This baked chicken Parmesan can be served with fresh salad or over hot spaghetti with extra marinara sauce.

4 (8 ounce) skinless, boneless chicken breast halves
1 cup flour
1 teaspoon salt
½ teaspoon ground black pepper
3 large eggs
1 cup Italian-style bread crumbs
1 cup grated Parmesan cheese
2 tablespoons extra-light olive oil, or as needed for browning
1 (24 ounce) jar Ragu® Hearty Traditional Sauce
8 ounces shredded mozzarella cheese
1 sprig Fresh parsley or basil for garnish

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Lightly oil a large baking dish or rimmed cookie sheet.
  • Trim chicken breasts of fat and slice in half length-wise to make 8 equal-thickness chicken cutlets. Note: If the chicken breasts are very large, pound them between plastic wrap into 1/2-inch thick cutlets.
  • Stir together flour, salt and black pepper in a shallow bowl. Whisk eggs in another bowl. In a third bowl, stir together Italian bread crumbs with parmesan cheese.
  • Dip both sides of each chicken cutlet into the flour, then dip in beaten eggs, letting excess egg drip off. Dip into the breadcrumb mixture, pressing cutlets into breading to ensure a thick, even coating of crumbs. Set prepared cutlets aside for 10 minutes.
  • Heat a large non-stick or cast iron pan over medium heat; add enough olive oil to coat the bottom of the pan. When oil is hot, add chicken in batches (don't crowd the pan), sauteing until golden brown, about 2 minutes per side.
  • Place chicken in prepared baking dish. Top each chicken breast with 2 tablespoons Ragu® Hearty Traditional Sauce. (Reserve remaining sauce to serve over pasta, if desired.) Then top with about 1/4 cup of shredded mozzarella.
  • Bake uncovered until cheese is melted and chicken is no longer pink in the center and the juices run clear, about 10 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

⅓ cup Progresso® Italian style panko crispy bread crumbs
⅓ cup shredded Parmesan cheese
4 each boneless skinless chicken breasts, flattened slightly
2 cloves garlic, finely chopped
1 (18 ounce) can Progresso™ Recipe Starters™ fire roasted tomato cooking sauce
1 cup shredded mozzarella cheese

Steps:

  • Cook and drain spaghetti as directed on package.
  • In large resealable food-storage plastic bag, mix bread crumbs, Parmesan cheese and 1/4 teaspoon pepper. Shake each chicken breast in bread crumb mixture; set aside.
  • In 10-inch skillet, heat 2 tablespoons vegetable oil over medium-high heat. Add chicken breasts; cook 6 to 10 minutes, turning once, until browned. Pour cooking sauce around chicken; sprinkle chicken with remaining bread crumb mixture and mozzarella cheese. Heat to boiling. Cover; reduce heat to medium. Cook 5 to 8 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165°F) and cheese is melted. Serve with spaghetti.

1 1/2 cups breadcrumbs or panko (Japanese breadcrumbs)
3/4 cup finely grated Parmesan (about 2 ounces)
5 tablespoons olive oil, divided, plus more for brushing
3 1/2 teaspoons dried oregano, divided
3/4 teaspoon kosher salt, divided
3/4 teaspoon freshly ground black pepper, divided
4 (6-ounce) chicken cutlets, pounded 1/2" thick
6 ounces coarsely grated mozzarella (about 1 cup)
1/2 medium onion, chopped
2 garlic cloves, pressed or finely chopped
1 (24-ounce) jar marinara sauce
1/4 teaspoon crushed red pepper flakes (optional)
1/4 cup (packed) basil leaves, torn if large, plus more for serving

Steps:

  • Arrange racks in top and bottom of oven and place a rimmed baking sheet on bottom rack; preheat to 450°F.
  • Beat eggs in a large shallow bowl. Using a fork or your fingertips, mix breadcrumbs, Parmesan, 3 Tbsp. oil, 3 tsp. oregano, 1/2 tsp. salt, and 1/2 tsp. pepper in another large shallow bowl or plate.
  • Working with 1 cutlet at a time, dip in egg, allowing excess to drip back into bowl. Dredge in breadcrumb mixture, shaking off excess, then pressing to adhere. Transfer chicken to a baking sheet.
  • Carefully remove preheated baking sheet from oven and generously brush with oil. Transfer chicken to baking sheet and return to bottom rack. Roast 6 minutes, then carefully flip (use a spatula to scrape under cutlets) and sprinkle with mozzarella. Place baking sheet on top rack and continue to roast until juices run clear, mozzarella is melted, and an instant-read thermometer inserted into the center of cutlet registers 165°F, about 4 minutes more.
  • Meanwhile, heat remaining 2 Tbsp. oil in a large skillet over medium-high. Cook onion, stirring, until softened, 3-4 minutes. Add garlic and cook until fragrant, about 1 minute more. Add marinara sauce, red pepper flakes (if using), 1/4 cup basil, and remaining 1/2 tsp. oregano, 1/4 tsp. salt, and 1/4 tsp. pepper. Cook, stirring, until sauce starts to bubble. Reduce heat to medium and simmer until chicken is ready, stirring occasionally, at least 5 minutes.
  • Divide sauce among 4 plates. Top with chicken and torn basil.
