1 jar salsa
1 1/2 cups black beans, drained and rinsed
1 1/2 cups frozen whole kernel corn
1 cup water

Steps:

  • Combine all ingredients in Instant Pot Liner
  • Place lid and set to seal
  • Cook on poultry setting for 18 minutes
  • When cooking cycle is complete, allow pressure to naturally release for 5 minutes then quick release any remaining pressure.
  • Shred chicken and serve

Sweet, tangy, and garlicky, tis ridiculously easy crock pot chicken recipe packs an amazing punch of flavor, for just a handful of Points. It's a no fuss meal that delivers moist and juicy chicken with a delicious sweet and sour sauce.

2 lbs skinless, boneless chicken breasts ( (cut into 6 fillets))
1/2 cup brown sugar
1/2 cup white vinegar
1/4 cup diet lemon lime soda
1/4 cup reduced sodium soy sauce
6 garlic cloves ((minced))
2 tbsp cornstarch
Salt and pepper to taste

Steps:

  • Salt and pepper chicken breasts and place in slow cooker.
  • In a medium sized bowl, whisk together remaining ingredients (all EXCEPT the cornstarch), and pour over chicken.
  • Cook on low for 6 hours.
  • Remove chicken from slow cooker and pour all the leftover sauce into a medium sized sauce pan, and set over medium high heat.
  • In a very small bowl, mix together the cornstarch with two tablespoons of water. Then, add that into the sauce. Bring to a simmer, and stir continuously until sauce begins to thicken, about 3 minutes. Remove from heat and let sit for about 1-2 more minutes as the sauce will thicken more as it cools.
  • Pour sauce over chicken and serve.

1 can (20 ounces) pineapple chunks in juice
1 cup baby-cut carrots, cut in half
1 medium onion, chopped (1/2 cup)
3 cloves garlic, finely chopped
1 teaspoon finely chopped gingerroot
2 pounds boneless, skinless chicken thighs, cut into 2-inch pieces
1/2 cup reduced-sodium soy sauce
1/2 cup packed brown sugar
1 medium red bell pepper, cut into 1-inch pieces
1 medium green bell pepper, cut into 1-inch pieces
1/4 cup cornstarch
1/4 cup water
Hot cooked rice or chow mein noodles, if desired

Steps:

  • Drain pineapple, reserving juice. Place pineapple chunks in small bowl; cover and refrigerate.
  • Place carrots, onion, garlic and gingerroot in 4 1/2- to 6-quart slow cooker. Top with chicken. Mix soy sauce, brown sugar and reserved pineapple juice; pour over chicken.
  • Cover and cook on low heat setting 7 to 9 hours or until juice of chicken is no longer pink.
  • During last 30 minutes, add pineapple and bell peppers. Increase to high heat setting. Mix cornstarch and water; stir into chicken mixture during last 10 minutes of cooking. Serve with rice.

3 ounces snap peas, cut in half width-wise
1 teaspoon cornstarch
1/2 cup pineapple in juice, undrained
2 tablespoons light soy sauce
1 1/2 teaspoons cider vinegar
1/2 teaspoon ground ginger
1 1/2 teaspoons Splenda sugar substitute

Steps:

  • Spray a non-stick skillet with cooking spray and saute the garlic for about 2 minutes.
  • Add the chicken and brown over medium heat.
  • Add the carrots, bell peppers, pea pods and celery, and stir fry for about 5-7 minutes (until the carrots soften a little bit).
  • In a small bowl, combine the soy sauce and cornstarch; mix. Pour into the skillet, along with the vinegar, pineapple, Splenda and ginger. Stir well and bring to a boil.
  • Reduce the heat and simmer for about 1-2 minutes (until the sauce thickens).

Steps:

  • Cut the raw chicken breast into bite sized pieces.
