GRILLED ESCAROLE CAESAR SALAD



Grilled Escarole Caesar Salad image

Number Of Ingredients 12

1/4 cup Garlic Confit, recipe follows
1/4 cup red wine vinegar
2 tablespoons (about 1/2 ounce) freshly grated Parmigiano-Reggiano
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
3 anchovy fillets
1 large egg yolk
3/4 cup vegetable or canola oil
2 heads escarole, trimmed with root intact and sliced in half lengthwise
Kosher salt and freshly ground black pepper
2 cups peeled garlic cloves (between 40 and 50)
1 1/4 cups extra-virgin olive oil, plus more as needed

Steps:

  • For the Caesar vinaigrette: Combine the Garlic Confit, vinegar, Parmigiano-Reggiano, salt, pepper, anchovies, egg yolk and 2 tablespoons water in a blender, then blend on medium speed until smooth. With the motor running, slowly add the oil in a thin stream until it has been incorporated and the vinaigrette is creamy.
  • Use immediately or transfer to an airtight container and refrigerate. The vinaigrette will keep for up to 3 days.
  • For the grilled escarole: Heat a grill for cooking over medium-high heat.
  • Sprinkle escarole with salt and pepper. Put escarole cut-side down on grill and cook until grill marks form, about 1 minute. Remove from grill and cut into 1 1/2-inch pieces. Transfer to a serving platter and toss with Caesar vinaigrette to taste.
  • Place the garlic in a small saucepan and add enough oil to cover. Set the saucepan over low heat and cook until the garlic is soft and pale golden, 30 to 35 minutes. Let the garlic cool in the oil. Store garlic covered in the oil, adding more oil if necessary.

2 tablespoons olive oil
1 tablespoon unsalted butter
2 anchovy fillets packed in oil, drained
2 large garlic cloves, finely chopped
2 tablespoons drained capers, chopped
8 radishes, trimmed, quartered
1 1/4 pounds large shrimp, peeled, deveined
1 head of escarole, torn into large pieces (about 10 cups)
3 tablespoons finely grated Parmesan
1 tablespoon fresh lemon juice
Kosher salt, freshly ground pepper

Steps:

  • Heat oil and butter in a large skillet over medium heat. Add anchovies and cook, mashing with the back of a spoon, until anchovies dissolve and a paste forms, about 3 minutes. Add garlic and capers; cook, stirring constantly, until garlic is fragrant but not brown, about 1 minute.
  • Increase heat to medium-high. Add radishes and cook, tossing often, until crisp-tender, about 3 minutes. Add shrimp; cook, tossing occasionally, until just cooked through, about 4 minutes.
  • Add half of escarole and toss until beginning to wilt, about 1 minute. Add remaining escarole and toss until wilted, about 1 minute more. Remove from heat.
  • Add Parmesan and lemon juice. Season with salt and pepper; toss to combine.

1/2 head escarole, tip and tail trimmed, sliced lengthwise and thinly sliced crosswise
1 head radicchio, thinly sliced
1/3 cup thinly sliced dates
1/3 cup fresh lemon juice (from 1 large lemon)
1/2 teaspoon Dijon mustard
1/4 cup grated Parmesan, plus several shavings
1/2 cup extra-virgin olive oil
Freshly ground black pepper

Steps:

  • Combine the escarole and radicchio in a large salad bowl. Toss in the dates.
  • In a jar with a tight-fitting lid, combine the lemon juice, mustard, grated Parmesan cheese, olive oil, and black pepper. Shake well to combine. Pour over the salad and toss.
  • Grate more Parmesan on top and serve.

Warm Escarole Salad with Shiitake Mushrooms and Pancetta image

An easy and innovative first-course salad.

5 tablespoons olive oil
4 ounces fresh shiitake mushrooms, stemmed, caps sliced 1/2 inch thick
1 1/4-inch-thick slice pancetta,* chopped
2 tablespoons red wine vinegar
1 tablespoon Worcestershire sauce
1 tablespoon tomato paste
2 teaspoons Dijon mustard
1 tablespoon brandy
1 large head escarole, cut into 1-inch pieces

Steps:

  • Heat 1 tablespoon oil in heavy medium skillet over medium-high heat. Add mushrooms and sauté until tender, about 2 minutes. Sprinkle with salt and pepper. Using slotted spoon, transfer mushrooms to paper towels; reserve mushrooms.
  • Heat 1 tablespoon oil in same skillet over medium-high heat. Add pancetta and sauté until crisp, about 2 minutes. Remove skillet from heat. Using slotted spoon, transfer pancetta to paper towels to drain; reserve pancetta.
  • Carefully whisk vinegar into drippings in same skillet. Bring to simmer over medium heat, scraping up any browned bits. Add Worcestershire sauce, tomato paste, mustard and 3 tablespoons oil, then brandy. Bring to simmer. Place escarole in large bowl; pour warm vinaigrette over. Toss to coat. Mix in reserved mushrooms and pancetta. Season with salt and pepper.
  • *Pancetta, Italian bacon cured in salt, is available at Italian markets and some specialty foods stores.

Charred-but-crisp escarole gets a hint of sweetness from a raisin vinaigrette and a dash of crunch from toasted almonds.

1 head escarole (about 1 pound)
2 tablespoons red wine vinegar
Kosher salt and freshly ground black pepper
1/4 cup plus 1 tablespoon extra-virgin olive oil
1/4 cup golden raisins
1/4 cup toasted chopped almonds

Steps:

  • Preheat the broiler.
  • Quarter the escarole lengthwise through the stem end. Wash the escarole wedges under cold water, being sure to wash away any dirt or grit between the leaves. Drain well.
  • Meanwhile, whisk together the vinegar, 1/4 teaspoon salt and a few grinds of pepper in a large bowl. Slowly drizzle in 1/4 cup of the oil, whisking constantly, until blended. Stir in the raisins.
  • Arrange the escarole wedges, cut-side up, on a baking sheet. Drizzle the wedges with the remaining 1 tablespoon oil and sprinkle with salt and pepper. Broil until the escarole is browned and charred in places on top but still raw underneath, 1 to 2 minutes.
  • Spoon the raisin vinaigrette over the warm escarole wedges; sprinkle with the almonds.

2 medium-sized heads of escarole
100 g taggiasca olives
2 garlic cloves
extra virgin olive oil
salt
black pepper

Steps:

  • Start preparing the recipe for escarole in a pan by cleaning the two heads of salad. Remove any damaged outer leaves, cut the core at the base and wash the leaves thoroughly. Discard any excess water and, if the leaves are too large, trim them further.
  • In a large non-stick pan, heat the two garlic cloves with 4 tablespoons of oil for a couple of minutes. Add the escarole and the Taggiasca olives. Cook over medium heat, with a lid, for about 15-20 minutes, stirring gently from time to time. Just before the end of cooking, add salt and fresh pepper. Serve the escarole hot or warm, as desired.
