I got this from my Mom. She got it at her WW meeting. You can use any cake mix. Suggestions are chocolate, spice, or carrot mixes. I haven't tried it yet but I'm putting here on Zaar for safe keeping.

Steps:

  • Preheat oven to 350*.
  • Mix all ingredients together.
  • Put cupcake liners in cupcake pan and fill 2/3 full.
  • Bake in oven 22 -26 minutes.

1 1⁄3 cup Kodiak Cakes Power Cakes Protein packed whole grain buttermilk flapjack and waffle mix (13 Points)
3 eggs (0 Points)
1 Tbsp dark chocolate chips (4 Points)
3 bananas ( 0 Points)
1 tsp vanilla extract (0 Points)
3 packets Truvia Calorie free sweetener from the stevia leaf ( 0 Points)
1⁄2 cup water (0 Points)
5 sprays cooking spray ( 0 Points)

Steps:

  • In a bowl Add 1 1/3 cups Kodiak cake mix
  • Crack and add 3 eggs
  • Add in 1 tbsp chocolate chips
  • In another bowl Mash up 3 ripe bananas
  • Combine all the ingredients into one bowl.
  • Add ½ cup water
  • Add in 1 tsp vanilla extract
  • Add in three truvia packets. ( Taste test the batter and add in more depending on how sweet you want your muffins!)
  • Use cooking spray in the muffin tin.
  • 10. Mix all together and divide into a regular sized 12 muffin pan tin
  • 11. Bake on 350 degrees for 15-20 minutes.

After much mixing, and baking, and taste testing, I am here to tell you that it is true! My Miracle Muffins are just one or two Weight Watchers point each!

2 large ripe bananas
2 eggs, beaten
1/2 cup Kodiak high protein baking mix

Steps:

  • To make 6 Miraculous Muffins. Pre-heat oven to 350 degrees. Spray muffin tin with cooking spray.
  • Mash up 2 large, ripe banana with a fork. Mix in two beaten eggs. Stir in a ½ cup of any of the Kodiak Power Cake mixes listed above.
  • Spoon mixture into six of the prepared muffin cups. Bake for 22-25 minutes, until the muffins look dry on top and are turning slightly golden brown. (Note that Miracle Muffins will have a denser texture than some standard muffin recipes.) Remove tin from oven and allow muffins to cool before removing from tin.
  • That's all there is to it! 2 bananas. 2 eggs. Half a cup of baking mix. Eighteen minutes later, you'll have a half-dozen hot, delicious, guilt-free muffins! See what I mean? Miraculous!

1 1/4 cups whole wheat flour
1/3 cup applesauce
1 teaspoon cinnamon
2 cups bran flakes
1 1/2 cups skim milk
1 1/3 teaspoons baking powder
2 egg whites

Steps:

  • Mix bran flakes and milk and set aside for 15 minutes.
  • Mix all of the other ingredients together, then add the bran mixture when it has sat for 15 minutes.
  • Pour into 12 muffins.
  • Bake at 350°F for approximately 20 minutes or until toothpick comes out clean.

1 tsp garlic powder
½ tsp onion powder
½ tsp ground black pepper
¼ tsp salt

Steps:

  • Preheat oven to 350°F.
  • Crack eggs into a medium bowl.
  • Add water and beat together.
  • Add the remaining ingredients to egg mixture and stir until combined.
  • Spray a 12-slot muffin pan with non-stick spray.
  • Pour egg mixture into 12 muffin slots.
  • Bake for 18-22 minutes, until sides start to turn golden and tops have set.

3 Bananas
3 Eggs
1 Cup of Kodiak Cakes Cinnamon Oats Power Cakes Flapjack and Waffle Mix ( Or any flavor you like - the Dark Chocolate is Delicious also)

Steps:

  • Take your Bananas and peel them.
  • Place your Bananas in a large bowl and smash them really good with a fork until they are really mushy.
  • Now add in your eggs to the Bananas and mix together well.
  • Now add your Kodiak Cake Mix and stir everything together. Mix it well.
  • Take out your regular size Muffin pan and spray the holes with some Olive Oil Spray so the Muffins do not stick.
  • Now take your Muffin mixture and pour the batter into each Muffin hole - fill each hole about halfway with the mixture.
  • Now place into the oven at 350 F Degrees for 15-20 minutes.
  • When cooking time is complete remove from the oven and let cool.
  • When removing the Muffins from the pan just run a butter knife around the edges and they should pop right out easily.
  • Now ready to eat...if you have any leftovers make sure to refrigerate them and just heat up in the Microwave when you want a snack.
