WEANING RECIPE: CHICKEN MEATBALLS
If your toddler enjoys feeding him or herself then try these moreish chicken meatballs, made with fresh veggies and chicken thighs. Serve with rice and broccoli for a satisfying dinner

Steps:
- Heat oven to 200C/180C fan/gas 6. Blitz the celery, carrot, chicken and chives in a food processor until finely chopped. You may need to use a spatula to scrape the sides of the bowl a few times.
- Shape into small meatballs. If freezing, space out on a tray and put in the freezer. Once frozen, transfer to a freezer bag and take them out when needed. Defrost thoroughly in the fridge before cooking.
- To cook, put on a baking tray lined with greased foil and bake for 10 mins or until browned and cooked through.
- Served with boiled rice and steamed broccoli.

- Preheat the oven to 200 °C or approx 400 °F
- Prep a baking tray, you can either oil it or line it with baking paper, I oil mine
- Prep the broccoli, I love grating the stalk of a head of broccoli for this recipe. Remove the stalk, give it a rough peel, ie remove any very hard bits, then grate. You want around ½ a cup
- Put all the ingredients in a bowl
- Remove any rings, dampen/wet your hands with (it stops everything sticking to your fingers), get in there and scrunch everything around until it is well mixed
- Use a spoon to make even sized balls I use my 15 ml tablespoon and get around 28 balls from the mix. roll them in your wet hands then place on the baking tray you prepared earlier
- Bake in the hot oven for approximately 20 minutes or until cooked

- Place vegetables in a food processor and finely chop, then add the meat and spices and give a few more pulses until combined. Add some arrowroot flour (similar to tapioca) - it will help stick everything together better and add softness.
- Scoop the meat from the bowl and form into balls (1-1½"). Place the meatballs on baking sheet. You can also use a mini muffin pan, the meatballs will bake in its juices and get a nicer crust (older kids like the crust, for small babies bake in a regular pan or you could even steam them).
- Bake uncovered at 400F for about 20 minutes, or until the middle is no longer pink. For older kids who like a crusty surface - bake at 420F.
- If desired, simmer in a creamy sauce for 10 minutes and serve over semolina fusilli pasta (or gluten free pasta). The sauce will make them juicer and softer, perfect for small babies.
