Enchiladas filled with ham, vegetables and cheese and baked in a creamy egg batter.

1 pound cooked ham, chopped
¾ cup sliced green onions
¾ cup chopped green bell peppers
3 cups shredded Cheddar cheese, divided
10 (7 inch) flour tortillas
5 eggs, beaten
2 cups half-and-half cream
½ cup milk
1 tablespoon all-purpose flour
¼ teaspoon garlic powder
1 dash hot pepper sauce

Steps:

  • Place ham in food processor, and pulse until finely ground. Mix together ham, green onions, and green peppers. Spoon 1/3 cup of the ham mixture and 3 tablespoons shredded cheese onto each tortilla, then roll up. Carefully place filled tortillas, seam side down, in a greased 9x13 baking dish.
  • In a medium bowl, mix together eggs, cream, and milk, flour, garlic powder, and hot pepper sauce. Pour egg mixture over tortillas. Cover, and refrigerate overnight.
  • The next morning, preheat oven to 350 degrees F (175 degrees C).
  • Bake, uncovered, in preheated oven for 50 to 60 minutes, or until set. Sprinkle casserole with remaining 1 cup shredded cheese. Bake about 3 minutes more, or until cheese melts. Let stand a least 10 minutes before serving.

1 pound sausage (optional)
2 cup shredded cheddar cheese
8 (8 inch) flour tortillas
6 eggs
1 tablespoon all-purpose flour
2 cups half and half
1/2 teaspoon salt
3 ounces of cooked bacon or bacon Bits

Steps:

  • In a skillet over medium high heat, brown sausage and then drain fat. In a large bowl, stir together browned sausage, 1 cup cheese and 1/2 of the bacon. Place 1/8 of the mixture down the center of a tortilla. Roll up and place seam-side down in a sprayed 9x13 baking dish. Repeat until all tortillas are filled. In another large bowl beat eggs, flour and salt. Mix in half and half. Pour over the tortillas in the pan. You can cover the dish and place in the fridge or bake immediately. When ready to bake, preheat the oven to 350 degrees fahrenheit. Uncover dish and sprinkle remaining 1 cup of cheese over tortillas. Sprinkle the rest of the bacon bits over cheese. Cover with foil and bake for 35 minutes. Uncover dish and bake 10 minutes longer or until set and cheese is melted.

4 slices cooked OSCAR MAYER Bacon, crumbled
1-1/4 cups KRAFT Shredded Cheddar Cheese, divided
8 flour tortillas (6 inch)
4 eggs
1-1/4 cups milk
1 Tbsp. flour

Steps:

  • Heat oven to 350ºF.
  • Combine tomatoes, spinach, bacon and 3/4 cup cheese; spoon down centers of tortillas. Roll up. Place, seam sides down, in 10x6-inch baking dish sprayed with cooking spray.
  • Whisk eggs, milk and flour until blended; pour over enchiladas. Cover.
  • Bake 30 min. Sprinkle with remaining cheese; bake, uncovered, 10 min. or until melted.

  • Meanwhile, add a little oil to your skillet and fry your potatoes on medium high heat until they are browned on both sides, turning a few times. I like to now reduce the heat, place a lid on and allow them to smother a little so they will be soft, then remove the lid and push to one side. Add your onion and the pork breaking up with a spoon. When the pork starts to brown, go ahead and combine the ingredients and continuing cooking about 5 more minutes, turning as needed.
  • In a separate pan, add a little oil or butter and scramble your eggs to a soft scramble. Add to the other ingredients and combine. At this time you can add the 1/4 cup sauce if you like. I usually just add cheese to the top, but sometimes if I'm using cheddar cheese, I'll add a little cheese to the filling.
  • Heat a little oil in another pan and when hot, add each tortilla to the oil, then your sauce. Place on a plate, add your filling and roll up. Place each rolled up enchilada in a serving dish and repeat the process until all your tortillas are rolled and your filling has been used. Ladle the remaining sauce over all the enchiladas, place cheddar cheese or your cheese of choice on top. If you like you can place them under the broiler to quickly melt the cheese, but your sauce if still really warm will melt the cheese. Enjoy!
