CRISPY ONION RINGS
These super-crispy, baked onion rings are a dead ringer (pun intended) for the deep-fried variety. A touch of cayenne adds nice heat.

- Preheat oven to 450°F. Coat a large, rimmed baking sheet with cooking spray.
- Spread cornflake crumbs on a large plate. In a shallow bowl or pie plate, whisk together egg white, milk, flour, onion powder, salt and cayenne pepper until blended.
- In batches, dip onion rings in egg mixture (letting excess drip off) and then dredge in cornflake crumbs, turning to coat both sides; place in a single layer on prepared pan.
- Coat onion rings with cooking spray and bake, turning once, until onion rings are golden brown, about 12 minutes; sprinkle with additional salt and pepper before serving, if desired. Yields about 8 onion rings per serving.

- Preheat oven to 375 degrees.
- Cut edges off onion, and remove outer layer. Cut onion into 1/2 inch wide slices, and separate into rings. Next, fill a small bowl (just large enough for onion rings to fit in) with Egg Beaters.
- Using a blender or food processor, grind Fiber One cereal to a breadcrumb-like consistency. Pour crumbs onto a small dish.
- One by one, coat each ring in egg and then crumbs (give each ring a shake after the egg bath). Place on an oven-safe baking dish sprayed with nonstick spray. Cook for 20-25 minutes, flipping rings over about halfway through.
- **Although you'll only actually use a quarter cup, it may be easier to dunk the rings if you dole out a bit more Egg Beaters while preparing.

- 2. put cereal in food processor and grind to crumbs, add seasonings.
- 3. one by one coat each ring, first with egg, then cereal mixture
- 4. evenly place on non-stick cooking sheet and bake 20 - 25 minutes flipping rings halfway thru cooking time.
- 5. 1 serving, equals 153 calories, 9 g protein 1 g. fat chol. 1 mg carbs 41 g. fiber 16 g, 2 weight watcher points

- Preheat oven to 400'.
- Line a baking sheet with foil and spray with Pam cooking spray.
- In a medium bowl add egg whites.
- In a plasic baggie or on wax paper, add flour,salt and cayenne pepper.
- Place bread crumbs in a separate dish or on wax paper.
- Separate onion slices in rings, dip in flour mixture and toss to coat than into egg mixture and into bread crumbs and place on baking sheet.
- Bake 10 minutes or until lightly browned.
- Turn rings over and bake 5-10 minutes longer or until lightly brown.
- Serve hot.

- In a large bowl, combine flour, garlic powder, dry mustard and salt. Add onions and toss to coat.
- Pour buttermilk into another large bowl, add onions and toss to coat (use your hands for the best result).
- Place bread crumbs in another large bowl, add onions and toss to coat. Transfer onions to prepared baking sheet and spray with cooking spray.
- Bake until golden brown, about 35 minutes. Serve hot. Yields about 1/2 an onion per serving.
