Here's what you need: large, boneless, skinless chicken breasts, black beans, white onion, garlic, medium chunky salsa, brown rice, olive oil, green onion, salt, black pepper

2 large, boneless, skinless chicken breasts, cubed
15 oz black beans, 1 can, drained and rinsed
1 white onion, diced
2 cloves garlic
16 oz medium chunky salsa, 1 jar
1 cup brown rice, cooked
1 tablespoon olive oil
1 bundle green onion, sliced, for garnish
salt, to taste
black pepper, to taste

Steps:

  • Heat the oil in a large skillet over medium-high heat.
  • Toss in the onion with a pinch of salt and sauté until the onions have softened, about 3 minutes.
  • Move the onions to the sides of the pan to create an open space in the middle. Add the cubed chicken into the center of the pan, season with salt and pepper, and sauté until the chicken has cooked almost all the way through.
  • Add the garlic and mix until fragrant, about 30 seconds.
  • Pour over salsa, black beans, and rice, and mix until everything in the pan is evenly combined.
  • Let the mixture simmer for 5 minutes or until the chicken is cooked through.
  • Divide the mixture equally into 4-6 bowls and sprinkle over some thinly sliced green onions.
  • Enjoy!

3 chicken breasts, cubed
salt, to taste
pepper, to taste
1 teaspoon garlic, crushed
½ cup soy sauce
⅓ cup honey
1 ½ tablespoons sesame seed, more to garnish
1 onion, sliced
2 small bell peppers, thinly sliced
2 cups broccoli
1 green onion, thinly sliced
white rice, cooked

Steps:

  • In a pan, cook cut chicken over medium-high heat until almost done. Salt and pepper to taste.
  • Reduce heat to medium and stir in the crushed garlic.
  • Add in the soy sauce, honey, and 1 tablespoon of the sesame seeds. Stir until thickened.
  • Remove the chicken from the pan, leaving the sauce, and add the vegetables to the pan.
  • Cover the pan for several minutes and cook until the vegetables begin to soften, then remove the lid and stir until the sauce is thick again.
  • Split the rice, vegetables, and chicken evenly between 4 containers. Top with a sprinkle of sesame seeds and sliced green onion. Refrigerate for up to 4 days.

2 boneless, skinless chicken breasts
3 bell peppers, any color, sliced
1 large red onion, sliced
2 tablespoons olive oil
1 tablespoon taco seasoning
salt, to taste
pepper, to taste
1 jar salsa
3 cups brown rice, cooked
1 can black beans, drained and rinsed
1 can corn
1 cup shredded cheddar cheese
1 lime, sliced into wedges
2 tablespoons fresh cilantro, to garnish

Steps:

  • Preheat oven to 400˚F (200˚C).
  • Line a baking sheet with foil.
  • Place the chicken, peppers, and onions onto the baking sheet and drizzle with oil.
  • Sprinkle the taco seasoning evenly over both sides of the chicken breasts.
  • Sprinkle salt and pepper on the bell peppers and onions, tossing to coat.
  • Top each chicken breast with a generous pour of salsa.
  • Bake in a preheated oven for 25 minutes.
  • Rest chicken for 10 minutes, before slicing into strips.
  • Add a base of brown rice to 4 food storage containers. Top each with a scoop of black beans, corn, additional salsa, cheddar cheese, cooked bell peppers, and onions, and sliced chicken. Garnish with fresh cilantro and a lime wedge.
  • Store in the refrigerator (and enjoy any extras immediately). Can be kept refrigerated for up to 4 days.

1 tablespoon vegetable or corn or olive oil
1 pound ground chicken
1 recipe homemade chicken taco seasoning
3 to 4 cups Cilantro lime rice (refer notes)
1 and 1/2 avocados, sliced
3/4 cup salsa or pico de gallo, refer notes
1/2 cup grated cheddar or Mexican cheese blend, optional
1/2 cup cooked black beans
1/2 cup cooked corn, optional
2 tablepsoons chopped cilantro, optional

Steps:

  • Heat 1 tablespoon oil in a large non-stick skillet over medium-high heat. When hot, add chicken and taco seasoning. Saute (breaking lumps) for 4-5 minutes until chicken is cooked and browned. Transfer and let cool.
  • Divide the rice, chicken, salsa or pico de gallo, cheese, beans and corn (if using) into meal prep containers. Add sliced avocado just before eating.

  • For the Chicken: In a large bag or bowl, combine the chicken and taco seasoning along with 1 tablespoon oil. Marinate in the fridge for 20 minutes or up to 48 hours. Heat a large pan to medium-high heat. Cook chicken breasts for 5-7 minutes per side or until fully cooked. Remove from pan and rest for 10 minutes then chop into bite-size pieces.
  • In the same pan, add a teaspoon of oil along with sliced bell peppers and onion. Saute for 3-4 minutes or until the veggies are tender.
