A quick sear on flavorful skirt steak and a fast sautee of colorful veggies is all it takes to put a satisfying dinner on the table in 20 minutes.

3 teaspoons extra-virgin olive oil
1 1/4 pounds skirt steak, cut into 4 pieces and patted dry
Coarse salt and ground pepper
3/4 pound green beans, trimmed and cut into 1 1/2-inch pieces
2 small garlic cloves, thinly sliced
8 ounces grape tomatoes
1 can (15.5 ounces) cannellini beans, rinsed and drained
1 tablespoon plus 2 teaspoons red-wine vinegar
Handful fresh basil leaves, torn

Steps:

  • In a large skillet, heat 1 teaspoon oil over medium-high. Season steak with salt and pepper. Cook steak (in batches if necessary) until browned, 3 to 5 minutes per side for medium-rare. Transfer steaks to a cutting board and let rest.
  • Rinse out skillet and return to heat, along with 2 teaspoons oil. Add green beans and cook 2 minutes. Add garlic and tomatoes and cook, stirring occasionally, until tomatoes begin to burst, 3 minutes. Add cannellini beans and vinegar and cook, stirring, until beans are heated through, about 2 minutes. Remove from heat; season to taste with salt and pepper and sprinkle with basil.
  • Thinly slice steak against the grain and divide among 4 plates. Serve with bean salad.

1 1/2 pounds Denver, sirloin or strip steak (1 to 1 1/2 inches thick)
Kosher salt
2 tablespoons coarsely ground mixed peppercorns
2 tablespoons sherry vinegar
2 teaspoons pure maple syrup
1/2 small shallot, minced
5 tablespoons vegetable oil
1 pound oyster or cremini mushrooms, trimmed and thickly sliced
2 teaspoons dijon mustard
1 5-ounce package mesclun salad mix (about 8 cups)
1 cup fresh parsley
2 ounces white cheddar cheese, shaved

Steps:

  • Season the steak on both sides with salt and then coat with the peppercorns. Whisk the vinegar and maple syrup in a large bowl and add the shallot; set aside.
  • Heat a large skillet over medium-high heat and add 2 tablespoons vegetable oil. Add the steak and cook, undisturbed, until a crust forms, 4 to 5 minutes per side, plus about 1 minute on each of the long edges. Transfer to a cutting board to rest.
  • While the steak cooks, heat a second large skillet over high heat. Add 2 tablespoons vegetable oil and the mushrooms; cook, undisturbed, until starting to brown, about 3 minutes. Toss, season with salt and continue cooking until well browned and tender, about 5 more minutes.
  • Whisk the mustard into the shallot mixture, then whisk in the remaining 1 tablespoon vegetable oil. Add the mesclun, parsley and sautéed mushrooms and toss; season with salt.
  • Divide the salad among plates and top with the cheese. Slice the steak and add to the plates.

1 red pepper, roasted, peeled, and cut into julienne
1 yellow pepper, roasted, peeled, and cut into julienne
1/4 cup chopped parsley
1 tablespoon Dijon mustard
4 cloves garlic
1 tablespoon aji molido (Argentine ground pepper)
Pinch coarse sea salt
1/4 cup white wine vinegar
1/4 cup water
Olive oil
2 (1 1/2 pound) skirt steaks, cleaned of silver skin
2 cups dry white beans, allow to soak in water 24 hours before cooking
1 strip smoked bacon
1 yellow onion, halved
1 bunch scallions, sliced thinly
1 cup red teardrop tomatoes, halved
1 cup yellow teardrop tomatoes, halved

Steps:

  • Chimichurri: Combine garlic, aji, and salt in a mortar. Add vinegar, water, and drizzle in oil.
  • Steak: Marinate steak in all but 1 tablespoon chimichurri for about 1 hour, covered and refrigerated.
  • In a large pot, cover beans with water and cook with bacon and onion, without salt. Allow to simmer until tender, about 1 1/2 hours. Strain the beans, reserving the cooking liquid. Remove and discard the bacon and onion. Put back the cooking liquid on the stove, allow to boil until cooking liquid is starchy and thick. Reserve 1 cup.
  • Grill steak until medium rare, about 2 to 3 minutes on each side.
  • Slice steak into 2-inch pieces. Mix into the beans add all the other ingredients, including the reserved chimichurri and reduced cooking liquid. Season and serve at room temperature.

1 large rib celery, thinly sliced

1/2 pound small white beans (dried)
1/2 cup celery, chopped
1/2 cup red onion, minced
1/2 cup red pepper, diced
1/2 cup fresh parsley, chopped
1 tablespoon tarragon, chopped
1/2 cup Nicoise olives
4 tablespoons olive oil
4 tablespoons red wine vinegar
3 small garlic cloves, pressed
2 anchovies, finely minced
1/2 teaspoon salt
ground pepper, to taste

Steps:

  • Rinse and drain beans. Bring them to a boil in 3 cups of water. Reduce heat, simmer 5 minutes. Remove from heat and cover and let sit 1 hour. Rinse beans and return to pan with 8 cups of fresh water. Simmer 20 minutes untill beans are tender, but not mushy. Drain and rinse in cold water. Whisk together all dressing ingredients. Combine beans and all other salad ingredients. Add dressing, toss and chill. Scatter olives over.

1/2 pound dried Great Northern beans (1 1/4 cups)
4 cups salted water
2 garlic cloves, 1 crushed and 1 chopped and mashed to a paste with 1/2 teaspoon salt
2 cups packed arugula leaves, washed well and spun dry
1 small red onion, sliced thin
2 tablespoons chopped fresh flat-leafed parsley leaves
3 tablespoons fresh lemon juice
four 4-ounce skinless tuna steaks (each about 1/2 inch thick)
1 teaspoon fennel seeds, crushed
freshly ground black pepper
Accompaniment: lemon wedges

Steps:

  • In a large saucepan simmer beans in salted water with crushed garlic until tender, about 1 hour, and drain, reserving 1/4 cup cooking liquid. In a small bowl mash 1/2 cup beans with a fork and return mashed and whole beans to pan with reserved liquid. Chop 1 cup arugula and stir into beans (off heat) with garlic paste, onion, parsley, 2 tablespoons lemon juice, and salt and pepper to taste. Keep bean salad warm, covered, over very low heat while cooking arugula.
  • Prepare grill while beans are cooking.
  • Rinse and pat dry tuna. On a plate combine tuna steaks with remaining tablespoon lemon juice, turning to coat, and sprinkle both sides with fennel seeds, pepper, and salt to taste. Grill fish on a lightly oiled rack set 5 to 6 inches over glowing coals about 3 minutes on each side, or until barely cooked through. (Alternatively, fish may be cooked in a heated well-seasoned ridged grill pan in same manner.)
  • Arrange bean salad and remaining cup arugula on 4 plates and top with fish. Squeeze lemon over the fish.
