This is the most delicious Healthy Taco soup! Make it in the slow cooker, Instant Pot, or stove-top. Packed with shredded chicken, beans, and corn - it's a reader favorite!

1 lb. boneless skinless chicken breast
1 onion, diced
2 garlic cloves, minced
14.5 oz. canned pinto beans, drained
14.5 oz. canned black beans, drained
14.5 oz. canned corn, drained
14.5 oz. canned diced tomatoes with green chilies (not drained)
2 cups fat free chicken broth
1.25 oz. taco seasoning

Steps:

  • Slow Cooker Option: Add everything to the slow cooker. Cook on low for 4 hours (up to 8 is fine). Remove the chicken and shred or chop.
  • Stovetop: Add a touch of olive to a large soup pot. Cook the onions for 6-8 minutes until tender. Add the garlic and cook for 1 minute until fragrant. Add the remaining ingredients and bring to a simmer. Cover and cook for 30 minutes. To keep the chicken as tender as possible, I like to remove it after 12-15 minutes when it is cooked through. Then I shred or chop it and add it back to the soup before serving.

I have seen a couple of recipes for taco soup, but this is different. I received it from my ww leader. It is very much like a chili and is so easy. My family loves it and I love it topped with 1 tbsp low fat sour cream.

1 lb extra lean ground beef or 1 lb turkey
1 large onion, diced
2 (15 ounce) cans chili beans
1 (15 ounce) can zesty beans (I use S&W chili beans in a zesty sauce)
1 (15 ounce) can black beans, drained
1 (15 ounce) can corn, undrained
1 (15 ounce) can tomato sauce
1 1/2 cups water
1 (4 1/2 ounce) can chopped green chilies
1 (1 1/4 ounce) package taco seasoning
1 (1 ounce) envelope ranch dressing mix

Steps:

  • Brown meat and onion, drain and add remaining ingredients. Bring to a boil then reduce heat and simmer 30 minutes. 2 points per cup!

1 lb cooked, drained lean ground beef or chuck
1 medium sliced onion
2 can(s) 16 oz- dark red kidney beans, drained/rinse
1 can(s) 16 oz-pinto beans, drained/rinsed
2 can(s) 16 oz-light red kidney beans, drained/rinsed
1 can(s) rotel tomatoes
1 can(s) 8 oz- mushrooms
1 can(s) 8 oz- whole kernel yellow corn
1 can(s) 28 oz- diced tomatoes
4 c beef broth
1 pkg ranch dry dressing mix
2 or 3 pkg taco seasoning mix
salt and pepper to taste
cheese and sour cream for top/optional

Steps:

  • 1. Brown hamburger meat, drain and put in crock pot. Slice onion and put on top and add all other ingredients and mix well being careful not to crush the beans.
  • 2. Set crock pot on low for 4 to 6 hours. ***FREEZES GREAT: Divide into servings, freeze and when ready just take out of freezer and straight in microwave. no need to defrost..
