a large saucepan, saute onion in butter until tender. Stir in the flour, salt and pepper until blended. Gradually add milk. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat; stir in cheese until melted. 1 can(s) cream of mushroom soup
1/4 c milk
dash pepper
5 c potatoes, boiled and sliced
1 lb favorite weiners, cut in coin type slices
!/2 c chopped onion
1/4 c chopped green pepper
1 Tbsp butter or margerine
directions
blend soup,milk, and pepper add potatoes
onions and green pepper.turn into greased
2 qt casserol. put dots of buter or margerine on.
bake uncovered in 350 degree over for 45
minutes.

5 Lbs white potatoes, peeled and washed
4 Tablespoons butter
1/4 cup flour
2 cups half-and-half
2- 2 1/2 cups whole milk
8 oz Velveeta Cheese
1/2 medium size onion diced
1 teaspoon kosher salt, or to taste
1/4 teaspoon black pepper, or to taste
2 cups shredded cheddar cheese
1/2 cup shredded parmesan cheese
1 cup ham cubes (optional)
6 slices crisp bacon, crumbled (optional)
2 cloves diced garlic (optional)

Steps:

  • Preheat oven to 350 degrees F. Spray a large baking pan with no stick cooking spray. ( I use the disposable aluminum pans if transporting to an event).
  • Cut potatoes into thin slices; set aside in cold water.
  • In a large dutch oven or saucepan, melt the butter. Whisk in the flour until smooth. Slowly,add the half-and-half then milk, whisking constantly until well combined. Add the Velveeta. Allow to cook over low heat until mixture is thickened and cheese is melted, stirring constantly. Remove from the heat.
  • Drain water from potatoes. Arrange half of the potatoes in the pan. Season with salt and pepper. (Add any optional ingredients like garlic, bacon or ham). Add half of the onion slices and 3/4 cup shredded cheddar cheese. Pour about half of the milk/cheese sauce over the potatoes.
  • Repeat with remaining potatoes, onions, salt & pepper, 3/4 cup shredded cheddar cheese. Top with remaining milk/cheese sauce.
  • Cover with aluminum foil (sprayed with no stick spray). Bake about 1 to 1 1/2 hours until potatoes are tender. Remove from oven. Remove foil, sprinkle the remaining cheddar cheese and the parmesan cheese over the top. Bake about 15-20 minutes until cheeses are melted.
  • ***if cheese sauce seems too thick, add additional milk to thin** I start with 2 cups of the milk and increase amount after that.
