Walt Disney's home and heart were in the South-west as evidenced by one of his favorite recipes. *NOTE:* For a very spicy chili, add a pinch of chili seeds, coriander seeds, cumin seeds, fennel seeds, cinnamon, cloves, ginger, turmeric, and 1 small yellow Mexican chili pepper.

Number Of Ingredients 12

2 lbs dried chili beans (pink or red)
2 medium onions, sliced (about 1 1/2 cups)
2 -3 teaspoons salt
1/2 cup cooking oil
2 garlic cloves, crushed
2 lbs coarse ground beef
1 (28 ounce) can whole tomatoes
1 cup chopped celery
1 teaspoon chili powder (depending upon taste)
1 teaspoon paprika
1 teaspoon dry mustard
salt

Steps:

  • Soak beans overnight in cold water.
  • Drain off water; put beans, onions, and salt into a large kettle; add water to come 2-inches over beans. Simmer about 4 hours, or until tender; add hot water if necessary, to maintain liquid level.
  • Meanwhile, prepare sauce. Heat oil in a large deep skillet or Dutch oven; add garlic and ground beef; cook slowly until meat is lightly browned. Add remaining ingredients; simmer 1 hour.
  • When beans are tender, add sauce to them and simmer 30 minutes. 3 to 3 1/2 quarts chili.

2 lbs dried kidney beans
salt, to taste
1 little yellow mexican chili pepper, minced
1/2 teaspoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1/2 teaspoon ground fennel
5 cloves
1/2 teaspoon cinnamon
1/2 teaspoon ginger powder

Steps:

  • In a large dutch ovn, soak beans overnight in cold water.
  • Drain, add water to cover (2 inches over beans), and simmer with onions until tender (about 4 hours).
  • Meanwhile, prepare sauce by browning meat and minced garlic in oil. Add remaining ingredients, and simmer for 1 hour.
  • When beans are tender, add sauce to beans and simmer for 1/2 hour.
