CHERRY TOMATO AND WATERMELON SALAD



Cherry Tomato and Watermelon Salad image

1 pint cherry tomatoes cut in half
1 1/2 cups 1 inch cubed yellow or red seedless watermelon peeled, cut into 2 inch cubes
1 avocado, cleaned and cut into 3/4 inch cubes
1 cucumber, peeled, seeded and cut into halves, then into 1/2 inch pieces
1 Tbsp. each fresh tarragon, basil, cilantro chopped coarsely
2 Tbsp. olive oil, extra virgin if possible
3 Tbsp. balsamic vinegar
1 Tbsp. Mrs. Dash® Fiesta Lime Seasoning Blend

Steps:

  • 1. Lightly toss all ingredients including Mrs. Dash® Fiesta Lime in medium size bowl.
  • 2. Rest in refrigerator for 30 minutes for flavors to marry.
  • 3. Spoon into four bowls, adding remaining juices over the top of the salad ingredients.

2 cups watermelon, seeded and cubed (3/4 inch cubes)
4 plum tomatoes, ripe,cut into 8 pieces each
1 seedless cucumber, peeled,halved lengthwise and cut into 1/2 inch pieces (English)
2 tablespoons virgin olive oil
1/4 cup fresh basil leaf, chiffonade
fresh ground pepper, to tast

Steps:

  • Prepare all ingredients ahead of time and store separately.
  • Just before serving, drain the water from the watermelon, tomato and cucumber in a colander and place them in a serving bowl.
  • Toss with olive oil, basil and pepper.
  • Serve immediately.

3 -4 heirloom tomatoes, small to medium, in assorted colors, cored and cut into 1 inch chunks
1 small cucumber, peeled, seeded, and cut into 1 inch cubes
1 cup watermelon, seedless flesh (red or yellow)
1 Hass avocado, halved, pitted, peeled, and cut into 1 inch cubes
1 tablespoon herbs, fresh, chopped (mixed in any combination ( basil, tarragon, chives, and cilantro)
1/4 teaspoon coriander seed
3 tablespoons extra virgin olive oil
3 tablespoons aged balsamic vinegar
kosher salt & freshly ground black pepper

Steps:

  • In a bowl, combine the tomatoes, cucumber, watermelon, avocado, and herbs.
  • In a spice grinder, grind the coriander seeds to a fine powder. Add the ground coriander to the tomato mixture and toss gently.
  • In a small bowl, whisk together the olive oil, balsamic vinegar, and salt and pepper to taste. Pour over the tomato mixture and toss to coat evenly. Taste and adjust the seasoning before serving.
