This Zero Point Ranch Dip is so easy to make. Use it as a creamy delicious accompaniment to crudites and low point chips / crisps!

1 cup fat free greek yogurt / fat free natural yogurt ((250g))
2 tbsp Ranch dressing mix (I use Hidden Valley Ranch Seasoning) ((20g))

Steps:

  • In a small bowl add 2 tablespoons of ranch dressing mix to 1 cup of fat free Greek yogurt.
  • Mix until smooth.
  • Serve as a dip for chopped carrots, sweet peppers, cucumber sticks, tomatoes etc.
  • Alternatively it can be used as a dip for low SmartPoint chips or low point crisps.

1 lb skinless, boneless chicken breasts ((cut into 4 fillets))
1 cup cornflakes cereal
1 packet dry Ranch dressing mix
1/2 cup fat free sour cream

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Rinse and chicken breasts and pat dry. Evenly coat both sides of each breast with sour cream.
  • In a large Ziploc bag, add the cornflakes and Ranch Mix, and crush cornflakes well.
  • One by one, put each sour cream coated chicken in the seasoned cornflake crumbs and gently shake until chicken breast is coated.
  • Place coated chicken in a 9×13 inch baking dish that has been sprayed with non-fat cooking spray. Lightly mist with an olive oil mister, and bake in the preheated oven for 1 hour.

Steps:

  • Saute green peppers and onion in a skillet sprayed with Pam. Add soup, Rotel tomatoes and chicken. Alternate layers of tortillas and soup mix in a casserole dish. Sprinkle cheese on top. Bake at 325°F for 40 minutes or until hot and bubbly.

2 cups chopped cooked boneless, skinless chicken breasts
1 small onion (chopped)
1 green bell pepper (diced)
2 cans fat-free cream of mushroom soup, undiluted (10.5 ounces cans)
10 ounces diced tomato (canned, drained)
1 teaspoon chili powder
1 teaspoon garlic powder
1/2 teaspoon pepper
8 corn tortillas (cut into quarters (I used Mission Extra Thin Corn tortillas))
1/4 cup shredded reduced-fat cheddar cheese
Nonstick Vegetable cooking spray

Steps:

  • If you don't already have cooked, diced chicken breast start off by cooking and dicing some boneless, skinless chicken breast.
  • Dice the onion and green bell pepper.
  • Spray a nonstick pan with vegetable oil spray.
  • Sauté onion and bell pepper in a large skillet coated with cooking spray over medium-high heat for 3 to 4 minutes or until tender.
  • Add the chicken, 2 cans of cream of mushroom soup , a can of diced tomatoes, chili powder, garlic powder and ground pepper. Mix well and let it come to a gentle simmer. Remove from heat and let it cool.
  • Preheat the oven to 350 F and lightly grease a 9x9 casserole dish with vegetable spray. Cut the corn tortillas into wedges.
  • Place a layer of tortilla wedges. Top with one-third of the chicken mixture. Place another layer of tortilla wedge followed by another layer of the chicken mixture. Next goes the final layer of tortilla wedges , followed by the remaining the chicken mixture.
  • Finally, top the casserole with 1/4 cup of shredded cheddar cheese.
  • Bake at 350F for 30 to 35 minutes or until bubbly and golden.
  • Serve immediately. refrigerate the leftover in a covered container.

This Weight Watchers Crack Chicken Dip can be eaten three ways! Make it into a delicious dip, use it as a salad topping, or add it to mini bell peppers for a treat! This Ranch-Bacon-Cream Combo is going to be your new favorite meal!

1 lb frozen chicken breast (or thighs)
4 slices turkey bacon
¼ cup cheddar cheese
¾ cup cottage cheese (low fat)
¼ cup Greek yogurt (fat free)
1 tsp garlic salt
1 tsp onion powder
½ tsp pepper
½ tsp parsley
1 tsp fresh dill (1/2 tsp dried)

Steps:

  • Place the (frozen or thawed) chicken in the bottom of the Instant Pot. Add 1 cup water, then lock the lid into place and turn the pressure valve to Seal.
  • Cook on high pressure using the manual function for 12 minutes. When done, let the pressure release naturally. This will prevent the chicken from drying out.
  • While the chicken is cooking, cook the turkey bacon in the oven according to the package. Cut into cubes and set aside until ready to use.
  • Mix the cottage cheese, yogurt, garlic salt, onion powder, pepper, parsley, and dill together in a blender. Mix well until you have a ranch-like dressing. Set aside until ready to use.
  • Drain and shred the chicken. Add the dressing from the blender, turkey bacon, and cheddar cheese over the chicken. Mix well. You can turn the Instant Pot to sauté to help the melt the cheese if your chicken has cooled.
  • Add 1 cup water or low sodium chicken broth to the crockpot. Cook the chicken on high heat for 4 hours.
  • While the chicken is cooking, cook the bacon in the oven. Cube it when it's finished cooking.
  • Blend together the cottage cheese, Greek yogurt, garlic salt, onion powder, pepper, parsley, and dill in the food processor or blender.
  • Pour the sauce into your shredded chicken. Add turkey bacon and cheddar cheese. Optional: Add back to the slow cooker if you want to keep it warm for later.
  • Bake or broil the chicken to cook. I prefer boiling it in a pot of water.
  • Cook the bacon at 400 degrees for about 15 minutes. When it's done, cube it.
  • When the chicken is done cooking, shred it with two forks or a mixer.
  • Mix the cottage cheese, Greek yogurt, garlic salt, onion powder, pepper, parsley, and dill in a food processor or blender.
  • Pour the sauce over the shredded chicken. Add the cooked bacon and cheddar cheese.
