From Cooking Light. Suggested to serve with greens and garlic bread. Once you have coated the pork chops, place them on a wire rack that's resting over a baking sheet. This prevents the chops from getting soggy while the pan heats.

2 slices white bread
3/4 teaspoon kosher salt
1/2 teaspoon fresh ground black pepper
1/2 teaspoon dried rubbed sage
1/2 teaspoon dried thyme
8 (2 ounce) boneless pork chops (1/4 inch thick)
1/4 cup all-purpose flour
3 large egg whites, lightly beaten
2 teaspoons vegetable oil
cooking spray
4 lemon wedges

Steps:

  • Place bread slices in a food processor; pulse 10 times or until coarse crumbs measure 1 cup. Place breadcrumbs in a shallow dish.
  • Combine salt, pepper, sage, and thyme; sprinkle over both sides of pork.
  • Place flour in a shallow dish; place egg whites in another shallow dish.
  • Dredge pork in flour, dip in egg whites, and dredge in breadcrumbs.
  • Heat oil in a large nonstick skillet over medium-high heat.
  • Add pork to pan. Cook 2 1/2 minutes or until lightly browned. Lightly coat surface of chops with cooking spray; turn chops over. Cook 2 1/2 minutes or until done. Serve with lemon wedges.

Number Of Ingredients 7

1 lb boneless pork loin chop, fat trimmed
1/4 cup seasoned bread crumbs (or plain with 2 teaspoons Italian seasoning added)
1/4 cup fresh parmesan cheese, shredded
1 teaspoon seasoning salt
1/2 teaspoon fresh ground black pepper
2 egg whites (or 4 tablespoons if you buy it by the carton)
olive oil (in a spritzer)

Steps:

  • Pound pork loin chops until quite thin, about 1/4" thick.
  • In a shallow dish, add bread crumbs, parmesan and seasoning salt. Pour egg whites into another shallow dish.
  • Dip cutlets into egg whites, let drip and then dip into the bread crumb mixture until evenly coated. Set on baking sheet, spritz with olive oil and bake for 20 minutes at 375°C.

4 spray(s) cooking spray
1 lb lean boneless pork chop, trimmed, raw, four 4oz chops
1/2 c flour, white
3/4 tsp salt, table, or to taste
1/2 tsp pepper, black, or to taste
1 large egg, raw
3 Tbsp milk, fat free
1 1/2 tsp dijon mustard, or to taste
1/2 c breadcrumbs, dried, plain, panko-variety
1/2 medium lemon, cut into 4 wedges

Steps:

  • 1. Preheat oven to 400 degrees F. Coat nonstick baking sheet with cooking spray.
  • 2. Place pork chops between 2 sheets of waxed paper; pound to 1/4-inch thickness with a rolling pin.
  • 3. On a plate, combine flour, salt and pepper. Beat egg in a shallow bowl; stir in milk and mustard. Place panko on a plate.
  • 4. Dip chops, one at a time, in flour mixture to lightly dust both sides; shake off excess. Dip each chop in egg batter and then lightly coat both sides with panko. Place on prepared baking sheet; lightly coat with cooking spray.
  • 5. Bake for 8 minutes; flip and bake until cooked through, about 5 to 7 minutes more. (Coat with cooking spray and broil for a minute or two if you like the coating extra crisp.) Serve with lemon wedges. Yields 1 chop per serving.

2 tablespoons vegetable oil, such as safflower
4 boneless pork loin chops (6 to 8 ounces each)
3 tablespoons Dijon mustard
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss panko with oil. Bake, tossing once, until golden brown, 7 to 10 minutes. Transfer to a medium bowl. Reduce oven temperature to 400 degrees.
  • Meanwhile, one at a time, place chops between 2 large pieces of plastic wrap. Using a meat mallet or the bottom of a small heavy pan, pound to make 1/4-inch-thick cutlets.
  • Dividing evenly, coat pork with mustard; season with salt and pepper. One at a time, dip cutlets into panko, pressing firmly to adhere.
  • Place a rack on a rimmed baking sheet; place pork on rack, and bake, without turning, until opaque throughout, 10 to 15 minutes.
