Watermelons are made up almost entirely of water, so they're filling and refreshing without being heavy on calories. It is a good source of lycopene.

2 envelopes (1/4 ounce each) unflavored gelatin
1/2 cup sugar
Pinch salt
1 tablespoon fresh lemon juice
3 1/2-pound piece seedless watermelon, rind removed, cut into chunks, plus more, diced, for garnish

Steps:

  • In a small bowl, sprinkle gelatin over 1/4 cup cold water. Set aside to soften, about 5 minutes.
  • Meanwhile, in a small saucepan, combine sugar, salt, and 1/4 cup water. Heat over high, stirring occasionally, just until sugar is dissolved, 2 to 3 minutes; remove from heat. Stir in gelatin mixture until dissolved; set aside.
  • In a blender, combine lemon juice and half the watermelon chunks; puree. Add remaining watermelon chunks; puree. Pour puree through a fine-mesh sieve into a large bowl or glass measuring cup, and discard solids. (You will need 3 cups of puree; reserve any extra for another use.)
  • Stir gelatin mixture into puree; skim off and discard any foam on the surface. Divide mixture among 6 serving cups. Cover and refrigerate until set, at least 3 hours and up to 3 days. Serve gelatins, garnished with diced watermelon.

1 (3 ounce) package watermelon-flavored gelatin mix
1 cup boiling water
1 cup vodka
1 teaspoon black sesame seeds, or as needed

Steps:

  • Slice limes in half crosswise, juice the limes, reserving juice for another use, and turn the rinds inside out. Scrape membranes and flesh from lime halves and turn peels back to form small cups with the green rind on the outsides. Place halves in a small dish, edges touching, to keep cups standing and upright.
  • Stir watermelon gelatin mix with boiling water in a bowl, mixing until gelatin is completely dissolved. Let cool to room temperature and stir vodka into gelatin. Pour gelatin mixture into lime peel cups. Refrigerate until set, 2 to 4 hours.
  • Use a sharp knife to cut each lime cup wedges. Sprinkle wedges with black sesame seeds.

6 cups boiling water, divided
1 package (3 ounces) watermelon gelatin
1 package (3 ounces) strawberry gelatin
2 envelopes unflavored gelatin
1/3 cup cold water
1-1/2 cups white grape juice
1 carton (12 ounces) frozen whipped topping, thawed, divided

Steps:

  • In a large bowl, dissolve lime gelatin in 3 cups boiling water. Pour into a greased 8-in. square dish. In another large bowl, combine watermelon and strawberry gelatins; stir in the remaining 3 cups boiling water until gelatin is dissolved. Pour into another greased 8-in. square dish. Refrigerate both dishes until gelatin is very firm., Meanwhile, sprinkle unflavored gelatin over cold water; let stand 1 minute. In a small saucepan, bring grape juice to a boil; stir in softened unflavored gelatin. Stir over low heat until gelatin is dissolved. Pour into a large bowl; refrigerate 45 minutes or until slightly thickened. Gently fold in 2 cups whipped topping., Cut green gelatin into 1/2-in cubes and red gelatin into 1-in. cubes. Place 2 cups whipped topping mixture into a large bowl; fold in green gelatin. Spread into a greased 13x9-in. dish. Fold red gelatin into remaining whipped topping; spread over green gelatin layer. Refrigerate 2 hours or until set.

1 cup boiling water
1 cup cold water
4 large limes
1/4 cup miniature chocolate chips

Steps:

  • In a small bowl, dissolve gelatin in boiling water. Stir in cold water. Refrigerate for 1 hour or until slightly thickened., Meanwhile, slice limes in half lengthwise. With a small scissors or sharp knife, cut the membrane at each end to loosen pulp from shell. Using fingertips, pull membrane and pulp away from shell (discard pulp or save for another use)., Fold chocolate chips into gelatin; spoon into lime shells. WATERMELON SLICE JELLO SHOTS

half of 1 medium watermelon
2 boxes of watermelon jello or red colored jello (3-ounce boxes)
1 box of unflavored gelatin (4 envelopes total)
2 cups of water
2 cups of vodka

Steps:

  • Use a large spoon or ice cream scoop to scoop out the inside of the watermelon and set aside (to later eat, of course!). You want to scoop out most of the red flesh but still leave about 1/2" of the red part above the white rind. Place the hollowed out watermelon on a cookie sheet with paper towels folded/stuffed on either side to keep it from tipping over.
  • Mix your two boxes of jello with the 4 packets of unflavored gelatin. Add in 2 cups of boiling water and stir until dissolved. Once dissolved, add in two cups of vodka and stir to combine. Pour the liquid into the halved watermelon (fill to the top!) and place into the fridge for 3-4 hours until the jello is set. Probably the hardest part of this recipe is carrying the tray to the fridge without spilling it!
  • Once the jello is set, use a large knife to cut the slices like you normally would. The jello fills into the watermelon some so the top level shrinks a bit. Just use the knife to even out any rind that sticks up higher than your slices, and you're ready to serve your shots!

12 ounces vanilla wafers, finely ground
1/2 cup unsalted butter, melted
5 cups watermelon juice (from about 1/2 of a large watermelon)
1/2 teaspoon lemon zest (from 1 lemon)
1/2 cup fresh lemon juice (from 2 large lemons)
1/2 cup sugar
1/2 cup heavy cream
4 (3 ounce) packets gelatin
1/4 cup confectioners' sugar or 1 cup whipped cream, for garnish

Steps:

  • step 1 Preheat the oven to 350 degrees F. Line a 13-by-9-inch baking pan with foil, leaving a 2-inch overhang on the long sides of the pan. Spray the foil with cooking spray.
  • step 2 Mix the melted butter into the finely ground vanilla wafers and add 2 Tablespoons of water. Mix well and press the crumbs onto the bottom of the prepared pan, forming a crust. Bake the crust for 20 minutes and allow to cool.
  • step 3 Set aside 2 cups of the watermelon juice in a small bowl. In a large bowl, combine the remaining 3 cups of watermelon juice with the lemon zest, lemon juice, sugar and heavy cream.
  • step 4 Sprinkle the gelatin over the reserved 2 cups of watermelon juice. Allow to sit for 2 minutes so that gelatin can dissolve and begin to absorb liquid, or "bloom." After the gelatin blooms, heat it in the microwave for 2 minutes on high, or heat gently in a small pot over low heat on the stove top, until the gelatin has completely melted into the juice and the liquid is smooth.
  • step 5 Add the watermelon juice with the melted gelatin to the larger bowl of juice from Step 3. Stir to combine. Gently pour the mixture over the prepared crust from Step 2 and place in the freezer for 2 hours or until the mixture is firm. (Alternately, place the pan in the refrigerator and allow to set for 3 to 4 hours.)
  • step 6 Keep in the refrigerator until ready to serve. Before serving, cut the watermelon bars into squares. If desired, sprinkle each serving with confectioners' sugar or a dollop of whipped cream.
