HOT SWEET ONION DIP
People have been known to stand in front of the oven at parties waiting for me to take this dip out! I get asked for the recipe every time I make it. So easy and soooo yummy! The distinctive flavor of Swiss cheese is blended with sweet onions.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Lightly grease an 8x8 inch baking dish.
- In a medium bowl, mix together sweet onions, mayonnaise and Swiss cheese.
- Transfer mixture to the baking dish. Bake in the preheated oven 20 to 30 minutes, or until bubbly and lightly browned. Cool before serving.

BAKED PARMESAN ONION DIP
Try the making the dip with sweet onions, it's super delicious. Bake until the crust is well browned. It'll help caramelize everything. You can mix the dip ingredients several days ahead of time, and then bake it off when needed. We've even kept it unbaked in the fridge for a couple weeks and it was still great.

- Preheat the oven to 350°F (175°C).
- In a bowl, mix together the cream cheese, mayonnaise, parmesan, onion, black pepper and garlic powder until everything is thoroughly combined.
- Pour the mixture into a 6-inch (15-cm) baking dish or any oven-safe dish. Bake for 50 minutes to 1 hour, or until everything is melted together and the top crust is brown and almost burnt-looking. The darker brown the crust becomes, the better the flavors are.
- Serve with your favorite crusty bread, crackers, slices of tomatoes, or crunchy vegetables such as radishes, jicama, carrots, and celery.

WARM FRENCH ONION DIP
Creamy Warm French Onion Dip made with caramelized onions, beef consomme, cream cheese and Swiss cheese!

Steps:
- Add oil to a large saute pan and add in onions.
- Over medium-high heat cook onions in a single layer for 30 minutes. Try not to stir the onions too much. You can turn the heat down to medium if they seem like they are burning.
- Add garlic and cook for a minute.
- Add in white wine and deglaze the pan, 1-2 minutes.
- Stir in beef consume and bring to a simmer.
- Add in mayo, cream cheese, Parmesan cheese, Swiss cheese and pepper. Stir to combine making sure cream cheese has fully melted.
- Take off the heat and pour mixture into a cast iron skillet or leave in the same skillet if it is oven safe. Top with Parmesan and Swiss cheese.
- Place under the broiler and cook until cheese is melted and bubbly about 2 minutes.
- Add parsley for garnish and serve immediately alongside the Garlic Cheese Crostini.
- Add garlic, olive oil and salt to a mortar and pestle or a bowl. Crush the garlic in the oil (you can use a muddler if you do not have a mortar and pestle). This breaks up the garlic and infuses the flavor into the oil.
- Stir in dried oregano.
- Spoon the oil onto each slice of bread.
- Top with parmesan cheese.
- Place in the oven under the broiler and bake for about 2 minutes or until the cheese is melted and the bread is crispy. Keep a very close eye on them they burn easily.

- Preheat oven to 400º. Peel and trim ends off 1½ lb. mixed onions. Cut in half lengthwise. Place halves cut side down on cutting board, then thinly slice.
