BLUEBERRY-PEACH COBBLER

8 medium fresh peaches (about 2 lb), peeled, each cut into 6 wedges
1 cup fresh blueberries
1 tablespoon cornstarch
1/2 cup granulated sugar
1 tablespoon lemon juice
1/4 teaspoon ground cinnamon
Dash salt
1 cup Original Bisquick™ mix
1/4 teaspoon ground nutmeg
2 tablespoons milk
2 tablespoons butter or margarine, softened
2 tablespoons granulated sugar
2/3 cup chopped walnuts
2 teaspoons milk, if desired
1 tablespoon coarse sugar

Steps:

  • Heat oven to 400°F. In medium bowl, stir together fruit mixture ingredients; let stand 10 minutes to allow sugar to pull juices from peaches. Transfer to ungreased 8-inch square (2-quart) glass baking dish. Bake uncovered about 10 minutes or until fruit is bubbling. Remove from oven; stir. Bake 10 to 12 minutes longer or until bubbly around edges (fruit must be hot in middle so biscuit topping bakes completely).
  • Meanwhile, in medium bowl, stir all biscuit topping ingredients except 2 teaspoons milk and coarse sugar until firm dough forms.
  • Drop dough by 6 spoonfuls onto warm fruit mixture. Brush dough with 2 teaspoons milk. Sprinkle with coarse sugar.
  • Bake 25 to 30 minutes or until biscuits are deep golden brown and bottom of center biscuit is no longer doughy. Cool 10 minutes on cooling rack. Serve warm.

A fabulous cobbler recipe. It is quick to make and delicious every time. If peaches are not in season--it is also wonderful with frozen sliced peaches--just be sure they are thawed through before you put it together and allow more time to cook.

6 cups peeled sliced peaches
1 1/4 cups sugar
1/4 cup all-purpose flour
2 cups all-purpose flour
1 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1 cup milk
3/4 cup unsalted butter, melted
1 tablespoon sugar
1/4 teaspoon freshly grated nutmeg
1/4 teaspoon cinnamon

Steps:

  • Preheat oven to 350°F.
  • Filling: Mix peaches, sugar and flour together and pour into a 15-inch baking dish.
  • Batter: Combine 2 cups flour, 1 cup sugar, baking powder, and salt in food processor.
  • Process to combine.
  • Add the milk and melted butter.
  • Process until smooth.
  • Spoon batter over the peaches, making sure you spread to edge of dish.
  • Sprinkle remaining 1 tablespoon sugar, nutmeg and cinnamon over the top.
  • Bake in center of oven about one hour.
  • Crust should be brown and crisp on the outside and cooked all the way through.
  • Let cool for 10 minutes before serving.
  • Serve with whipped cream or vanilla ice cream.
  • Variation: Blackberry, blueberry or raspberry cobbler--omit cinnamon and nutmeg.

2 tablespoons sugar
2 tablespoons brown sugar
1 tablespoon cornstarch
1/2 cup water
1 tablespoon lemon juice
2 cups sliced peeled fresh peaches
1 cup blueberries
TOPPING:
1 cup all-purpose flour
1/4 cup sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup butter, softened

Steps:

  • In a saucepan, combine first five ingredients. Bring to boil, stirring until thick. Add fruit and pour into a 2-qt. baking dish. For topping, combine flour, sugar, baking powder and salt in a bowl. Stir in milk and butter. Spread over fruit mixture an bake at 375° for 50 minutes or until topping is golden brown and tests done. Serve warm.

1/3 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 teaspoon ground nutmeg
1/4 cup cold butter or margarine, cut into pieces
1/2 cup milk
1 teaspoon decorator sugar crystals, if desired
3/4 cup sugar
2 tablespoons all-purpose flour
1 cup fresh blueberries
1 cup fresh raspberries
3 medium peaches, peeled, sliced (about 3 cups)
2 teaspoons grated lemon peel
1 tablespoon lemon juice

Steps:

  • Heat oven to 400°F. Grease 2-quart glass casserole with butter or cooking spray.
  • In medium bowl, stir together 1 1/4 cups flour, 1/3 cup sugar, the baking powder, salt and nutmeg. Cut in butter, using pastry blender or fork, until mixture looks like coarse crumbs. Stir in milk just until combined; set aside.
  • In 2 1/2-quart saucepan, stir together 3/4 cup sugar and 2 tablespoons flour. Stir in blueberries, raspberries, peaches, lemon peel and lemon juice. Heat to boiling over medium-high heat, stirring constantly. Spoon fruit mixture into baking dish.
  • Immediately drop biscuit dough by 8 spoonfuls onto hot mixture. Sprinkle sugar crystals over dough.
  • Bake 25 to 35 minutes or until biscuits are golden brown. Cool at least 15 minutes before serving.

1/2 cup butter, melted
1 can (15-1/4 ounces) sliced peaches, drained
1-1/4 cups sugar, divided
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup 2% milk
Whipped cream, optional

Steps:

  • Preheat oven to 400°. Pour butter into a shallow 2-qt. baking dish; set aside. Drain peaches, reserving 1/4 cup juice. In a saucepan, bring peaches and reserved 1/4 cup juice just to a boil. Meanwhile, in a bowl, combine 1 cup sugar, flour, baking powder and salt. Stir in milk; mix well. Pour over butter in baking dish. Spoon hot peaches over batter. Sprinkle with remaining 1/4 cup sugar. Bake until bubbly and golden, 20-25 minutes. Serve warm and if desired, with whipped cream.
