WARM SALMON AND POTATO SALAD WITH CREAMY DILL DRESSING

Warm Salmon and Potato Salad with Creamy Dill Dressing image

Provided by Sara Lynn Cauchon

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 11

One 12-ounce salmon fillet
Salt and pepper, to taste
4 cups baby potatoes, quartered
1/2 pound green beans, trimmed and halved
1/3 cup plain Greek yogurt
2 tablespoons Dijon mustard
2 tablespoons chopped fresh dill
1 small lemon, zested and juiced
1 garlic clove, grated
4 cups arugula
2 tablespoons capers

Steps:

  • Preheat the oven to 400 degrees F. Place the salmon on a parchment-lined baking sheet and sprinkle with salt and pepper. Bake until the salmon is cooked through, about 15 minutes. Use a fork to flake the salmon and set it aside.
  • At the same time, steam the potatoes in a steamer basket over 2 inches of boiling water until they become fork tender, 13 to 15 minutes. Remove the potatoes and set aside. To the same steamer basket, add the green beans and steam until tender crisp, about 5 minutes. (Check to ensure there is enough water in the bottom pot at all times.)
  • In the meantime, whisk the yogurt, Dijon mustard, dill, lemon zest and juice, garlic and some salt and pepper in a small bowl until well combined. Set it aside.
  • In a large serving dish, arrange the cooked potatoes and green beans on a bed of arugula. Top with the flaked salmon and capers and then pour on the dressing.
  • Serve immediately or store in the refrigerator for 2 to 3 days. (If you're planning on enjoying this the next day, do not add the arugula until just before eating.)

  • To prepare dressing: Whisk lemon zest, lemon juice, vinegar, mustard, honey, salt, and pepper in a small bowl. Whisking constantly, drizzle in oil until the mixture has emulsified. Whisk in dill.
  • To prepare salad: Place potatoes, bay leaf, and garlic in a pot. Add cool water to cover by 1 inch. Bring to a boil, then reduce heat and simmer until the potatoes are tender, 7 to 10 minutes. Using a slotted spoon, transfer the potatoes to a large bowl. Discard the bay leaf and garlic, but retain the cooking water for cooking green beans. When cool enough to handle, cut the potatoes into 1/2-inch pieces. Return to the bowl; toss with 3 Tbsp. of the dressing.
  • Place a bowl of ice water next to the stove. Return the pot of water to a boil; add green beans. Cook until just tender-crisp, about 2 minutes. Using a slotted spoon, transfer the green beans to the bowl of ice water. Discard the cooking water.
  • Combine shallot and oil in a small skillet over medium-low heat. Let sizzle for 30 seconds, then transfer to the bowl with the potatoes. Drain the green beans; pat dry and add to the potatoes. • Add all the ingredients for the lemon dill dressing to a 1 cup mason jar, secure the lid and shake the dressing together. Or you can whisk them together in a bowl. The dressing separates as it sits, so shake or stir it back together just before you toss it with the green beans.
  • Place the trimmed green beans in a large skillet, (12″) along with 1/4 cup water. Place a lid on the skillet and turn the heat on to high until it comes to a boil. Then lower the heat to maintain a simmer, and steam the green beans just until barely tender and bright green, 6-8 minutes for fresh. Be sure to keep an eye on the level of water in the pan, if it looks like it’s running dry, add a few tablespoons more water to finish cooking. If you’re using frozen green beans, start checking sooner as they come already partially cooked.
