- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Combine applesauce, white sugar, brown sugar, eggs, and vanilla extract together in a bowl. Whisk flour, baking soda, salt, and cinnamon together in a separate bowl. Add flour mixture to the egg mixture, alternating with buttermilk just until batter is moistened. Fold coconut and walnuts into batter; pour into the prepared baking dish.
- Bake in the preheated oven until a toothpick inserted near the center comes out clean, 45 to 55 minutes. Cool on a wire rack. Dust coffeecake with confectioners' sugar.

- Preheat oven to 325 degrees F (165 degrees C). Butter the inside of an 8-inch glass baking pan.
- Mix flour, brown sugar, oil, white sugar, 2 teaspoons cinnamon, salt, and ginger together in a large bowl. Transfer 1/2 cup of the mixture into a second bowl for the crumble topping; stir in remaining 2 teaspoons cinnamon.
- Whisk baking powder and baking soda into the flour mixture.
- Beat buttermilk and egg together in a measuring cup to combine. Pour into the large bowl of flour mixture; add apples. Stir until just blended and no pockets of flour remain. Pour mixture into the prepared pan; cover with the crumble topping.

- Preheat oven to 350°F Grease and flour lightly THREE (8-by-1 1/2-inch) round layer cake pans.
- Chop raisins and 1 cup walnuts fine; place in a medium bowl.
- Add baking soda; then stir in boiling water.
- Let mixture cool 1/2 hour.
- Sift flour with cinnamon and salt.
- In large bowl, with electric mixer at medium speed, beat 3/4 cup butter until creamy.
- Add sugar, a little at a time, beating until light and fluffy.
- Stop beater once or twice; scrape down side of bowl with rubber spatula.
- Add eggs and egg yolks, one at a time.
- Beat after each addition; scrape side of bowl with rubber spatula.
- Beat until light and fluffy.
- Add lemon juice and 1 1/2 teaspoons vanilla.
- With wooden spoon, beat in flour mixture, in fourths, alternately with nut mixture, in thirds; begin and end with flour mixture.
- Pour batter into prepared pans.
- Place in oven, leaving space between pans.
- Bake 25 to 30 minutes, or until top springs back when lightly pressed with fingertip and cake pulls away from edge.
- Cool on wire rack 5 minutes.
- With small spatula, loosen edge.
- Turn out on wire rack; turn top up; let cool completelyabout 1 hour.
- MAKE FROSTING: In large bowl, with electric mixer at medium speed, beat cheese with butter and vanilla until creamy.
- Add the confectioners; sugar; beat until light and fluffy.
- Using 1 1/2 cups frosting, put layers together.
- Use rest of frosting to cover top and side of cake.
- With metal spatula, make decorative swirls in frosting; coarsely chop remaining walnuts; sprinkle around top.

- Preheat oven to 350°. Cream butter, shortening and granulated sugar. Add eggs, one at a time, beating well after each addition. - Preheat oven to 350°F. Coat a 12-cup nonstick Bundt pan with cooking spray.
- Beat cream cheese, 1/4 cup granulated sugar, 1 egg, 1/2 teaspoon cardamom, lemon juice and vanilla in a small bowl until smooth.
- Whisk flours, cinnamon, baking soda, baking powder, salt and the remaining 1 1/2 teaspoons cardamom in a large bowl. - Heat oven to 350 degrees F.
- Coat an 8-inch baking pan with nonstick cooking spray.
- Topping: In a medium bowl stir together flour, sugars, pumpkin pie spice and salt. With a pastry cutter,cut butter into the mixture. Stir in walnuts. Refrigerate.
- Cake: In a large bowl, whisk together the flour, baking powder, baking soda, pumpking pie spice and salt. Set aside.
- In another large bowl, beat butter and sugars on medium speed until creamy and blended, about 3 minutes. Beat in eggs, one at a time. Add vanilla and beat until smooth.
- On low speed, beat in the flour mixture in three additions, alternating with buttermilk. Beat for 2 minutes.
- Spoon half of the batter into the prepared pan. Sprinkle half of the topping over the batter. Spoon remaining batter over topping. Sprinkle remaining topping over top of cake.
- Bake at 350 degrees F for 50 to 60 minutes or until toothpick inserted in center of cake comes out clean. Cool completely on wire rack. Loosen edges with a knife or small spatula. Cut into 12 equal pieces.
- In a small bowl, mix together confectioners' sugar and just enough milk to get a good drizzling consistency. Drizzle over cake squares and allow to set before serving.

INCREDIBLY MOIST COFFEE-WALNUT SNACK CAKE

- Gather the ingredients.
- Heat the oven to 350 F/180 C/Gas 4. Grease and flour an 8-inch round cake pan.
- With a food processor or food chopper, finely chop 1/2 cup of the walnuts. Set aside.
- Combine the flour, baking powder, and salt in a bowl; blend thoroughly and set aside.
- In a mixing bowl with an electric mixer , beat the 4 ounces of softened butter with the granulated sugar until light and fluffy. Beat in the eggs, one at a time, beating after each addition. Blend in the vanilla.
- In a measuring cup, combine the milk with the 3 tablespoons of espresso or coffee.
- With the mixer on low speed, blend in the flour mixture into the creamed mixture, alternating with the milk and espresso mixture. Blend well.

- Heat the oven to 350 degrees F. Place the raisins in a bowl and toss them with 2 tablespoons of the flour until lightly coated (this will prevent them from sinking in the cake batter during baking).

- Combine the granulated and dark brown sugars, walnuts, flour, vanilla, and cinnamon in a medium bowl. Add the butter and stir to make moist, coarse crumbs; set aside.
- Preheat the oven to 350 degrees F.

- Combine the sugars, walnuts, spices and pinch of salt in a food processor. Process until the nuts are chopped coarsely but not ground to a powder. Remove 2/3 cup (3.4 oz, 95g) for filling. Add the flour and butter to the remaining streusel and process until it begins to form clumps.
- Butter and flour a 9 spring form pan or a 10 tube pan . Preheat the oven to 325°F convection or 350°F regular.
- Combine the pumpkin puree with the sour cream, eggs, honey and extracts, set aside.
- Sift the flour, sugar, spices, baking soda, baking powder and salt into a mixing bowl. Mix the dry ingredients on low speed for 30 seconds. With the mixer running on low, add the butter to the dry ingredients and mix until incorporated. Add 1/3 the pumpkin mixture and increase the speed to medium. Mix on medium speed for 2 minutes to lighten the batter. With the mixer on low speed add the remaining pumpkin mixture in two batches, scrape the bowl between additions.
- Pour 1/2 of the batter into the prepared pan and smooth to an even layer. Sprinkle the reserved streusel filling over the batter. Carefully drop dollops of the remaining batter over the filling and smooth to an even layer. Grab large clumps of the streusel topping and break them into smaller chunks over the batter.
- Bake until the a toothpick inserted in the center comes out clean, about 45-50 minutes. Cool for 10 minutes before releasing the spring form pan.
