{BAKED} PEPPER JACK CHEESE DIP
{Baked} Pepper Jack Cheese Dip is an easy and yummy appetizer that goes great with soft pretzels, or is good as a fish taco topping!

Steps:
- Preheat oven to 375 degrees
- Melt the butter in a heavy sauce pan
- Add the flour, and whisk to combine
- Let the flour cook for 1 minute
- Slowly whisk in the milk and continue whisking until milk thickens
- Add cheeses and continue to whisk until cheeses are melted and sauce is smooth
- Place into a baking dish and bake for about 15 minutes, or until the top beings to brown
- Enjoy with soft pretzels, chips, or fish tacos

- In a medium saucepan over medium-low heat, whisk together evaporated milk, corn starch, onion powder, garlic powder, and salt until combined. Start with half the salt amount if you'd like, adding the rest to taste.
- Bring just to a light simmer (no more - don't boil!) for 1-2 minutes while frequently stirring.
- Reduce heat to low and stir in the shredded cheese in batches, allowing each addition to melt completely. Taste test, adding additional salt as needed. If adding diced chiles or tomatoes, you can stir them in now, or transfer the dip to a serving dish and garnish as desired. Enjoy with tortilla chips.

This bean dip is sooooo good. It is easy to make and is always a hit. I make it for my Super Bowl party each year and it is always gone before half time!! Two cheeses and refried beans are baked with mild spices to create a creamy dip. Serve with tortilla chips.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, blend the cream cheese and sour cream. Mix in the refried beans, taco seasoning, hot pepper sauce, parsley, green onions, 1/2 the Cheddar cheese and 1/2 the Monterey Jack cheese. Transfer the mixture to an 8x12 inch baking dish. Top with remaining Cheddar and Monterey Jack cheeses.
- Bake in the preheated oven 20 to 30 minutes, until cheese is slightly browned.
