Wickedly easy, these delicious apricot-and-brie-filled appetizers fold up fast with refrigerated phyllo dough.

Steps:
- Heat oven to 350°F. Unroll phyllo sheets; cover with plastic wrap or towel. Place 1 phyllo sheet on work surface; spray with cooking spray. Layer with 2 more phyllo sheets, spraying each with cooking spray. With sharp knife, cut through all layers of phyllo to make 12 squares.
- On each square, place 1 piece cheese, 1 teaspoon apple butter and 1/2 teaspoon pecans. Repeat with remaining 3 phyllo sheets and remaining ingredients. Bring corners together to the middle and twist.
- Bake 17 to 18 minutes or until golden brown. Tie chive around each bundle. Serve warm.

- Place almonds and apricots in a food processor; cover and process until finely chopped. In a small bowl, combine 1 tablespoon butter, honey, lemon zest and extract; add almond mixture and stir until blended., Lightly brush one sheet of phyllo with remaining butter; place another sheet of phyllo on top and brush with butter. (Keep remaining phyllo covered with plastic wrap and a damp towel to prevent it from drying out.) Cut the two layered sheets into three 14x3-in. strips., Place 1-1/2 teaspoons filling in lower corner of each strip. Fold dough over filling, forming a triangle. Fold triangle up, then fold triangle over, forming another triangle. Continue folding, like a flag, until you come to the end of the strip. Brush end of dough with butter and press onto triangle to seal. Turn triangle and brush top with melted butter. Repeat., Place triangles on a greased baking sheet. Bake at 375° for 10-12 minutes or until golden brown. Cool on a wire rack. Sprinkle with confectioners' sugar.

- Cut apples in slices, then cut slices in half widthwise.
- In a skillet, melt butter over high heat. Add apples and cook for about 2 minutes, browning apples on each side. Reduce to low heat, add honey and cinnamon. Stir well to cover apples.
- Cook for 3-5 minutes until the apples are caramelized and tender. Set aside in a bowl.
- Fill each phyllo cups with 1 tablespoon warm applesauce. Top with caramelized apples and serve immediately (or the applesauce will make the bottoms soggy).

- Preheat oven to 375 farenhiet. Line a baking sheet with parchment paper or foil. Combine brown sugar, dried cherries, walnuts and cinnamon in a small bowl. Add apples and stir to evenly coat apples with sugar. Work with one sheet of phyllo at a time and keep remaining sheets covered. Fold phyllo cross-wise then lengthwise into quarters. Scoop one fourth of apple mixture ontu center of folded phyllo. Bring corners and sides of phyllo up into a bundle and pinch tightly at center to hold closed. Place bundle on prepared pan. Immediately brush phyllo with one teaspoon of the butter and sprinkle with 1/2 teaspoon cinnamon sugar. Repeat with remaining apple mixture and three sheets of phyllo. Bake 15 minutes or until phyllo is browned and apple juices begin to sizzle.
PHYLLO-WRAPPED BRIE WITH APRICOT AND ROSEMARY CHUTNEY

- To Make Chutney:
- Combine all ingredients except almonds in heavy large saucepan. Bring to boil over medium-high heat, stirring until sugar dissolves. Reduce heat to medium-low; simmer until most liquid has evaporated and chutney is thick, stirring occasionally, about 25 minutes. Mix in almonds. Transfer chutney to bowl.
- Chill until cold, about 3 hours. (Can be made 1 week ahead. Cover, keep chilled.)
- Assembly of cheese and phyllo:
- Brush heavy large baking sheet with butter; set aside. Unroll pastry. Cover with plastic wrap and damp kitchen towel. Transfer 2 stacked phyllo sheets to work surface, arranging 1 short side parallel to edge of work surface. Arrange 2 more stacked phyllo sheets on work surface, overlapping long side of first sheets by about 5 to 7 inches and forming rectangle about 18 by 17 inches. Brush pastry with butter; sprinkle 1 1/2 tablespoons rosemary over. Place 2 more stacked sheets atop first set of 2 sheets, then 2 more stacked sheets atop second set of 2 sheets. Brush with butter and sprinkle with 1 1/2 tablespoons rosemary. Repeat layering 1 more time with phyllo, butter and 1 1/2 tablespoons rosemary. (You will use a total of 12 sheets.)
- Using sharp knife or scissors, trim phyllo corners, forming approximately 17-inch oval. place Brie in center of phyllo. Spread 1 1/2 cups chutney evenly over cheese. Slide hand under 1 rounded corner of phyllo. Lift phyllo and fold onto top of cheese. Brush folded pastry with butter. Continue to lift phyllo in sections and to fold snugly over top of cheese, brushing with butter and pressing each section to adhere until cheese is wrapped (the top center 2 to 3 inches of cheese will not be covered). Use hand and metal spatula to transfer wrapped cheese to prepared baking sheet.
- Place 1 phyllo sheet on work surface. Brush with butter. Starting at 1 long side, fold 1 inch of pastry over. Continue folding pastry loosely over itself, forming 1-inch-wide strip of pastry over. Continue folding pastry loosely over itself, forming 1-inch-wide strip of pastry. Roll up strip into coil. Gather bottom edge of coil together, pinching to force top slightly open and forming rose. Place rose atop uncovered center of cheese. Brush with butter. Repeat with 2 more sheets of phyllo, forming 2 more roses. Place atop cheese, covering opening completely. Chill 3 hours. (Can be made 1 day ahead. Cover with plastic; keep chilled.)
- Position rack in center of oven and preheat to 400°F. Bake cheese until pastry is deep golden brown, covering roses loosely with foil if browning too quickly, about 25 minutes. (If cheese leaks from pastry during baking, press piece of foil over tear in pastry; continue baking.)
- Cool cheese on sheet 45 minutes.
- Presentation:
- Using metal spatula, transfer warm cheese to large platter. Arrange herbs, dried fruit, baguette slices and apple slices around cheese. Cut cheese into wedges.
WARM APPLE AND APRICOT PHYLLO PURSES
Created for RSC #6. Don't let phyllo dough scare you. This is a simple recipe, but with a very elegant presentation. If you make it ahead of time just rewarm it in the oven to warm the fruit and re-melt the chocolate. Prep time includes soaking time for the fruit in the wine.

- Soak the apricots and the raisins in the 1 cup of white wine for 2 hours
- Drain, reserving 1/4 cup of the wine
- Preheat the oven to 320 degrees F
- In a large skillet, melt the butter over a medium flame
- Add the 1/4 cup of white wine
- Add the apples and the drained apricots and raisins
- Saute for 3 minutes
- Add the juice of 1/2 an orange and 1/2 of the lemon into the skillet and continue sauteeing
- Add the brown sugar, mix well with the fruit
- Sprinkle with cinnamon and remove from the flame
- In a small bowl, combine the cornstarch with the juice of the remaining 1 1/2 oranges
- Stir vigorously until smooth
- Put the pan of fruit back on the flame
- Slowly add the cornstarch mix to the pan, stirring continuously
- The mixture should start to thicken and caramelize
- You want it to be sticky, not runny
- Remove from the heat
- Unwrap the phyllo dough and lay out the sheets
- Cut the layered stack lengthwise and widthwise to make 4 rectangular quarter-stacks of 12 sheets each stack
- Take one rectangular sheet, brush around the edges with the melted butter
- Lay the next sheet on top, but at an angle
- Continue doing this 4 more times for a pile of 6 sheets, each sheet at an angle to the one below it
- Place a small mound of fruit in the middle
- Top the fruit with a square of chocolate
- Lift one edge toward the middle, gathering and pleating the dough as you go around the pile, pulling the edges to the middle to form a purse
- Make 8 purses this way (8 piles of 6 sheets each)
- Brush and drizzle each purse with melted butter
- Place the purses on a parchment line cookie sheet
- Bake 10 minutes
- Raise the heat to 350 degrees F, and bake another 15 minutes until the purses are golden
- Serve warm
- If you make the sheets in advance, rewarm for a few minutes in the oven to warm the fruit and melt the chocolate
