REFRESHING WATERMELON FETA SALAD RECIPE
An absolutely delicious watermelon feta salad recipe. Watermelon is with no doubt the fruit of the summer and this refreshing combination of juicy, chilled slices of watermelon and salty, creamy feta cheese make for a Greek salad summer favourite!

- To prepare this watermelon feta salad recipe start by removing the rind and seeds from the watermelon, and cut into triangular chunks. Cut the feta cheese into small cubes, or bigger if you prefer, and place both into a large bowl. Slice the onions into paper-thin slices and place in the bowl with the rest of the ingredients, add the chopped mint leaves and the kalamata olives and set aside. (If you choose to prepare this watermelon feta salad recipe using cucumber too, then peel and slice the cucumber into half-moons and place in the bowl with rest of the ingredients).
- Prepare the dressing for the watermelon feta salad. In a small bowl add the olive oil, lemon juice and brown sugar and season. Whisk the ingredients to combine, taste and adjust the seasoning.
- Pour the dressing over the watermelon feta salad and toss to coat.
- Divide the watermelon feta salad among individual serving plates and serve immediately. Enjoy!
WATERMELON AND FETA SALAD

- Add the garlic, Fresno, olive oil and vinegar to a glass jar with a lid. Season with salt and pepper, then add the mint. Place the lid on and shake vigorously to combine. Set aside.
- When ready to serve, combine the watermelon, cucumber and scallions in a large bowl. Dress with the vinaigrette and gently toss to combine. Sprinkle the crumbled feta on top. Serve chilled.
WATERMELON WITH BALSAMIC AND FETA
Steps:
- In a small saucepan, whisk together the balsamic vinegar and sugar. Cook over medium heat until reduced by half and syrupy, about 4 minutes.
- Stack 2 pieces of watermelon on each plate and drizzle with the balsamic reduction. Sprinkle with feta cheese and mint and serve.

- Chop 180g watermelon and ½ cucumber into chunks and tip into a bowl with the leaves from ½ bunch mint (reserving a few for garnish) and drizzle with 1 tbsp olive oil. A take on the Mediterranean combination of watermelon and feta, this refreshing zinger of a salad couldn't be more perfect. GRILLED WATERMELON WITH FETA

- Heat grill to medium high. When hot, brush olive oil on grates so the watermelon doesn't stick to it.
- While grill is heating up put the balsamic in a pot and heat down until it thickens. We like a lot of balsamic so we use more than a ¼ cup.
- Slice watermelon in half and then in 1.5" quarters. You want the rind on each piece. (picture a slice of pie).
- Pat dry with paper towel and sprinkle a small amount of salt on both sides.
- Place on grill. You should start to see grill marks in 2 to 3 minutes. Then flip.
- Remove watermelon from grill. Drizzle balsamic glaze over and sprinkle as much or as little fat as you like.
- Optional: Diced up some fresh mint and sprinkle over.
