6 cups (about 2 pounds) seedless watermelon, cubed
1/2 cup fresh lime juice
1/3 cup agave nectar
2 cups fresh blueberries
6 mint sprigs (optional)

Steps:

  • In a food processor, puree watermelon, working in 2 batches. Strain puree through a sieve, reserving liquid; discard solids. In a 9" x 13" metal pan, combine watermelon puree, juice and agave. Freeze, scraping thoroughly with a fork every 20 to 30 minutes, until granita resembles coarse crystals, 2 to 4 hours. Remove from freezer; scrape granita once more with a fork. Divide among 6 glasses. Top each with 1/3 cup blueberries and a mint sprig, if desired.

3/4 cup sugar, divided
3 tablespoons fresh lemon juice, divided
1 tablespoon minced peeled fresh ginger
4 cups quartered hulled strawberries

Steps:

  • Puree melon, 1/4 cup sugar, 1 tablespoon lemon juice, and pinch of salt in blender; pour into 8-inch square pan. Freeze 1 hour; whisk. Freeze until solid, 3 hours. With fork, scrape into icy flakes. Cover; keep frozen.
  • Stir 1/2 cup sugar, 2 tablespoons lemon juice, and ginger in pan over low heat until sugar melts; cool. Mix in berries. Layer berries with syrup and granita in glasses.

Watermelon Granita is deliciously refreshing and perfect for all your summer parties. It takes minutes to make, and is always a crowd pleaser!

8 cups seedless watermelon (cut into chunks)
1/3 cup honey
1/4 cup freshly squeezed lime juice
fresh mint leaves for garnish

Steps:

  • Place half the watermelon chunks, the honey and the lime juice in a blender and process until smooth.
  • Add the remaining watermelon and continue to process until smooth.
  • Pour the mixture through a sieve into a 9x13 pan.
  • Cover and freeze until partially frozen around the edges, about one hour.
  • Scrape with a fork and then return to the freezer to continue freezing.
  • Repeat the process until entire mixture has been scraped and the entire mixture is crystallized.
  • Serve in a snow cone cup or glass dish.
  • Garnish with fresh mint leaves.

2 pounds watermelon, seeded and cubed
½ cup white sugar
1 cup champagne
4 slices watermelon

Steps:

  • Place cubed watermelon and sugar in the pitcher of a blender. Blend for 1 minute. Stir in the champagne. Pour the watermelon mixture into a plastic container, cover and place in the freezer. Stir the mixture with a fork every 30 minutes until frozen, about 2 hours.
  • Before serving, remove the frozen granita from the freezer and stir well using a fork or place in the food processor and process until it reaches the desired consistency. Serve in tall glasses garnished with sliced watermelon.
