MARYLAND HOT CRAB DIP

Steps:
- Preheat oven to 375°F (191°C).
- In a large mixing bowl using a handheld or stand mixer fitted with a paddle attachment, beat the cream cheese on medium-high speed until smooth and creamy, about 1 minute.
- Add the mayonnaise, sour cream, 1 cup cheddar cheese, ground mustard, lemon juice, Old Bay seasoning, worcestershire sauce, and hot sauce (if using). Beat on medium-high speed until combined. Using a spoon or rubber spatula, gently fold in the lump crab meat. If you used hot sauce, taste, then add more hot sauce if desired.
- Transfer to a 9-inch (or slightly larger) baking pan, pie dish, or oven-safe skillet. Sprinkle with remaining 1/4 cup of cheddar cheese.
- Bake for 25 minutes or until hot and bubbly around the edges.
- Serve warm.
- Cover and store leftovers in the refrigerator for up to 5 days. Reheat in the microwave or in a 350°F (177°C) until warmed throughout.
COLOSSAL CRAB ASPARAGUS BISQUE

- Bring stock and bay leaves to a boil in a large pot. Cook asparagus until tender and add to stock pot. Melt butter in a separate saucepan and gently saute onions, celery, and carrots (mirepoix) until tender, then gradually add flour (with a non-reactive utensil such as a wooden spoon), and cook until similar to a roux. Transfer to the pot of stock to thicken soup. Let simmer for 45 minutes. Remove bay leaves from soup. *Blend to a puree with an immersion blender, or in batches in a blender or food processor. Add cream to the soup, and keep warm over low heat.
- For the crab "souffle," mix crab, mayonnaise, thyme, salt and pepper, and squeeze of fresh lemon juice, trying to avoid breaking up the lumps of crabmeat. Place a scoop of the crabmeat in the center of soup bowl and ladle the asparagus soup around. Garnish with a lemon wedge.
- *When blending hot liquids: Remove liquid from the heat and allow to cool for at least 5 minutes. Transfer liquid to a blender or food processor and fill it no more than halfway. If using a blender, release one corner of the lid. This prevents the vacuum effect that creates heat explosions. Place a towel over the top of the machine, pulse a few times then process on high speed until smooth.
HOT CRAB AND ASPARAGUS CANAPES
An easy to make-ahead appetizer for a New Year's Eve get-together. You can use canned, frozen or fresh crab meat.

- Preheat oven to 400°F.
- Line a baking tray with parchment paper.
- In a mixing bowl, beat cream cheese until light.
- Beat in crab, garlic and green onions until just combined.
- Season with salt, lemon juice and Tabasco sauce; combine well.
- Slice baguette diagonally into 1/4 inch thick slices.
- Spread mixture on the baquette slices and set on the baking tray.
- Top each canape with 2 asparagus halves, cut side down.
- Sprinkle canapes with grated Parmesan cheese.
- Bake in preheated 400 F oven for 10 minutes or until heated through.
- Arrange on a platter and serve.
- NOTE: To blanch the asparagus, cook in boiling water for 1 - 2 minutes.
- Drain and immediately chill in ice water; drain.
- These canapes can be made ahead of time and stored in the refrigerator, loosely wrapped in plastic wrap.
- Because you will be baking from cold, allow 3 - 4 minutes extra cooking time.

AWESOME CHEESY HOT CRAB DIP
I got this recipe from a Southern Living Magazine a couple of years ago. It was an instant favorite, and I get so many requests for the recipe that I figured I would make it easy on myself and just post it. I usually use more Old Bay, Tabasco, and scallions than it says, cause I like a little extra kick. It really is AWESOME, especially with crusty french bread.

- Blend cream cheese and mayo until creamy.
- Add lemon juice, Tabasco, and scallions; mix.
- Add old bay, salt, pepper and crab meat; mix.
- Put in baking dish and top with parmesan cheese.
- Bake at 350 degrees for 30 to 40 minutes, until cheese starts to brown.
- Can be refrigerated up to 24 hours before cooking.

- Preheat oven to 350°.
- In large dutch oven or saucepot, cook egg noodles according to package directions; drain well. Return drained noodles to saucepot; set aside.
- In medium skillet, sauté onion, garlic and celery in vegetable oil for 3-4 minutes or until onions are soft; set aside to cool slightly.
- Add the cooked onion mixture, crabmeat, drained asparagus, half of the parmesan cheese, parsley, and red pepper flakes to the noodle. Mix well; set aside.
- Whisk together the cream, horseradish cream, salt and pepper. Pour over the crabmeat mixture, and blend well with wooden spoon or large ladle.
- Pour crab and noodle mixture into a 9x13 baking dish, and sprinkle a light layer of the remaining parmesan cheese on top.
- Bake at 350° for 30 minutes. Serve hot.

- Preheat oven to 350.
- In a skillet or saucepan, melt butter. Saute onions and peppers over medium heat until tender; stir in the crushed crackers; remove from heat.
- In a mixing bowl, beat together cream cheese, sour cream, worcestershire, hot sauce, and dry seasonings.
