An easy recipe for the traditional holiday drink. If you don't have a tea ball, place spice mixture on a small piece of cheesecloth and tie with a string, forming a small pouch.

4-6 cinnamon sticks
1 cup fresh cranberries
8 ounces of orange juice
1 can frozen lemonade concentrate
8 ounces cranberry juice
1 gallon of apple cider or spiced cider
lemon and orange slices for garnish

Steps:

  • In a large pot on the stove or in a slow cooker, add all of your ingredients.
  • Cook on low heat for 45 minutes.
  • Garnish with fresh orange and lemon slices.
  • Serve your hot wassail and toast!

2 quarts apple cider
1-1/2 cups orange juice
3/4 cup pineapple juice
1 tablespoon brown sugar
1/2 teaspoon lemon juice

Dash ground cinnamon
Dash ground cloves

Steps:

  • In a large saucepan, combine all of the ingredients. Bring to a boil. Reduce heat; cover and simmer for 20-30 minutes. Discard cinnamon sticks. Serve hot in mugs.

Here is the the beauty of wassail: more than just another nice-tasting drink, it's part of a long (if largely forgotten) tradition of celebrating the life that winter can seem determined to snuff out. It's a fragrant, warming concoction mixed in bulk (this recipe makes 12 servings) and set out for sharing, all but demanding that you call in a crowd. There's really no such thing as wassail for one. A punch bowl is good for this, although you can also ladle it into individual cups. (The New York Times)

5 to 6 small to medium honey crisp (or Fuji or McIntosh) apples, cored
1/2 cup light brown sugar
1/2 cup dark brown sugar
2 cups Madeira
2 bottles (22 4/10 ounces) London Pride Ale
4 bottles (48 ounces) Strongbow English Cider
1 cup apple cider
12 whole cloves
12 whole allspice berries
2 cinnamon sticks, 2 inches long
2 strips orange peel, 2 inches long
1 teaspoon ground ginger
1 teaspoon ground nutmeg

Steps:

  • Heat oven to 350 degrees. Place apples in a 9-by-9-inch glass baking dish. Spoon light and dark brown sugar into center of each apple, dividing sugar evenly among them. Pour 1 cup water into bottom of dish and bake until tender, about 1 hour.
  • Meanwhile, pour Madeira, ale and English and apple ciders into a large slow cooker or heavy pot. Place cloves, allspice, cinnamon and orange peel into cheesecloth, tie shut with kitchen twine and add to slow cooker or pot along with ginger and nutmeg. Set slow cooker to medium, or place pot over low heat. Gently simmer for about 1 hour, while apples bake, or longer if desired.
  • Add liquid from the baking dish and stir to combine. Using tongs, transfer apples into slow cooker or pot to garnish. Reduce heat. Ladle hot wassail into heatproof cups to serve.

1 cup sugar
5 whole cloves
4 whole allspice
2 cinnamon sticks
1/8 tsp ground ginger
1 quart apple cider
2 cups orange juice
1 cup lemon juice

Steps:

  • In a large pot (at least 4 quarts) stir together the water and sugar and bring to a boil.
  • Boil, stirring occasionally for 5 minutes. Turn off the heat and add in the cloves, allspice, cinnamon and ginger. Let sit for at least 30 minutes.
  • At this point you can strain and remove the spices or leave them in. (I like to leave them in)
  • Add in the apple cider, orange juice and lemon juice. Stir to combine. Bring just to a boil and then turn down to low to keep warm while serving.

Apple Cider (alcoholic Version) or Apple Juice (The Sober Variety)
3 Gala Apples
1 Large Orange
Cloves
Nutmeg
Ground Ginger (Spice will do!)
Vanilla Pod (If you are adventurous but Vanilla Extract works just as well and comes in larger quantities to make more)
Cinnamon Sticks

Steps:

  • Take the orange peel it and stud it with cloves (13 is enough) dice up 3 small apples and sprinkle them with sugar roast them at 180c in the oven for 30-40 minutes
  • Place the apple juice/cider in a saucepan add the orange peels vanilla extract, 2 Cinnamon sticks, orange peel, nutmeg and ground ginger, simmer slowly until warm
  • When roasted add to the apple juice/cider and spice mixture and simmer until hot
  • Pour and serve pop a cinnamon stick in the glass with some of the roasted apple slices and one clove stick
  • Some brandy can also be added into the alcoholic mix for an extra kick

2 cups water
1 cinnamon stick
4 allspice berries
5 cloves (or 3/4 teaspoon ground cloves)
1 inch fresh ginger (peeled, or substitute with 1/2 tsp ground ginger)
2 cups orange juice
1 cup lemon juice (I use the lemon juice concentrate)
4 cups apple cider (can also use apple juice but you'll lose some flavor.)

Steps:

  • In a large pot over medium heat, stir the sugar and water. Bring to a boil and boil for 5 minutes, stirring frequently.

6 Fuji apples, cored
Four 11.2-ounce bottles English hard cider, such as Strongbow
Two 12-ounce bottles English pale ale, such as Bass
2 cups apple cider
1 cup Madeira

4 cinnamon sticks, plus more for serving
2 wide strips orange zest, plus orange wedges, for serving
2 wide strips lemon zest

Steps:

  • Preheat the oven to 350 degrees F.
  • Spoon the sugar into the center of each apple, then place in a 9-inch square baking dish with 1 cup water. Bake until the apples are very tender, 1 hour to 1 hour 30 minutes.
  • Meanwhile, add the hard cider, pale ale, apple cider and Madeira to a large pot and bring to a gentle simmer over medium heat. 4 cups no pulp orange juice
46 ounces 100% pineapple juice
1 cup fresh lemon juice
1 cup packed brown sugar
12 whole cloves

1 granny smith apple (washed, cored and quartered)
1 Honeycrisp apple (washed, cored and quartered)
1 navel orange ((washed, cored and quartered))

Steps:

  • Combine liquid ingredients in a large stock pot. Stir in brown sugar, whole cloves and cinnamon sticks.
  • Top with cut fruit, keeping the rinds and peels facing up towards the surface of the liquid.
  • Heat on medium until boiling, and then reduce to simmer. Simmer for 1-2 hours.
  • Remove fruit, cinnamon sticks and cloves. You can strain the wassail through a sieve if you prefer.
  • Ladle into heat-safe mugs, top with garnish and enjoy.

6 small Fuji apples, cored
1 cup brown sugar
1 cup water
72 ounces ale
750 ml Madeira
10 whole cloves
10 whole allspice berries
1 cinnamon stick, 2-inches long
1 teaspoon ground ginger
1 teaspoon ground nutmeg
6 large eggs, separated

Steps:

  • Preheat the oven to 350 degrees F.
  • Put the apples into an 8 by 8-inch glass baking dish. Spoon the brown sugar into the center of each apple, dividing the sugar evenly among them. Pour the water into the bottom of the dish and bake until tender, about 45 minutes.
  • Pour the ale and Madeira into a large slow cooker. Put the cloves, allspice, and cinnamon into a small muslin bag or cheesecloth, tied with kitchen twine, and add to the slow cooker along with the ginger and nutmeg. Set the slow cooker to medium heat and bring the mixture to at least 120 degrees F. Do not boil.
  • Add the egg whites to a medium bowl and using a hand mixer, beat until stiff peaks form. Put the egg yolks into a separate bowl and beat until lightened in color and frothy, approximately 2 minutes. Add the egg whites to the yolks and using the hand mixer, beat, just until combined. Slowly add 4 to 6 ounces of the alcohol mixture from the slow cooker to the egg mixture, beating with the hand mixer on low speed. Return this mixture to the slow cooker and whisk to combine.
  • Add the apples and the liquid from the baking dish to the wassail and stir to combine. Ladle into cups and serve.
