Since Rhode Island is known as the Ocean State, I think this recipe represents my state well. Shrimp add a new twist to traditional potato salad.

- In a large bowl, toss shrimp with lemon juice; refrigerate. Add potatoes, onions and parsley. In a small bowl, combine the sour cream, salt, pepper, tarragon, mustard, celery seed and garlic if desired; pour over potato mixture and toss. Cover and refrigerate until serving.

A salad made of butter lettuce and shrimp sauteed in butter and lemon. Use your favorite salad dressing or vinaigrette, and vary the amount to your liking.

- In a large saute pan melt butter over medium heat. Add the shrimp and lemon juice, cook until shrimp just turn pink. Remove from heat and drain.
- In a large bowl tear lettuce into bite-size pieces, add the tomatoes, avocado, celery, cucumber carrots and cooked shrimp, toss to combine. Top with your favorite dressing or vinaigrette.

WARM ARUGULA, SHRIMP & POTATO SALAD
Roasting the shrimp in their shells keeps them moist and juicy.

- Heat the oven to 425°F. In a medium bowl, toss the shrimp with 1/2 Tbs. of the oil, and season with salt and pepper. Pour onto one side of a large rimmed baking sheet and arrange in a single layer. In the same bowl, toss the potatoes with another 1/2 Tbs. olive oil, 1/4 tsp. of the minced rosemary, and more salt and pepper. Pour onto the other side of the baking sheet and arrange in a single layer. Roast until the shrimp are cooked through and opaque, 7 to 8 minutes. Remove the shrimp from the oven and set aside to cool. Return the potatoes to the oven and continue to roast until tender and slightly crisp around the edges, about 15 minutes longer. When the shrimp are cool enough to handle, peel them and set aside.
- Meanwhile, chop the garlic, add two good pinches salt, and mince to a coarse paste. In a small bowl, combine the minced garlic, lemon zest and juice, the remaining 1/4 tsp. rosemary, a pinch more salt, and a few grinds of pepper. Whisk in the remaining 3 Tbs. olive oil. Taste and add more lemon juice if needed.
- When the potatoes are done, put them in a medium bowl, along with the shrimp, parsley, and olives. Add half the dressing; toss to coat. In another bowl, toss the arugula with the remaining dressing. Arrange the dressed arugula on dinner plates, top with the shrimp and potatoes, and serve.

- Preheat oven to 350°F
- In a large bowl, combine mayo, egg, soup, pepper, onions, and water chestnuts.
- Gently mix in crab, shrimp, and potatoes.
- Put into a 8 x 8 baking pan.
- Combine bread crumbs and butter and sprinkle over seafood mixture.
- Bake for 30 minutes.

- Rinse off potatoes to clean, and boil in salted water, until fork inserted goes in easily.
- Do not over-cook potatoes, or potato salad will be mushy.
- When potatoes are done drain right away, peel and let cool.
- Put in refrigerator to chill.
- When chilled completely, cut them up into med.
- sized cubes and put in a lg bowl.
- Put back into fridge to keep chilled.
- Meanwhile, cut up celery, green pepper, carrots and olives into finely minced pieces.
- Add to potato mixture.
- Open can of shrimp and drain well.
- Rinse off shrimp in the can, and squeeze dry with can cover before removing from can.
- Flake shrimp well between fingers and add to potato and veggie mixture.
- Mix mayonnaise into salad and add salt and pepper to taste.
- Refrigerate until ready to eat.
- When ready to serve, place potato salad on a few leaves of lettuce.
- Serve with cucumber wedges.
- Variations:.
- Try adding 1/2 of a lg sweet onion, minced finely.
- Try adding 6 hard boiled eggs, mashed finely.
- Serve in a lg cucumber, sliced lengthwise and seeds removed.
- Serve in a hollowed out fresh tomato.
- Serve in a hollowed out green bell pepper.

WARM SHRIMP-AND-POTATO SALAD

- Preheat the oven to 400 degrees F. Toss the potatoes and bell pepper with 1 tablespoon olive oil, 1/2 teaspoon salt, and pepper to taste in a shallow baking dish. Roast 15 minutes. Meanwhile, toss the shrimp with the garlic, oregano, paprika, 1 tablespoon olive oil, 1/4 teaspoon salt, and pepper to taste in a medium bowl.
- Add the shrimp to the baking dish. Roast, stirring once, until the shrimp are just cooked through and the potatoes are golden brown, 12 to 15 more minutes.
- Toss the radicchio and romaine in a serving bowl with the lemon juice, the remaining 3 tablespoons olive oil, and salt and pepper to taste. Add the warm shrimp and vegetables and toss to combine. Top with the feta.
LOBSTER & POTATO SALAD
Steps:
- Place the potatoes in a large pot and cover with water by 1 inch. Add 1 tablespoon salt and bring to a boil. Lower the heat and simmer for 15 to 25 minutes, depending on the size of the potatoes, until just tender. (I use a small bamboo skewer to test them.) Drain in a colander, cover the colander with a clean kitchen towel, and allow the potatoes to steam for 5 to 10 minutes. Cut them in quarters or halves, depending on their size, and place them in a large bowl.
- Meanwhile, whisk together the vinegar, mustard, garlic, egg yolk, 2 teaspoons salt and 1 teaspoon pepper. While whisking, slowly pour in the olive oil, making an emulsion. Stir in the wine and capers. While the potatoes are still very warm, pour half the vinaigrette on the potatoes and toss them gently, allowing them to soak up the vinaigrette. Stir in the scallions, celery, red onion and lobster and add enough vinaigrette to moisten. Reserve any remaining vinaigrette. Add the zest and juice of the lemon, the tarragon, 2 teaspoons salt and 1 teaspoon pepper and toss carefully. Cover with plastic wrap and refrigerate for at least an hour to allow the flavors to blend. Taste for seasonings and add more vinaigrette, if necessary. Serve at room temperature.
