1 cup(s) Uncooked carrot(s) sliced
1 medium Sweet red pepper(s) finely chopped
0.25 cup(s), chopped Uncooked onion(s)
2 clove(s), large Garlic clove(s) finely chopped
3 cup(s) Fat free chicken broth beef broth or vegetable broth
1 cup(s), shredded Uncooked savoy cabbage shredded
2 tsp(s) Canned tomato paste
0.5 tsp(s) Dried basil
0.25 tsp(s) Dried oregano
0.25 tsp(s) Table salt or to taste
1 cup(s) Fresh spinach chopped
1 cup(s) Uncooked zucchini finely chopped

Steps:

  • Coat a medium pot with cooking spray and heat over medium- low. Add the carrot, bell pepper, onion, and garlic and cook until softened, 5 to 10 minutes, stirring occasionally.
  • Add the stock, cabbage, tomato paste, basil, oregano, and salt and bring to a boil over high heat. Reduce heat and simmer, covered, for about 15 minutes. Stir in the spinach and zucchini and cook until tender, 3 to 4 minutes.
  • Yields about 1 1/2 cups per serving.

1/2 cup chopped onion
1/2 cup chopped or shredded carrots
1/2 cup chopped celery
2 garlic cloves, pressed
4 cups fat-free broth of your choice
1 can (14-1/2 ounces) diced tomatoes
1 cup chopped or shredded cabbage
1 cup chopped spinach or kale
1 tablespoon tomato paste
1/2 teaspoon dried basil (or more to taste)
1/2 teaspoon dried thyme (or more to taste)
1/2 teaspoon salt
1 cup chopped zucchini
Chopped parsley or basil for garnish (optional)

Steps:

  • Spray a large saucepan or soup pot with nonstick cooking spray. Add the onion, carrot and celery and cook over low heat, stirring often until the vegetables have softened.
  • Add the garlic and stir for another minute.
  • Add the broth, tomatoes, cabbage, spinach, tomato paste, basil, thyme and salt and bring to a boil over medium high heat. Lower the heat, cover the pot and simmer gently for about 15 minutes.
  • Add the zucchini and cook until softened, 3 - 5 minutes more.
  • Stir in chopped fresh parsley or basil just before serving if desired.

I got this recipe from someone at my Weight Watchers meeting. I don't know where the original recipe came from. It's very low points and I can eat it every day without getting tired of it.

3 (14 1/2 ounce) cans chicken broth
2 (1 lb) bags frozen broccoli
1 (10 1/2 ounce) can rotel brand tomatoes and green chilies
10 ounces Velveeta reduced fat cheese product

Steps:

  • Mix chicken broth, frozen broccoli and tomatoes and chilies together.
  • Simmer for 25 minutes or until veggies are tender.
  • Cube Velveeta and put into soup pot.
  • Simmer just until cheese is melted.
  • This recipe freezes and refrigerates well. I make a large recipe at the beginning of the week and use it to snack on when I'm in danger of breaking my diet. I can have a large bowl and some crusty bread with it and still be under 5 points.

56 ounces fat-free chicken broth
1 (10 ounce) can rotel (your choice of heat)
1 lb Velveeta reduced fat cheese product

Steps:

  • Cube cheese for easier melting. Set aside.
  • In large stock pot place all ingredients.
  • Cook over medium heat for approximately 30 minutes or until vegetables are tender.
  • Add cheese and continue cooking until cheese melts.
  • Stir often so it doesn't burn on bottom of pan.
