COLD SOBA NOODLE SALAD WITH CREAMY SESAME DRESSING

Cold Soba Noodle Salad with Creamy Sesame Dressing image

Cool, light and loaded with fresh vegetables, this salad makes a perfect summer meal. Nutty buckwheat noodles and tangy dressing make it rich and satisfying, too. The dressing can be made a day ahead and chilled-just give it a good shake before serving.

Provided by Food Network Kitchen

Time 45m

Yield 4 servings

Number Of Ingredients 13

1/4 cup sesame seeds
2 ears corn, shucked
1/2 cup vegetable oil
1/4 cup fresh lemon juice (from about 2 lemons)
1/4 cup soy sauce
4 teaspoons packed light brown sugar
1 teaspoon chile-garlic sauce
One 2-inch piece ginger, peeled and thinly sliced into half moons
One 9.5-ounce package dried buckwheat soba noodles
2 cups small sprigs watercress, thick stems trimmed
12 cherry tomatoes, halved
1 avocado, diced
1/2 English cucumber, halved and thinly sliced into half moons

Steps:

  • Bring a large pot of water to a boil.
  • Spread the sesame seeds in a medium skillet over medium heat, and toast until golden brown, shaking the pan occasionally, 4 to 5 minutes. Let cool, about 10 minutes.
  • Meanwhile, add the corn to the boiling water, and cook for 4 to 5 minutes. Remove the corn to a colander, reserving the boiling water for later use, and run the corn under cold water to cool. Cut the kernels from the cobs; set aside.
  • Transfer the sesame seeds to a blender and grind for 15 seconds. Add the oil, and puree until smooth and emulsified, about 15 seconds. Add the lemon juice, soy sauce, sugar, chile-garlic sauce and ginger, and blend for another 15 seconds.
  • Add the soba noodles to the boiling water, and cook until the noodles no longer have a hard, chalky bite but are still springy, 3 to 4 minutes. Strain the noodles in a colander, and run them under cold water to stop the cooking quickly. When the noodles are completely cool, shake the colander vigorously to remove as much water as possible (if the noodles are too wet, they will dilute the dressing).
  • Divide the noodles among four bowls. Drizzle the dressing over the noodles (use all of the dressing, as the noodles will soak it up). Top with the corn, watercress, tomatoes, avocados and cucumbers. Toss before eating.

WASABI DRESSING AND WATERCRESS SALAD WITH CUCUMBER

Wasabi Dressing and Watercress Salad with Cucumber image

This is a very simple salad and takes no time to prepare. Watercress Salad with cucumber is a Western style salad but the Wasabi Dressing is full of Japanese flavour with soy sauce and a good amount of wasabi.

Provided by Yumiko

Categories     Salad

Time 5m

Number Of Ingredients 7

80g/2.8oz watercress
80g/2.8oz cucumber
2 tbsp light flavourless oil ((note 1))
1 tbsp soy sauce
1 tbsp grated wasabi/wasabi paste ((note 2))
1 tsp lemon juice
a pinch of sugar

Steps:

  • If watercress comes with long stems rather than in sprigs, cut them in half or into three pieces so that they can be picked up more easily.
  • Cut the cucumber vertically to quarters into sticks. Then cut each stick to 2cm pieces perpendicular to the first cut.
  • Add watercress and cucumber pieces to a bowl.
  • Add the Wasabi Dressing ingredients to a small jar and shake well until sugar is dissolved and there are no lumps of wasabi paste.
  • Add the dressing to the bowl of vegetables and dress well.
  • Transfer to a serving bowl.

ASIAN SESAME DRESSING

Asian Sesame Dressing image

A fantastic standby dressing to have on hand because it keeps for 3 weeks! Use this Asian dressing for leafy green salads, Asian slaws, noodle salads and chopped salads. It's also a terrific dressing to make steamed vegetables so much tastier. Finish with a sprinkle of fresh sesame seeds and sliced greens onions!

Provided by Nagi | RecipeTin Eats

Categories     Salad

Time 3m

Number Of Ingredients 10

1/4 cup soy sauce
2 tbsp toasted sesame oil
1/4 cup white vinegar ((adjust to taste for sharpness))
1/4 cup olive oil ((Note 1))
1 tbsp sugar ((any type) or 1 1/2 tbsp honey)
1 tbsp soy sauce
2 tsp toasted sesame oil
1 tbsp white vinegar
1 tbsp olive oil ((Note 1))
1 tsp sugar ((any type) or 1 1/2 tsp honey)

Steps:

  • Place ingredients in a jar and shake well until sugar is dissolved. Adjust saltiness with salt and sweetness with sugar to taste.
  • Keep for up to 3 weeks, in the fridge (to be safe). Bring to room temp and shake well before use.
  • Single serving batch is enough for 3 - 4 cups of shredded cabbage / leafy greens i.e. a side salad for 4 people.
  • Big batch - my rule of thumb for how much dressing to use is generally 1 tbsp of dressing per 1 packed cup of shredded vegetables and 2 tsp per handful of leafy greens.

The spiciness of the watercress is nicely balanced by the toasted sesame oil, and the tofu provides a creamy base. • Combine all poached chicken ingredients in a pot. Cover with a tight-fitting lid and bring to a gentle boil. As soon as it comes to the boil, turn off the heat and leave the chicken in the poaching liquid, still covered, for 15-20 minutes (depending on the size of the chicken breasts). Do not lift the lid during this time (or else the heat will escape!). The residual heat of the liquid will cook the chicken through perfectly and keep it nice and moist. Remove chicken from the poaching liquid and set aside to cool slightly before slicing. If it has not cooked all the way through, simply return it to the pot and simmer in the poaching liquid for a few more minutes.
  • To serve, toss salad with 2 tablespoons of the dressing. Thinly slice chicken breasts and serve over the salad. Drizzle extra dressing over the chicken.
