I adapted this from a 50-year-old peach crisp recipe. Although it works well with peaches, it works even better with fresh, crisp cooking apples.

- Preheat oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking dish.
- Arrange apple slices evenly in prepared baking dish. Sift flour, sugar, cinnamon, and salt in a bowl. Cut in butter using a pastry blender or 2 knives until mixture resembles coarse cornmeal; sprinkle over apples.
- Bake in preheated oven until topping is golden, 40 to 45 minutes. Cool slightly before serving.

- Preheat oven to 350 degrees F (175 degree C).
- Place the sliced apples in a 9x13 inch pan. Mix the white sugar, 1 tablespoon flour and ground cinnamon together, and sprinkle over apples. Pour water evenly over all.
- Combine the oats, 1 cup flour, brown sugar, baking powder, baking soda and melted butter together. Crumble evenly over the apple mixture.
- Bake at 350 degrees F (175 degrees C) for about 45 minutes.

- Preheat the oven to 350 degrees F. Butter a 9 by 14 by 2-inch oval baking dish.
- Peel, core, and cut the apples into large wedges. Combine the apples with the zests, juices, sugar, and spices. Pour into the dish.
- To make the topping, combine the flour, sugars, salt, oatmeal, and cold butter in the bowl of an electric mixer fitted with the paddle attachment. Mix on low speed until the mixture is crumbly and the butter is the size of peas. Scatter evenly over the apples.
- Place the crisp on a sheet pan and bake for 1 hour until the top is brown and the apples are bubbly. Serve warm.

- Position slicing blade in food processor bowl, and top with cover.
- Arrange apple quarters in food chute with cut side against the blade; slice, applying firm pressure with food pusher.
- Place sliced apples in a lightly greased 13x9x2" baking dish.
- Combine 1/2 cup sugar, nutmeg, and cinnamon.
- Sprinkle over the sliced apples.
- Position plastic mixing blade in food processor bowl; place flour, brown sugar, and butter in the bowl.

- Sprinkle mixture over apples.
- Bake, uncovered for 1 hour at 300°F.

- Preheat oven to 375 degrees. In a large bowl, mix together flour, brown sugar, salt, and 2 tablespoons granulated sugar. Cut butter into flour, using a pastry blender or two knives, until mixture is the texture of coarse meal. Add oats, and use your hands to toss and squeeze mixture until large, moist clumps form. Transfer to freezer to chill while you prepare apples.
- In another large bowl, toss apples with lemon juice, cinnamon, and remaining 1/2 cup granulated sugar. Transfer to a shallow 2-quart baking dish, and sprinkle with topping mixture. Place baking dish on a rimmed baking sheet, and bake until golden and bubbling, 55 to 65 minutes. Let cool 10 minutes before serving.

With Fall right around the corner,I thought I would share with you my favorite recipe for apple crisp. I know that their are several posted but this is just to good not to list. It mixes together very easily, keeps well, and the top stays crisp. It also can be doubled,by baking in a 9 by 13 pan. Its a favorite among our family and friends, and I have had several requests for this recipe. It is so delicious served with icecream, or just on its own. The crunchy topping adds to the sweetness and compliments the apples. Its a wonderful Fall dessert.

- Mound apples in a buttered 9" pie plate, and sprinkle with the orange juice.
- In a large bowl, combine sugar, flour, spices, and oatmeal.
- Cut in butter until well mixed and crumbly.

- Preheat oven to 350 degrees F.
- Grease a 9x13" baking pan using nonstick cooking spray.
- Sprinkle apples with a light dusting of cinnamon.
- In a bowl, combine the oats, flour, brown sugar, cinnamon, nutmeg, and cloves. Once mixed together, cut in the cold butter. Press half of the oat mixture into your greased pan.
- Top with half of the sliced apples and half of the jar of caramel.
- Sprinkle 1 cup of the remaining oats on top.
- Repeat layers, layering the remaining apples, remaining caramel sauce, and remaining oats. Pour 1/2 cup of the apple juice all over the crisp.
- Place pan in the oven and bake uncovered for about 30 minutes.
- Pull the pan out, pour the remaining apple juice over the top, and stick back in the oven for 15-20 minutes (you will want to make sure that your apples are done- the thinner you cut them, they quicker they will bake).
- Remove from the oven and serve warm.

- Make the topping: Rub together the flour, both sugars, the spice and salt in a medium bowl. Toss in the butter and nuts to coat, then pinch the butter into the dry ingredients until no floury bits remain. Add the oats, and gently rake and squeeze them through the buttery mixture to form peanut-size crumbles. Freeze while you prepare the apples. The crumb mixture can be frozen in an airtight container for up to 1 month.
- Prepare the apples: Heat oven to 375 degrees. Use 1 tablespoon sugar for all sweet apples; 2 to 3 tablespoons for sweet-tart apples or a mix; and 4 tablespoons for all tart apples. Mix the sugar with the flour, spice and salt in a 10-inch cast-iron or other heavy ovenproof skillet.
- If you'd like, peel the apples. Cut into 1/2-inch chunks, discarding the seeds and cores. Add to the skillet and drizzle with 1 tablespoon lemon juice for tart apples and 2 tablespoons for sweet-tart and sweet ones. Mix until evenly coated, then spread in an even layer. Crumble the frozen crisp mixture on top. (There will be gaps.)
- Bake until the topping is golden brown, and the apples are tender and bubbling, 45 to 50 minutes. Cool for at least 15 minutes on a rack before serving hot, warm or at room temperature.
