PASTA SALAD WITH TOMATO AND BASIL



Pasta Salad with Tomato and Basil image

This is not your typical deli-style pasta salad. This much brighter-tasting and colourful version features fresh tomatoes, basil, and red onions and carrots for crunch. The simple yet creamy dressing is made with just mayonnaise and red wine vinegar, then seasoned with some salt and pepper-and that's it! This recipe tastes best when it's freshly made, but if you would like to prepare it ahead of time, just keep the dressing separate and toss shortly before serving. It's also very important to use nice ripe tomatoes for the best flavour.

6 oz Uncooked, mini, farfalle (about 2 cups uncooked)
0.333 cup(s) Reduced calorie mayonnaise
1 tbsp(s) Red wine vinegar
0.5 tsp(s) Table salt
0.25 tsp(s) Black pepper freshly ground
3 medium Plum tomato(es) seeded, diced
1 small Uncooked carrot(s) diced
0.333 cup(s) Fresh basil chopped
3 tbsp(s), chopped Uncooked red onion(s)

Steps:

  • In a large pot of lightly salted boiling water, cook pasta as package directs. Drain and rinse under cold running water; drain well.
  • In a medium bowl, combine mayonnaise, vinegar, salt and pepper. Add pasta, tomatoes, carrot, basil and onion to bowl; toss to mix and coat.
  • Serving size: 3/4 cup

Weight Watchers Avocado and Tomato Pasta Salad image

I love the flavour of guacamole so I came up with this simple, quick recipe for a pasta salad incorporating the same flavours. You can add a variety of other ingredients, cooked chicken would work particularly well. Serves 2 as a main dish or 4 as a side dish.

1 cup dry penne pasta
4 tablespoons lowest fat mayonnaise
1 1/2 teaspoons fresh lime juice (or lemon juice)
1 1/2 cups baby plum tomatoes
1 ripe avocado
1/4 red onion
1 cooked chicken breast, chopped (optional)
1 handful fresh coriander
1 pinch salt (optional)

Steps:

  • First, cook the pasta.
  • Meanwhile, put the mayonnaise and lime juice in a large bowl and stir.
  • Chop the baby plum tomatoes and avocado and add to the bowl. Finely dice and add the red onion. You may also like to add some cooked chicken.
  • When the pasta is cooked, drain it, then pour cold water over it for a few minutes to cool it quickly. Drain it again and add it to the bowl.
  • Finely chop as much fresh coriander as you like and sprinkle it over the top.
  • Season with salt if desired and stir the pasta salad thoroughly to mix all the ingredients together. If you are using properly ripe avocadoes, stirring the mixture should blend some of the avocado flesh into the dressing to develop the flavour.
  • Serve and enjoy!
