This is a ridiculously easy and flexible dish. Feel free to use your favourite veggies in this recipe, although try to include the red pepper as it tastes particularly fabulous with the other flavours! Some recipes suggest blending the chilli sauce with the cream cheese but I prefer to leave them separate as it looks nicer and people can get as much of each as they want on each dip. The amount of cream cheese to use is half a small 200g/ 8oz pack. Fat free Philadelphia equates to Extra Light in the UK. Weight Watchers points for the whole recipe: 3 1/2 using 2 tablespoons of sweet chilli sauce.

4 ounces fat free Philadelphia Cream Cheese (100g, half a pack)
2 -3 tablespoons sweet chili sauce
1 red bell pepper
1 carrot
1/2 cucumber

Steps:

  • Put the cream cheese on a serving plate to soften.
  • Peel the carrot, de-seed the red bell pepper and cut all the veggies into sticks.
  • Place them around the edge of the plate.
  • Pour 2 tablespoons of the sweet chilli sauce over the cream cheese, covering it.
  • If the chilli sauce goes quicker than the cream cheese, pour some more over (I don't do this at the start as it creates a pool of chilli sauce and gets very messy!).
  • Serve and enjoy!

14 1/2 ounces diced tomatoes (undrained)
10 ounces tomatoes and green chilies (undrained(like rotel)
1 teaspoon olive oil
1/2 cup onion, chopped
2 garlic cloves, minced
8 ounces fat free cream cheese (softened)
1 teaspoon chili powder
6 ounces Velveeta reduced fat cheese product (cubed)
cilantro leaf, whole (optional)

Steps:

  • Drain tomatoes and tomatoes with chilies in a colander over a bowl, reserving 1/3 cup liquid; set tomatoes and reserved liquid aside.
  • Heat oil in a medium saucepan over medium heat. Add onion and garlic; sauté 4 minutes. Add cream cheese; cook until cheese melts, stirring constantly.
  • Add tomatoes, reserved liquid, and chili powder; bring to a boil. Add processed cheese;
  • reduce heat and simmer 3 minutes or until cheese melts, stirring constantly.
  • Garnish with cilantro, if desired. Serve warm with baked tortilla chips.
  • 1 serving= 1/4 cup.

I tweaked a recipe from the back of a can of Rotel Tomatoes to suit my friends and I. I have made it this way for many parties and have always gotten rave reviews. It works well in the crock pot also, and that way is recommended if you are making it for a party, etc. where it will need to be kept warm.

2 lbs Velveeta cheese
1 (10 ounce) can tomatoes and green chilies, diced. I like Rotel Original
1 (11 1/2 ounce) jar canned jalapeno slices, I like mild

Steps:

  • Dice the cheese into approximately 1-inch cubes.
  • Into a medium saucepan, put the cheese, Rotel tomatoes and the jalapeño slices, reserving the juice from the jalapeños.
  • Heat over medium heat approximately 5 minutes until the cheese is melted, stirring constantly.
  • Add the juice from the jalapeños to make the desired heat as well as the desired consistency. I usually add about 1/2-3/4 of it.
  • Serve hot with tortilla chips.
  • Can also be done in the crock pot to keep it warm for parties, etc.
