WATERMELON CAPRESE APPETIZER
A refreshing appetizer for the summer, my family loved this so much they ate more than a serving each. Also great for those who love the flavor of caprese but aren't huge fans of tomatoes.

Steps:
- Trim basil leaves into small circles about 1 inch in diameter.
- Thread watermelon and mozzarella cheese on toothpicks, sandwiching a basil leaf in between. Arrange on a serving plate.
- Pour olive oil and balsamic vinegar over toothpicks. Sprinkle salt and black pepper on top.

WATERMELON, MOZZARELLA & BALSAMIC BITES

Steps:
- In a small saucepan, add balsamic vinegar. Cook on medium low heat until vinegar thickens and is half the amount. {if not using right away, set aside until ready to use} Drizzle vinegar on platter. Using a toothpick, skewer a mozzarella ball then a watermelon. Place on platter with balsamic vinegar. Serve immediately.

- Assemble watermelon feta appetizer bites by layering a cube of watermelon, then feta cheese, and then topping it with another cube of watermelon onto a cocktail skewer or toothpick.
- If making ahead of time, store in an airtight container in the refrigerator until about 15-25 minutes before serving.
- Just before serving, drizzle with balsamic glaze.

- 1. In a large bowl place the watermelon, tomatoes, and mozzarella cheese. Tear the basil and mint leaves into bite-size pieces and add them to the bowl. Drizzle on the balsamic vinegar and olive oil. Add the sea salt and freshly ground black pepper. Toss a few times to mix...I use my hands but can use a large spoon. You don't want to smoosh the fruit though. Serve immediately

- In a small saucepan set over medium-high heat, combine the balsamic vinegar and sugar. Bring the mixture to a boil and continue cooking it, scraping down the sides as needed, until it has reduced and is the consistency of syrup, about 5 minutes. (It will thicken as it cools and only yield a few tablespoons.) Set it aside to cool while you prepare the salad.
- Cut the watermelon into cubes or use a melon baller and scoop it into balls. Add it to a large bowl.
- In a small bowl, whisk together the lime juice and olive oil with a pinch of salt and pepper. Pour the dressing over the watermelon, add the chopped mint and feta cheese, and toss to combine. Drizzle the salad with the balsamic syrup and serve immediately.

- Balsamic Reduction: In a saucepan combine sugar and balsamic vinegar. Bring to a boil, then simmer for 15-25 minutes, depending on how thick you want it. The longer you cook the reduction, the thicker it will get.
- Skewers: Slice vegan mozzarella and watermelon into uniform bite sized pieces, about 1" x 1 1/2".
- Skewer the watermelon piece, pushing the watermelon to the end. Follow with a basil leaf, the vegan mozzarella, another basil leaf, and finishing with a watermelon slice.
- Put skewers on a plate - either standing upright, or on their side. Drizzle with balsamic reduction.
