Pistachio Lush is a creamy, rich summer potluck dessert that is a cinch to make. Two boxes of pistachio pudding can easily be turned into a delicious no-bake layer dessert.

Ingredients

2 cups graham cracker crumbs
1/2 cup butter, (melted)
1/4 cup granulated sugar
1 (8-ounce) package cream cheese, (room temperature)
1 cup powdered sugar
1 (16-ounce) container Cool Whip, (divided)
2 small boxes Pistachio instant pudding mix
3 cups whole milk
chopped pistachios, (optional)

Steps:

In a medium bowl, stir together graham cracker crumbs, melted butter, and sugar. Press into the bottom of a greased 9x13-inch pan. Refrigerate at least 1 hour.
Beat cream cheese with an electric mixer until creamy. Add powdered sugar and beat until smooth.
Stir in 1 1/2 cups of Cool Whip. Spread over graham cracker crust.
In a large bowl whisk together pudding mix and milk until it starts thickening, about 2 minutes. Spread over cream cheese layer.
Spread remaining Cool Whip on top. Sprinkle chopped pistachios on top if desired. Refrigerate at least 2 hours before serving.

In a separate mixing bowl, combine 2 cups whipped topping, cream cheese, and powdered sugar. Mix until smooth and creamy; spread over cooled crust.
Combine pudding mix and milk; whisk until smooth and let stand 5-10 minutes to thicken. Spread pudding over cheesecake mixture.
