This is a recipe I learned at a vegetarian cooking class. It was presented to us as what a person who is on a Raw diet would eat. It's very good and not what I had expected. Recipe courtesy of the instructor Rob McLean. Serving size is dependant on how much filling you use.

2 cups walnuts
soy sauce, to taste
ground cumin, to taste
2 tomatoes, chopped
2 tablespoons cilantro, chopped
1 green onion, chopped
1 garlic clove, finely minced
1 lemon, juice of
pepper
10 -12 leaves collard greens, cleaned and trimmed of large stalks

Steps:

  • In food processor, place walnuts and blend until finely chopped, but not into powder.
  • Add in the seasonings to your taste.
  • In a bowl, combine all other ingredients except greens.
  • Place a collard leaf on a surface and crack the ribs remaining to flatten.
  • Place an amount of the walnut mixture on top along with desired amount of tomato mixture.
  • Roll up and enjoy.

I found this at www.walnuts.org whilst searching for new and interesting uses for walnuts. I can't wait to give it a try!! They also suggest that this mixture makes a great taco salad.

1 (14 ounce) can diced tomatoes, undrained (or 1-1/2 cups chopped fresh tomatoes)
2 cups zucchini, diced
2 tablespoons taco seasoning mix (half of a 1.35-oz. packet )
2 tablespoons water
1 (14 1/2 ounce) can black beans, rinsed and drained
3/4 cup frozen corn kernels
3/4 cup walnuts, chopped
6 taco shells (or 6 flour or corn tortillas)

Steps:

  • Heat tomatoes and zucchini in a wide skillet. Bring to a simmer and cook uncovered 3 minutes.
  • Stir in taco seasoning, 2 tablespoons water, black beans and corn.
  • Cover and simmer 5 minutes.
  • Stir in walnuts. Let stand 1-2 minutes for sauce to thicken.
  • Serve in taco shells or soft tortillas with choice of condiments like lettuce, cheese, sour cream, or avocado slices.

  • Roughly chop the mushrooms. Place them in a large food processor, then add the walnuts and tamari, ketchup, cumin, spices, and salt. Pulse gently multiple times until everything is evenly chopped, being careful not to over process (or it will be too mushy). Cook, stirring often, until the onions are translucent and the garlic is fragrant, about 3-4 minutes. Add 2-3 more tablespoons of water as needed to prevent burning.   • Add the walnuts and mushrooms to a food processor and pulse until they have broken down into a “meat crumble”-like texture. Add them to the pan along with the cumin, chili powder, tomato paste, soy sauce, oregano, liquid smoke, and 1/4 cup of water. Mix everything together until well combined. Cook the mixture for 8 minutes, or until it beings to brown and the mushrooms soften. If you would like it more moist, add a few additional tablespoons of water as desired.
  • Remove from heat and season with salt and pepper as desired. Mix through the cilantro plus lime juice to taste.

  • Add all of the taco 'meat' ingredients to a food processor. Blitz for a few seconds at a time, scraping the sides down regularly, until you get a coarse paste (it's ok if there are still a few larger pieces!).
  • Transfer the bean mixture to a frying pan, and place over a medium heat. Stirring once every couple of minutes, allow the mixture to cook for around 10 minutes, becoming slightly browned on the bottom before stirring.

  • Heat a large pan with the olive oil. Add in your chopped onions and cook on a medium/low flame for 5 minutes, until they become translucent.

  • In a small bowl, add in the walnuts along with enough lukewarm water to fully submerge the nuts. In a separate bowl, add in the lentils also with enough lukewarm water to cover them. Soak both the walnuts and lentils for about 30 minutes.
  • Once the walnuts have finished soaking, drain them and transfer them to a cutting board (or a food processor). We just let the lentils continue to sit in the water during this time.
