This Watergate Lush Dessert is a unique combination of flavors! Pistachio, pecans and pineapple combine to make a fluffy, no-bake treat!

Ingredients

1 (11 oz pkg) pecan shortbread cookies (such as Pecan Sandies) (coarsely crushed)
5 Tbsp butter (melted)
1 (3.4-3.9 oz) pkg instant pistachio pudding mix
1 cup milk
2/3 cup crushed pineapple (well drained)
1 (16 oz tub) Cool Whip (thawed and divided)
1 cup chopped pecans

Steps:

Lightly grease an 8x8" square pan with cooking spray; set aside. In a large bowl, combine the coarse cookie crumbs and butter until moistened. Press evenly into the prepared pan and set aside.
Wipe out the bowl and add in the pistachio pudding mix and the milk. Whisk until thickened, about 2 minutes. Fold in the pineapple and 2 cups of the Cool Whip until combined and fluffy.
Spread the filling into the prepared pan in an even layer. Top with the remaining Cool Whip and the pecans.
Refrigerate for at least 6 hours, or overnight, until set. Cut into squares to serve.

1 pkg. (3.4 oz.) JELL-O Pistachio Flavor Instant Pudding
2 cans (8 oz. each) crushed pineapple in juice, undrained
1 cup JET-PUFFED Miniature Marshmallows
1/2 cup chopped pecans
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed, divided
1 pkg. (10 oz.) round angel food cake
1/2 cup BAKER'S ANGEL FLAKE Coconut, toasted

Steps:

Mix pudding mix and pineapple in large bowl. Add marshmallows and nuts; mix well. Gently stir in 1-1/2 cups COOL WHIP.
Cut cake horizontally into 3 layers. Place bottom cake layer on serving plate; top with 1-1/2 cups pudding mixture. Cover with middle cake layer and remaining pudding mixture. Top with remaining cake layer.
Frost side and top of cake with remaining COOL WHIP. Refrigerate at least 1 hour. Sprinkle with coconut just before serving.

1 package (3.4 ounces) JELL-O® Vanilla Flavor Instant Pudding
1 cup thawed Cool Whip® Whipped Topping
1 prepared angel food cake or 12 individual round sponge cakes
Mixed fresh berries

Steps:

In a small bowl, beat pineapple and pudding mix until well combined. Fold in whipped topping. Chill until ready to assemble., To fill angel food cake, slice cake horizontally into three layers. Fill and top layers with filling. Top with berries., To fill individual sponge cakes, spoon filling into cakes and top with berries., For parfaits, layer cubed angel food cake, filling and 2 cups berries in 12 dessert glasses.
