10 mint leaves
25 ml lime juice
2 cups sparkling water or kombucha (optional)

Steps:

  • Blend watermelon, mint and lime juice until combined.
  • Option 1: Pour over ice and garnish. Makes 2.
  • Option 2: Pour over ice and top up with sparkling water or kombucha. Stir gently to combine. Makes 4.

4-5 cups chopped watermelon
2-3 cups ice
Juice of two limes
3/4 teaspoons liquid stevia (to taste)
handful fresh mint leaves, plus extra sprigs for garnish

Steps:

  • Put all ingredients into a blender, and blend until smooth.
  • Pour into glasses, garnish with sprigs of fresh mint, and serve immediately.

9 cups (about 2 1/2 pounds) seeded, cubed watermelon
1/3 cup fresh lime juice
1 cup mint, finely chopped, plus more for garnish
1/3 cup sugar

Steps:

  • Working in 2 batches, puree watermelon in a food processor. Strain puree through a sieve and strain out solids, forcing liquid out with a wooden spoon. Discard solids. Combine the watermelon puree, lime juice, mint and sugar in a 9 by 13-inch metal pan. Place mixture in the freezer, scraping thoroughly with a fork every 20 to 30 minutes for about 2 1/2 hours, or until the granita resembles coarse crystals. Scrape 1 last time and spoon into parfait glasses or bowls. Top with a mint sprig.

1/4 cup sugar
1/4 cup lightly packed mint sprigs, plus more for serving
6 cups peeled, chopped watermelon
1/3 cup fresh lime juice
1 ounce tequila (optional)

Steps:

  • In a small heatproof bowl, pour 1/2 cup boiling water over sugar and mint; stir until sugar has dissolved. Let cool completely, about 20 minutes. Strain syrup into a blender; discard mint.
  • Add watermelon, lime juice, and 1 3/4 cups cold water; blend until smooth. Strain through a fine-mesh sieve.
  • Serve over ice, garnished with a mint sprig, or refrigerate in an airtight container up to 3 days. If using tequila, stir a shot (1-ounce) into each glass before serving.

1/2 cup milk
1/4 cup sugar, or to taste
1 cup ice cubes, preferably crushed
1 tablespoon fresh lime juice, or to taste
1/4 cup chopped fresh mint leaves, plus mint for garnish

Steps:

  • Combine the watermelon, milk, and sugar in a blender with the ice. (If you have a small blender, work in 2 batches.) Blend until pureed but not entirely smooth.
  • Add the lime juice and mint, along with more sugar if you like. Serve over ice, garnished with more mint.
