This Italian salad bursts with flavor, color and texture. Try it when you want the lightness of a salad combined with the heartiness of a main dish.

1 package (10 ounces) washed fresh spinach
1 can (15 oz) Progresso™ cannellini (white kidney) beans, drained, rinsed
1 large red bell pepper, coarsely chopped (1 1/2 cups)
2/3 cup Italian dressing
1/4 teaspoon garlic pepper
1/2 cup shredded mozzarella cheese (2 ounces)

Steps:

  • Remove large stems from spinach; tear spinach into bite-size pieces. Place spinach in large bowl. Add beans; set aside.
  • Heat bell pepper and dressing to boiling in 1-quart saucepan; reduce heat to low. Cook uncovered 2 minutes, stirring occasionally. Stir in garlic pepper.
  • Pour bell pepper mixture over spinach and beans; toss. Sprinkle with cheese. Serve warm.

I came up with this recipe the same way I think a lot of cooks come up with new ideas - by sticking my head in the refrigerator and wondering what I could throw together with what I had. It turned out to be easy and very tasty so I thought I would share.

6 slices bacon
¼ cup red wine vinegar
¼ cup seasoned rice vinegar
1 (2 ounce) can anchovy fillets (such as King Oscar®), diced
½ teaspoon ground white pepper
2 tablespoons extra-virgin olive oil
1 yellow onion, thinly sliced
2 cloves garlic, minced
12 ounces baby spinach (such as Dole®)
4 hard-boiled eggs, peeled and sliced
½ cup green onions, finely chopped
¼ cup grated Asiago cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain bacon slices on paper towels. Crumble bacon.
  • Whisk red wine vinegar, seasoned rice vinegar, anchovies, and white pepper together in a bowl until dressing is evenly mixed.
  • Heat olive oil in a large wok or skillet over medium-high heat; saute onion and garlic until onion is transparent, 5 to 10 minutes. Lower heat to medium. Add spinach, working in batches, to onion mixture, tossing and mixing until spinach wilts, 1 to 2 minutes.
  • Transfer spinach mixture to a serving bowl; top with egg slices and bacon.
  • Pour dressing into the wok; bring to just under a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Pour dressing over spinach mixture; sprinkle with green onions and Asiago cheese.

1 pound waxy potatoes, cut in 1-inch dice
2 tablespoons finely minced red onion, soaked for five minutes in cold water, then drained, rinsed, and drained on paper towels
2 tablespoons sherry vinegar
1 tablespoon freshly squeezed lemon juice
Salt to taste
1 small garlic clove, green shoot removed, minced or pureed
1 teaspoon Dijon mustard
1/3 cup extra virgin olive oil
3 tablespoons plain low-fat yogurt
Freshly ground pepper to taste
2 tablespoons finely chopped fresh herbs, such as parsley, tarragon, chives, chervil or dill
6 ounces green beans, trimmed and broken in half
2 ounces feta cheese, crumbled
1 6-ounce bag baby spinach

Steps:

  • Steam the potatoes above 1 inch boiling water for 10 minutes or until tender. Meanwhile, whisk together the vinegar, lemon juice, salt, garlic, Dijon mustard, olive oil and yogurt.
  • When the potatoes are tender, remove from the heat and toss at once with 1/4 cup of the dressing, the onion, herbs, and salt and pepper to taste.
  • Add the green beans to the steamer pot, and steam for five minutes. Remove from the heat, refresh briefly with cold water, drain well and toss with the potatoes, 2 more tablespoons of the dressing and the feta. In a separate bowl, toss the spinach with the remaining dressing. Top with the potatoes and beans, and serve.

3 tablespoons extra-virgin olive oil
4 slices thick-cut bacon or 4 slices pancetta, chopped
3 shallots, thinly sliced
2 cloves garlic, chopped
3 tablespoons sherry vinegar
2 pounds triple washed spinach, stems removed
Salt and freshly ground black pepper
Freshly grated nutmeg, to taste
4 hard-boiled eggs, quartered lengthwise
Parmigiano-Reggiano, for topping

Steps:

  • Heat the olive oil in large skillet over medium-high heat. Once hot, add bacon to skillet and brown, reserve the crispy bacon bits and add the shallots and garlic to the pan. Cook 3 to 4 minutes then deglaze the pan with vinegar, turn spinach into pan and wilt down a bit but do not fully cook the spinach, just give it a few turns with tongs. Season the greens with salt, pepper and nutmeg. Place spinach on a serving dish and top with quartered eggs, shavings of cheese and reserved bacon bits.

2 (10 ounce) packages baby spinach, rinsed and dried
1 red onion, thinly sliced
1 ½ cups toasted, chopped pecans
8 ounces crumbled blue cheese
1 ½ cups balsamic vinegar
2 teaspoons molasses
1 clove garlic, crushed
½ teaspoon ground black pepper
⅔ cup olive oil

Steps:

  • In a large bowl, arrange spinach and red onion slices and top with toasted pecans and crumbled blue cheese.
  • In a small saucepan, warm the garlic in the olive oil to allow its flavor to diffuse into the oil. Then add molasses, vinegar and pepper. Whisking constantly, bring almost to a boil, remove from heat and cool until just warm. Pour into a shakeable container, shake and pour over salad. Serve immediately.

1 1/2 lbs fresh green beans, cut into 1-inch pieces, cooked tender
4 slices bacon, cooked crisp
1 small onion, chopped fine
1/4 cup vinegar
1 tablespoon sugar, add more to taste
1 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Fry bacon until crisp, remove from pan to drain on paper towel.
  • Sauté onion in bacon drippings for 3 minutes.
  • Add bacon and remaining ingredients and heat through.

5 slices bacon
1½ tablespoons finely chopped shallots
½ cup red wine vinegar
1 to 2 tablespoons honey mustard
salt
freshly ground black pepper
8 cups fresh spinach leaves, stems removed
8 ounces white button mushrooms, thinly sliced (about 2½ cups)
½ red onion, thinly sliced

Steps:

  • For the dressing, in a skillet, cook the bacon over medium heat until crisp. Using a slotted spoon, transfer bacon to a paper towel-lined plate to drain. Pour off all but 2 tablespoons fat from the skillet. Heat the remaining fat over medium-high heat and add the shallots; cook for 2 minutes, stirring occasionally. Whisk in the vinegar, desired amount of mustard, and salt and pepper to taste, scraping the brown bits from the bottom of the skillet. Bring to a simmer; remove skillet from the heat.
  • In a large bowl, toss together the spinach, mushrooms, and onion. Pour the dressing over the salad and toss to combine. Serve warm.
