SPINACH SALAD WITH WARM BACON DRESSING
My spinach salad with a comforting bacon dressing is a recipe I turn to again and again in winter. It's quick, elegant and so delicious. I can always count on compliments. -Sandy Davis, Prescott, Arizona

- In a skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels. Discard all but 1 tablespoon drippings., Add vinegar, garlic, brown sugar, mustard and seasonings to drippings; heat through, stirring to blend. Transfer to a small bowl; gradually whisk in oil. Stir in half of the bacon., Place spinach, onion and eggs in a large bowl; toss with warm dressing. Sprinkle with remaining bacon; serve immediately.

- Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

- Combine the spinach and basil in a large salad bowl.
- Heat the olive oil in a skillet over medium heat.
- Add the garlic and pine nuts; mix well.
- Sauté until the pine nuts are brown.
- Add the prosciutto; mix well.
- Cook just until heated through, stirring constantly.
- Pour over the spinach mixture, tossing to coat.
- Season with the salt and pepper; sprinkle with the Parmesan cheese.

- Combine spinach and radicchio in large bowl. Bring oil, vinegar, wine and shallot to simmer in large saucepan. Season with salt and pepper. Immediately pour dressing over salad. Cover with foil and let stand 5 minutes. Toss salad to coat. Divide among plates. Sprinkle with nuts and serve with warm toasts.

- Preheat your oven to 400 F. Line a sheet pan with parchment paper. Add the acorn squash, coat with olive oil, and season with salt and pepper. Roast for 20-30 minutes until golden brown and tender. When cool enough to handle, remove the seeds and peel off the outer skin. Chop into 1-inch pieces.
- For the dressing, add the bacon to a non-stick pan. Saute over low heat until golden. Transfer to a paper towel lined plate. Drain off most of the oil leaving about 2-3 tbsp. Add the onion to the pan and sauté until soft. Add the apricot jam, mustard, and vinegar and stir to combine. Taste (don’t burn yourself), and adjust with additional vinegar and/or oil, as needed to make enough dressing for the salad. Set aside until ready to serve.
- Pour the warm dressing over the top (reheat if necessary) and toss gently. Crumble the stilton over the top.
