1 (10 ounce) package frozen chopped broccoli, thawed and water squeezed out
1 (1 ounce) package ranch dressing mix
1 cup shredded Cheddar cheese, divided

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix sour cream, broccoli, ranch dressing mix, and 3/4 cup Cheddar cheese in a bowl; transfer to an 8x8-inch baking dish. Sprinkle remaining 1/4 cup Cheddar cheese over mixture.
  • Bake in the preheated oven until dip is bubbling and cheese is melted, about 30 minutes.

1 package frozen cut broccoli; thawed & drained (12 - 16 ounce package)
1 cup mayonnaise
1/2 cup Parmesan cheese
1/4 cup red bell pepper (finely diced)
1 tablespoon hot sauce
1 cup shredded Mozzarella cheese (divided)
Crackers

Steps:

  • Preheat oven to 350°F. Grease a 9-inch pie plate. Chop broccoli, so pieces are small (can be done in food processor).
  • In a bowl, combine mayonnaise, broccoli, Parmesan cheese, red bell pepper, hot sauce, and 1/2 cup mozzarella. Spread mixture into pie plate.
  • Bake for 20 minutes or until heated through. Remove from the oven and sprinkle with remaining mozzarella. Return to the oven to bake for about 5 more minutes or until melted. Serve with crackers.

3 ounces cream cheese, cubed
3 tablespoons mayonnaise
1/8 teaspoon garlic salt
Dash lemon-pepper seasoning
1/3 cup chopped celery

2 tablespoons chopped fresh mushrooms
1 tablespoon butter

Steps:

  • In a microwave-safe bowl, microwave broccoli on high for 1 to 1-1/2 minutes or until tender, stirring once. Drain well. In another microwave-safe bowl, combine the cream cheese, mayonnaise, garlic salt and lemon-pepper until smooth. Add broccoli., In a small saucepan, saute the celery, onion and mushrooms in butter until tender. Stir into cream cheese mixture. I found this recipe on the back of a box of Wheat Thin Crackers. I've made it both with the pimentos and I've also subbed out the pimientos and used a pretty red pepper (if they are on sale). The original recipe calls for Miracle Whip Salad Dressing but I've used a low-fat mayonaisse and it tastes just as nice - actually not as sweet. So feel free to adjust to your preference on that. I like to add a bit of garlic to this dip too to give it a bit more zing so I've included that as optional. I love serving this with baked bagel chips or wheat crackers - but use what you prefer! Hope you enjoy.

1 cup Miracle Whip (I've also used a low-fat mayonnaise)
10 ounces frozen chopped broccoli, thawed and well drained
1 (2 ounce) jar diced pimentos, drained (can substitute with red peppers diced fine)
1 teaspoon fresh garlic, minced
1/2 cup parmesan cheese
1 cup lowfat mozzarella cheese, shredded (1/2 cup divided in recipe)

Steps:

  • Mix together dressing, broccoli, pimientos, (garlic if using), parmesean cheese and 1/2 cup mozzarella cheese.
  • Spread into a 1 quart baking dish or a 9-inch pie plate.
  • Bake in a preheated oven set at 350 degrees for 20-25 minutes or until heated through. Sprinkle with remaining 1/2 cup mozzarella cheese and bake an additional 5 minutes or until cheese is melted.
  • Serve with your favorite crackers or bagel chips.

Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Stir until well combined.Transfer the dip to the prepared baking dish. Sprinkle the remaining 1/4 cup Colby cheese evenly on top of dip. Bake for 22-25 minutes, or until bubbly and heated throughout. OPTIONAL: During last 3-4 minutes, switch oven to broil for a more golden brown topped dip. Just make sure you keep an eye on it as it can go from delicious to burnt quickly!
