Categories     main-dish

Time 50m

Yield 6 to 8 as appetizer, 4 as dinn

Number Of Ingredients 20

1 pound (about 12) red-skinned boiling potatoes
3 cups (about 1 pound) diced slab bacon
2 tablespoons minced garlic
1/2 cup chopped shallots
6 tablespoons packed light brown sugar
6 tablespoons balsamic vinegar
1/2 cup extra virgin olive oil
6 tablespoons freshly squeezed orange juice
1/2 head frisee (curly endive), well washed and torn into pieces
4 cups mixed salad greens (mesclun), or a mixture of at least 3 lettuces such as red leaf, Romaine, endive, radicchio, arugula, frisee, watercress or Boston
4 teaspoons chopped chives
2 plum tomatoes, seeded and diced
1/2 English cucumber, peeled, halved lengthwise, sliced into half-moons
2 celery ribs, sliced 1/4 inch thick
6 ounces fresh, mild goat cheese, crumbled
Croutons, recipe follows
16 to 20 baguette slices, 1/4 inch thick
3 tablespoons garlic oil, or olive oil mixed with 1 minced garlic clove
1/4 cup freshly grated Parmesan
Freshly ground black pepper

Steps:

  • Put potatoes in a saucepan and cover with cold water. Cover the pan and bring to a boil over high heat. Uncover and boil until the potatoes are tender, between 12 to 15 minutes.
  • While the potatoes are cooking, make the dressing. In a skillet, saute the bacon over a medium-high heat until most of the fat has been rendered and the bacon is golden and beginning to crisp, about 5 minutes. Turn off the heat and pour off the fat into a glass-measuring cup. Remove the bacon from the pan and let drain on paper towels. In the skillet, with its thin coat of bacon fat, add the garlic and shallots and cook over medium heat, stirring, until softened, about 5 minutes. Add the brown sugar and cook, stirring, until dissolved. Scrape the mixture into a blender or food processor and add the balsamic vinegar, extra-virgin olive oil, and orange juice. Add 1/4 cup of the bacon fat and process, pulsing, until, just until smooth. Season to taste with salt and pepper. Slice the warm potatoes 1/4 inch thick and combine with half of the warm vinaigrette (reheat the vinaigrette in the microwave if necessary) and half of the bacon pieces. Divide in roomy serving bowls. In a large bowl, combine the lettuces, chives, tomato, cucumbers, and celery. Toss with the remaining vinaigrette and divide on top of the potatoes in the serving bowls. Sprinkle the crumbled goat cheese and reserve bacon pieces over the salads, place 3 or 4 croutons on each, and serve.
  • For the croutons, preheat to 350 degrees. Arrange the bread slices on a baking sheet and brush the tops with garlic oil. Bake 10 to 12 minutes, until golden. Remove from the oven and immediately sprinkle with cheese (if using) and pepper. Cover with foil to keep warm.

You may not like one or more of the types of beans listed above - just substitute your favorites. This dish is especially good for taking to potluck suppers.

ROASTED POTATO SALAD WITH BALSAMIC-BACON VINAIGRETTE

Roasted Potato Salad with Balsamic-Bacon Vinaigrette image

I do not like traditional potato salad made with mayo or mustard, so I decided to make my own unique recipe. When I brought this to my husbands company potluck all of his friends were impressed and it was gone before I knew it.

Categories     Side Dish     Sauces and Condiments Recipes     Salad Dressing Recipes     Vinaigrette Dressing Recipes

Time 1h35m

Yield 8

Number Of Ingredients 12

3 pounds baby red potatoes, cut in half
½ cup olive oil
½ cup minced garlic
1 tablespoon seafood seasoning
8 ounces bacon
¼ cup balsamic vinegar
½ cup minced garlic
salt and pepper to taste
½ cup olive oil
1 large red onion, cut into 1/2-inch dice
1 bunch parsley, minced
5 hard boiled eggs, roughly chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Toss halved potatoes with 1/2 cup olive oil, 1/2 cup garlic, and seafood seasoning. Place in a single layer onto baking sheets and bake in preheated oven until tender and golden brown, 30 to 40 minutes, depending on the size of the potatoes. Once cooked, remove from the oven and allow to cool slightly.
  • Meanwhile, place bacon in a large, deep skillet. Cook over medium heat until evenly browned and crispy. Pour off bacon grease and reserve. Allow the bacon slices to cool, then crumble and set aside.
  • Whisk together balsamic vinegar, garlic, salt, and pepper in a large bowl. Pour in the oil in a slow, steady stream while whisking vigorously to make a vinaigrette. Toss the roasted potatoes together with the vinaigrette and reserved bacon grease. Fold in red onion, parsley, and eggs. Allow to stand at room temperature 20 minutes before serving.

BALSAMIC-BACON VINAIGRETTE SAUCE

Balsamic-Bacon Vinaigrette Sauce image

Drizzle this sweet-salty-and-tangy sauce over steamed broccoli, brussels sprouts, broccolini, potatoes or green beans. For steaming times and tips on preparing the vegetables, see Vegetables, Perfectly Steamed & Deliciously Sauced.

Provided by Jennifer Armentrout

Categories     Side dishes

Yield Yields about 6 Tbs, enough for 1 to 1-1/4 lb. steamed vegetables.

Number Of Ingredients 7

2 slices bacon, cut into 1/4-inch dice
1 small shallot, minced
1-1/2 Tbs. balsamic vinegar
1 Tbs. fresh lemon juice
1/4 tsp. Dijon mustard
3 Tbs. extra-virgin olive oil
Kosher salt and freshly ground black pepper

Steps:

  • In a small (1-quart) saucepan over medium heat, cook the bacon, stirring occasionally, until crisp and golden, about 5 minutes. With a slotted spoon, transfer the bacon to a dish lined with paper towels, leaving the bacon fat in the pan. Add the shallot to the bacon fat and cook, stirring occasionally, until softened, 1 to 2 minutes. Add 1 Tbs. of the vinegar and scrape the bottom of the pan with a spoon to dissolve the browned bits stuck to the pan bottom. Off the heat, stir in the remaining 1/2 Tbs. vinegar, the lemon juice, and the mustard. Gradually whisk in the olive oil (don't worry if the sauce doesn't emulsify). Season with 1/4 tsp. salt and 1/8 tsp. pepper, or to taste. Drizzle the sauce over steamed vegetables and sprinkle with the cooked bacon bits.

  • Remove the zucchini from the pan and put them in the salad bowl, squeeze 1 garlic clove directly over the zucchinem and tear a few basil leaves into the salad bowl to allow warm zucchini absorb the flavours.
