GRILLED BANANA SPLITS
A great ending to a lovely summer barbecue! Adapted from Country Living magazine. The original recipe called for brandy, but I have subbed vanilla.

Steps:
- Heat the grill to low. Make and incision lengthwise on the side of each banana, leaving 1 inch uncut at both ends and the skin intact. Spread open the cut and place 2 teaspoons of butter pieces, 1 tbs. brown sugar, and 1 teaspoons vanilla inside.
- Grill, covered, until the butter mixture has melted and bananas are heated through, 8 to 10 minutes. Move the bananas to 4 separate sundae dishes, carefully flipping the bananas over and pouring the sauce into the bottom of each dish.
- Peel off the skins, and top each with an equal amount of ice cream; add warm chocolate sauce, and nuts, if desired. Serve immediately and enjoy!

- 1. Layer banana slices on the bottom of the graham crust. Then cover banana slices with the drained pineapple. In a bowl mix the pudding and milk. Pour into pie shell, covering pineapple. Wait until set (about 5 min) spread strawberries over pudding. Top with Cool Whip. Drizzle chocolate on top. Refrigerate until ready to serve.

- Preheat oven to 350 degrees.
- Heat the broth, black pepper, celery and onion in a 3-quart saucepan over medium-high heat to a boil. Reduce heat to low. Cover and cook 5 minutes or until the vegetables are tender. Add stuffing and mix lightly.
- Spoon the stuffing mixture into a greased 3-quart casserole dish.
- Cover and bake 30 minutes or until hot.

WEIGHT WATCHERS CREAMY CHEESE CAPELLINI

Steps:
- Cook the capellini according to package directions, omitting the salt if desired.
- Drain, reserving 1/4 cup of the cooking liquid.
- While the water for the pasta is heating up, heat the oil in a large non-stick skillet over medium-high heat.
- Add the tomatoes and garlic.
- Cook, stirring frequently, until the tomatoes are softened, about 2 minutes.
- Add the spinach in batches, stirring just until each batch is wilted.
- Add the capellini, reserved cooking liquid, cheeses and salt.
- Cook, stirring frequently, until the cheeses are melted.
- Serve at once.

TRADITIONAL BANANA SPLIT
There is some debate in our ice cream parlor what the "traditional" split consists of. I did some research before we opened and it seems that this is the most consistently "traditional" split served, even though some have marshmallow, peanuts, crushed cherries and more. I prefer hot fudge over the chocolate syrup, personally :P

Steps:
- Line up ice cream scoops next to each other in an oval deep dish or a banana boat.
- Cut the ends of the banana off (about 1/4 inch) while still in the peel.
- Slice in half longways.
- Pop each half of the banana out of the peel onto each side of the ice cream row, pressing down and in a little so it'll stay put.
- Top the vanilla ice cream with the pineapple, the chocolate with the chocolate syrup and the strawberry with the strawberry sauce.
- Spoon the wet walnuts over all three scoops of ice cream.
- Top each scoop with some whipped cream and a cherry for each.
- Enjoy!

- Beat the egg, egg white, and milk in a pie plate or wide, shallow bowl.
- Spread the mustard on 4 slices of bread. Layer with cheese and ham, top with remaining slices of bread, press together tightly.
- Spray a large nonstick pan with spray; heat.
- One at a time, dip the sandwich in the egg mixture to coat; then place them on hot skillet.

- Heat the oil in a Dutch oven over medium-high heat.
- Add the beef and cook, breaking it apart with a wooden spoon until no longer pink, about 4 minutes.
- Add the onion, garlic, bell pepper, chili powder and cumin.
- Cook until the vegetables are softened, 3-4 minutes.
- Stir in the tomatoes, beans and salt and bring to a boil.

Steps:
- Spray the grill rack with nonstick spray.
- Preheat the grill to medium.
- Combine the coconut and nuts in a small bowl and set aside.
- Sprinkle the pineapple and the cut sides of the bananas with the brown sugar.
- Place the pineapple and bananas, cut side down, on the grill rack and grill until lightly browned, 2-3 minutes on each side.
- Transfer to a cutting board.
- Meanwhile, heat the ice cream topping according to package directions.
- Peel the bananas and cut each piece in half crosswise.
- Coarsely chop the pineapple.
- Arrange 2 banana pieces on each of 4 dessert dishes.
- Top each with 1/3 cup of the frozen yogurt, 1/2 cup of the pineapple, 1/4 cup of the raspberries, 1 tablespoon of the ice cream topping and 1 1/2 teaspoons of the coconut mixture.
- Serve at once.

Using a paring knife, cut a slit lengthwise down the center of each banana, cutting to but not through the other side. Press on ends of banana (like you would a baked potato) to slightly open it up.
