1/2 c shredded carrots
1 mango (not fully ripe)
3 medium scallions--chopped
3 Tbsp rice vinegar
1/2 lime--juiced
1 Tbsp low sodium soy sauce (tamari or gluten free)
1 Tbsp sesame oil
1 tsp black & white sesame seeds

Steps:

  • 1. JULIENNE THE MANGO (CUT INTO STRIPS) COMBINE WITH CABBAGE, CARROTS, SCALLIONS & TOSS TOGETHER IN LARGE BOWL.
  • 2. PREPARE DRESSING BY WHISKING TOGETHER RICE VINEGAR, SOY SAUCE, LIME JUICE, SLOWLY WHISK IN OIL.
  • 3. POUR DRESSING OVER CABBAGE MIXTURE & TOSS TO COAT. LET IT SIT AT LEAST 15-20 MINS. TO LET THE DRESSING SOAK IN.
  • 4. SERVED SPRINKLED WITH SESAME SEEDS

Often, when we think of coleslaw, we think of it as a side for fish and chips, barbecue, or heavy, mayonnaise-drenched cabbage. But just think about the cool, crunchy sweetness of the cabbage, carrots and mango, paired with the spicy kick of jerk chicken. What's a better combination? You also don't have to serve it as a side: It can be tucked into a sandwich or wrap. One of the best things about this recipe is that all the ingredients are readily available, and there are many shortcuts you can take, like using a bagged mix. Who wants to ruin their knuckles on a box grater, or break out the food processor?

Number Of Ingredients 7

1 (8-ounce) bag coleslaw (about 3 cups)
2 large, slightly firm mangoes (about 1 3/4 pounds), peeled, pitted and thinly sliced (about 2 cups)
1/2 cup chopped fresh cilantro
2 tablespoons freshly squeezed lime juice
1 tablespoon honey or agave syrup
1/4 teaspoon celery salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a large bowl, combine all ingredients. Toss with tongs or a fork to combine.
  • Refrigerate for at least 1 hour. Serve cold.

2 cups red cabbage shredded
1 cup radishes shredded
1 cup jicama shredded
1/3 cup scallions chopped
3 tbsp mint, fresh, minced (optional)
2 med jalapeno - seeded and minced
2 tbsp orange marmalade or other sweet/tart (apricot)
4 tsp rice wine vinegar
2 tsp toasted sesame oil
1 tsp soy sauce
1/2 tsp table sauce
2 tbst sesame seeds toasted

Steps:

  • In large bowl combine all the veggies, mint and jalapenos. In small bowl combine marmalade, soy, vinegar, sesame oil and salt. Drizzle over slaw and toss well to combine. serve sprinkle with sesame seeds.

Blackened cod fish seasoned with a spicy rub and cooked in a cast iron skillet. The mango-cabbage slaw is the perfect balance of sweet and sour which compliments the fish perfectly.

3 1/2 cups 1/2 small red cabbage, shredded fine
1 mango (julienned)
2 tsp olive oil
1/4 cup cilantro
1/2 tsp kosher salt
1 lime (juiced)
1 tsp smoked paprika
1 tsp kosher salt
1/2 tsp dry mustard
1/4 tsp 1/2 tsp for spicier ground cayenne pepper
1/4 tsp ground cumin
1/4 tsp ground oregano
1/8 tsp black pepper
1 lb skinless cod or halibut filet
1/2 lime (juiced)
cooking spray
8 corn tortillas
lime wedges for serving
1/2 lime (cut into wedges)

Steps:

  • Combine all the slaw ingredients and refrigerate.
  • Mix the dried spices and seasoning together in a small bowl, squeeze the lime on the fish then rub the seasoning onto fish.
  • Heat a cast iron skillet on grill or stove on high heat till really hot. Spray with nonstick oil spray.
  • Cook fish until opaque in the center and well browned on the outside, about 5 minutes on each side.
  • Heat the corn tortillas on the grill until they slightly char, about 1 to 2 minutes.
  • Cut the fish into 8 pieces (or you can flake it if it's easier).
  • Divide the fish equally between 8 tortillas and top each with 1/2 cup slaw. Serve with lime wedges.
