CHERRY WALNUT BARS

Bars with a shortbread-like base and topped with frosting and coconut.

2 ¼ cups all-purpose flour
½ cup white sugar
1 cup butter, softened
2 eggs
1 cup packed brown sugar
½ teaspoon salt
½ teaspoon baking powder
1 teaspoon vanilla extract
½ cup chopped walnuts
½ cup flaked coconut
1 (4 ounce) jar maraschino cherries
1 teaspoon butter
1 cup confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (180 degrees C).
  • Mix together flour, white sugar and butter or margarine. Mix until crumbly. Press into a 9 x 13 inch pan. Bake for 20 minutes or until lightly browned.
  • Beat eggs, sugar, salt, baking powder, and vanilla. Drain and chop cherries, reserving liquid. Stir chopped cherries, nuts, and coconut into egg mixture. Pour on top of crust.
  • Bake 25 min. Cool.
  • Combine 1 teaspoon butter and 1 cup confectioner's sugar with enough liquid from cherries until spreadable. Frost bars. Sprinkle with coconut when icing is set.

1 cup soften butter
2 cups unsifted flour
1/4 cup sugar
1/4 teaspoon salt
2 cups chocolate chips, divided
14 ounces sweetened condensed milk
1 teaspoon vanilla
1 cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees.
  • Beat butter until creamy (hand or stand mixer).
  • Mix in flour, sugar and salt until crumbly.
  • With floured fingers, press 2 cups of the crumb mixture in bottom of a greased and floured 9x13 inch pan.
  • Bake 10-12 minutes.
  • Reserve remaining mixture.
  • Melt 1 ½ cups chocolate chips and condensed sweetened milk over medium heat.
  • Stir in vanilla.
  • Spread mixture over hot crust.
  • Stir walnuts and remaining ½ cup chocolate chips into reserved crumb mixture.
  • Sprinkle crumb mixture over chocolate filling.
  • Bake for 25-30 minutes or until center is set.
  • Cool and cut into bars.
  • Makes 24-36 bars depending on desired size.
  • Store at room temperature.

1 cup butter or 1 cup margarine, softened
2 cups all-purpose flour
1/2 cup sugar
2 cups chocolate chips
1 (14 ounce) can sweetened condensed milk (regular, low-fat or fat-free)
1 cup walnuts, chopped
1/4 teaspoon salt
1 teaspoon vanilla

Steps:

  • Beat butter in a large bowl until creamy. Beat flour, sugar, and salt until crumbly. With floured fingers, press 2 cups crumb mixture onto bottom of greased 13x9-inch pan, reserving remaining mixture.
  • Bake in preheated 350F oven for 10-12 minutes or until edges are golden brown.
  • Warm 1 1/2 cups morsels and sweetened condensed milk in small, heavy saucepan over low heat, stirring until smooth. Stir in vanilla and spread over hot crust.
  • Stir walnuts and remaining morsels (1/2 cup) into reserved crumb mixture; sprinkle over chocolate filling.
  • Bake at 350F for 25-30 minutes or until center is set. Cool in pan on wire rack. Cut into squares and enjoy!

I recently adopted this recipe from the Recipezaar account and just made them last night. They are amazing! Here's what the original poster said about these bars: "These aren't difficult to make, but they look fancy because they have three distinct layers. A shortbread crust is topped by a chocolate layer, which is then topped with a thin walnut layer. The bars freeze well, and they'll keep for several days at room temperature if stored airtight. I've even mailed these successfully, wrapping them in pairs with the bottoms together and packaging them in a sturdy, well-padded carton before placing them in a similarly sturdy, well-padded box. The most important thing to remember about these bars is that the chocolate layer needs some time to set up, even after the bars have cooled to room temperature. I usually make the bars the night before I'm going to cut and serve them, but chilling the bars after they've cooled for about 20 minutes should have the same effect."

2/3 cup unsalted butter, softened
1/3 cup granulated sugar
1 teaspoon vanilla
1 1/3 cups all-purpose flour, sifted
12 ounces semi-sweet chocolate chips or to taste bittersweet chocolate chips, good-quality (2 cups)
3 large eggs
1 cup granulated sugar
1 tablespoon vanilla
1/2 cup unsalted butter, melted and cooled slightly (1 stick)
1 1/2 cups walnuts, chopped

Steps:

  • Line a 13 by 9 inch pan (at least 1-1/2 inches deep) with heavy-duty aluminum foil, shiny side up. Set aside.
  • Adjust rack to center of oven; preheat oven to 350 degrees F.
  • For Crust: In small bowl, combine softened butter, sugar, and vanilla. By hand, cream until well-mixed and fluffy.
  • Add sifted flour and stir to combine.
  • Place crust mixture by small spoonfuls all over bottom of lined pan. Keeping your hands lightly floured, press crust mixture into an even layer with fingertips and/or knuckles (this mixture is a bit sticky, so re-flour your hands lightly as necessary).
  • Place in preheated oven and bake for 10 minutes.
  • While crust bakes, make sure chocolate chips are at hand.
  • Start Walnut Layer by combining eggs, sugar, and vanilla in medium bowl. By hand, beat until well-mixed. Set aside.
  • When Crust has baked for 10 minutes, remove from oven to cooling rack.
  • Immediately sprinkle with chocolate chips as evenly as possible. Return to oven for 3 minutes to melt chocolate; remove to cooling rack.
  • With back of spoon or offset spatula, spread chocolate evenly over crust. Allow to stand for about 3 minutes.
  • During this standing period, add slightly cooled melted butter to egg mixture and beat in.
  • Stir in walnuts until evenly distributed.
  • After standing period, place walnut mixture by spoonfuls all over melted chocolate, distributing walnuts as evenly as possible.
  • Return to oven. Bake 20 to 25 minutes.
  • When done, top of walnut layer will be a light golden brown; edges will be darker. Remove to cooling rack.
  • Cool completely before storing airtight.
  • Before cutting, see Notes at beginning of recipe. To cut, use a large, sharp, straight- edged knife. Trim about 1/4 inch from each edge before cutting into bars.
  • Store bars airtight at room temperature for up to several days, or freezer for longer storage.

1 pinch salt

1/4 cup untoasted walnut pieces, ground coarse
3/4 cup sugar
2 large eggs
1 tablespoon freshly grated lemon zest
1/3 cup fresh lemon juice
1 teaspoon all-purpose flour
1/4 teaspoon baking soda
3 tablespoons coarsely chopped toasted walnuts
icing sugar
walnut halves

Steps:

  • For crust: Position rack in center of oven and preheat to 350°F.
  • Mix first 4 ingredients in a bowl, add butter and walnuts and cut in using fingertips until mixture forms coarse crumbs.
  • Firmly press crumbs on bottom of 9-inch square baking pan.
  • Bake crust until golden-brown, about 20 minutes.
  • Cool while preparing filling.
  • Maintain oven temperature.
  • For filling: Whisk ¾ cup sugar, eggs and peel in medium bowl until light and fluffy.
  • Whisk in lemon juice, flour and soda.
  • Pour over crust.
  • Bake until just set and edges are lightly-browned, about 12 minutes.
  • Sprinkle chopped walnuts over.
  • Cut into squares, sift icing sugar over, and top each square with a walnut half.

1/4 cup heavy whipping cream

Steps:

  • Preheat oven to 350 degrees.
  • Beat butter in large bowl until creamy. Beat in flour, sugar, and salt until crumbly.
  • Using a spatula or other flat surface, press 2 cups of the crumb mixture into the bottom of a greased 13x9 inch pan. (Reserve remaining mixture.).
  • Bake for 10 to 12 minutes or until edges are golden brown.
  • In a small pot, warm 1 1/2 cups of the chocolate chips with the sweetened condensed milk over a low heat, stirring until smooth. Stir in vanilla.

Steps:

  • In a large bowl, cream butter, sugar and vanilla. At low speed, bet in eggs, one at a time, alternately with crumbs. With rubber spatula, fold in coconut and nuts.
