This easy Chinese Chow Mein recipe is made with noodles, vegetables, chicken, and a simple chow mein sauce!

2 boneless skinless chicken breasts (, cut into bite-size pieces)
1 Tablespoon oil ((canola or vegetable))
1 1/2 cups Shredded cabbages ((*see note))
2 cups carrots (, shredded or julienne sliced (*see note))
2 ribs celery (, chopped)
4 green onions (, sliced with whites and green separated)
2 cloves garlic (, minced)
1 pound refrigerated Yaki-Soba noodles (discard seasoning packet**)
1 cup fresh bean sprouts ((optional))
1/4 cup low-sodium soy sauce
1 1/2 teaspoons sesame oil
1 Tablespoon oyster sauce ((***see note))
2 teaspoons freshly grated ginger
1 Tablespoon light brown sugar
1 teaspoon cornstarch

Steps:

  • Prepare noodles according to package instructions.
  • In a small bowl whisk the sauce ingredients together: soy sauce, sesame oil, oyster sauce, ginger, sugar, and cornstarch
  • Heat a large pan or wok on high heat. Add oil. Add chicken, season with salt and pepper and stir fry just until cooked through.
  • Add cabbage, carrots, celery, and the whites of the chopped green onion and stir fry for just for 1-2 minutes or until cabbage has wilted.
  • Add the garlic and cook for 30 seconds.
  • Add the pasta and sauce and cook for 1-2 minutes until the sauce has thickened. Add remaining green onion and fresh bean sprouts, if desired. Serve immediately.

Chicken chow mein is so much better than takeout! It is filled with chicken, veggies, classic chow mein noodles and the best homemade chow mein sauce. You will love this one pan dinner!

1 lb chicken breast (boneless, skinless)
3 tbsp oil
12 oz chow mein noodles ((uncooked noodles))
2 cups cabbage
1 large carrot (julienned)
1/2 batch green onions
2 garlic cloves
6 tbsp oyster sauce
3 tbsp low sodium soy sauce
3 tbsp light sesame oil ((not toasted))
1/2 cup chicken broth
1 tbsp cornstarch
1 tbsp granulated sugar

Steps:

  • In a small mixing bowl, use a whisk to combine oyster sauce, granulated sugar, sesame oil, soy sauce, chicken broth and cornstarch. Set aside.
  • Cook your noodles according to package instructions then drain, rinse with cold water and set aside.
  • Heat a large wok or pan with olive oil over medium-heat. Cut your chicken breasts into bite-sized strips and cook them in the oil until golden brown. Remove strips and set aside.
  • Add carrots, cabbage and pressed garlic and saute for a few minutes until veggies are slightly softened and the cabbage is a bit translucent.
  • Add chicken and noodles back into the pan. Pour sauce over the top and continue cooking all the ingredients together for another 2 minutes.
  • Garnish your chow mein with chopped green onions and serve the noodles straight from the pan and piping hot!

⅓ cup soy sauce
1 tablespoon ginger, minced
1 tablespoon garlic, minced
1 tablespoon oyster sauce
1 tablespoon sesame oil
1 tablespoon sugar
¼ teaspoon red pepper flakes
pepper, to taste
2 chicken breasts, cubed
½ onion, julienned
3 stalks celery, sliced
4 carrots, julienned
3 cups cabbage, shredded
2 packages ramen noodle, without seasoning packet
1 ½ cups chicken broth
scallion

Steps:

  • In a bowl, mix soy sauce, ginger, garlic, oyster sauce, sesame oil, sugar, red pepper flakes, and pepper.
  • Place chicken cubes into a re-sealable plastic bag pour half of the marinade into the bag and save the rest for later.
  • Let the chicken marinate in the refrigerator for at least an hour.
  • Pour the marinated chicken into a large pot and cook over medium-high heat. Remove chicken from the pot.
  • Add sesame oil to the bottom of the pot and add the onion, celery, carrots, and cabbage. Sauté until the onions are translucent.
  • Place both of the ramen noodle bricks into the bottom of the pot.
  • Pour in chicken broth over the noodles.
  • Cover the noodles with the vegetables as much as possible. Cover the pot with a lid and simmer for 5-7 minutes or until the noodles are cooked through.
  • Break up the noodles and add back the chicken, and pour in the rest of the marinade from earlier.
  • Garnish with scallions.
  • Enjoy!

Easy, tasty weeknight recipe. Adaptable to different types of meat; add veges or delete to suit your taste, or what you have on hand. I developed this "cook-and-drain" technique to avoid chow mein that was swimming in liquid. It also makes added thickeners unnecessary. I show varying amounts of noodles and cabbage - I enjoy a chow mein with lots of veges, but others in my family like the noodles. This recipe works well either way.

Number Of Ingredients 17

8 -12 ounces whole wheat spaghetti
1 teaspoon peanut oil
1 tablespoon peanut oil
8 -12 ounces Chinese cabbage, shredded
2 tablespoons peanut oil
2 teaspoons sesame oil
1 tablespoon fresh ginger, grated
1 tablespoon chili-garlic sauce (or to taste)
1 lb pork or 1 lb shrimp
1/2 onion, sliced thinly
4 ounces Chinese pea pods, slivered
1/2 red bell pepper, slivered
1 small zucchini, slivered
1 carrot, slivered
4 ounces mushrooms, sliced
3 tablespoons oyster sauce
lime wedge, to garnish

Steps:

  • Cook spaghetti in boiling water as directed. Drain in colander, sprinkle with 1 t. peanut oil to keep from sticking, and let set.
  • Slice chicken or pork into thin strips. Peel shrimp. A single meat, or a combo work fine in this recipe.
  • Heat 1 T. peanut oil in wok. Stir-fry cabbage until hot-crisp. Dump on top of spaghetti in colander and let set. (any moisture coming off the cabbage will drain, keeping your chow mein from getting soggy).
  • Heat 2 T. peanut oil in wok. Add sesame oil, ginger, chili sauce, meat or shrimp. Stir-fry until meat is almost done.
  • Add remaining veges and continue stir-frying until veges are hot-crisp and meat is done.
  • Add oyster sauce and stir to coat. Add cabbage and spaghetti and combine thoroughly.
