Walnut Raisin Scones image

These scones are a good choice for breakfast, brunch or tea. They contain very little sugar because the sweetness comes from the raisins. Walnuts and lemon rind provide crunchiness and tang. These scones are wonderful served warm and spread with butter and honey or jam.

Number Of Ingredients 13

2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated lemon zest
1/2 cup butter, cubed
3/4 cup chopped walnuts
1/2 cup raisins
3/4 cup buttermilk
2 tablespoons buttermilk
2 tablespoons white sugar
2 tablespoons chopped walnuts

Steps:

  • In a large bowl combine flour, sugar, baking powder, baking soda, salt and lemon peel.
  • With a pastry blender or 2 knives, cut in butter until mixture resembles coarse meal. Mix in all but 2 tablespoons of the nuts and the raisins.
  • Mix in buttermilk with fork.
  • Gather the dough into a ball and knead for about 2 minutes on lightly floured board.
  • Roll or pat out 3/4 inch thick.
  • With a chef's knife cut into 3 inch triangles. Place, spaced 1-inch apart, on a greased baking sheet.
  • Brush tops with remaining 1 tablespoon buttermilk; sprinkle with the remaining sugar and the nuts.
  • Bake in center of 425 degree F oven about 15 minutes or until nicely browned.
  • Serve warm with butter or jam.

Number Of Ingredients 10

1-3/4 cups all-purpose flour
1/4 cup finely chopped walnuts
4-1/2 teaspoons sugar
2-1/4 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/4 cup cold butter, cubed
2 eggs
1/3 cup heavy whipping cream
1/4 cup buttermilk

Steps:

  • In a bowl, combine the first six ingredients; cut in butter until the mixture resembles coarse crumbs. , Combine eggs and cream; stir into dry ingredients just until moistened. Turn onto a floured surface; gently pat into a 7-in. circle, 3/4-in. thick. Cut into eight wedges. , Separate wedges; place on a lightly greased baking sheet. Brush tops with buttermilk. Let stand for 15 minutes. Bake at 450° for 14-16 minutes or until golden brown.

2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 cup cold butter, cubed
1 cup raisins
3/4 cup buttermilk
1 egg white
Additional sugar

Steps:

  • In a bowl, combine dry ingredients. Cut in butter until mixture resembles coarse crumbs. Stir in raisins and buttermilk just until moistened. Turn onto a floured surface; knead gently 6-8 times. Pat into an 8-in. circle and cut into 12 wedges. Place 1 in. apart on a greased baking sheet. Beat egg white until foamy; brush over scones. Sprinkle with sugar. Bake at 425° for 12-15 minutes or until golden brown.

Adopted recipe.These are nice and tender. I think the added sugar on the top makes them just right. You could probably mix the confectioners sugar with a little water to make a glaze for them too.

1/2 teaspoon cinnamon

1 cup apple, peeled, chopped fine
1/2 cup raisins
4 -5 tablespoons apple juice, Cold or 4 tablespoons water
1 tablespoon confectioners' sugar

Steps:

  • Preheat oven to 400 deg F.
  • Mix together dry ingredients.
  • Cut in shortening as you would for a pie crust.
  • Stir in apples and raisins.
  • Add enough juice to make a stiff dough.
  • On floured surface, roll dough about 1/2" thick.Apprx. 8 in circle.
  • Cut into triangles and bake on cookie sheet for 20-25 minutes, or until light brown.
  • Remove from oven and dust with 1 TBsp confectioners sugar.
  • Let cool.
  • Separte triangles.

1/4 cup granulated sugar
2/3 cup coarsely chopped raisins
1/2 teaspoon finely grated lemon zest
1/2 cup heavy cream, plus more for brushing
1 large egg, lightly beaten
Coarse sanding sugar, for sprinkling

Steps:

  • Preheat oven to 375 degrees. In a bowl, whisk together baking mix, granulated sugar, raisins, and zest. In another bowl, whisk together cream and egg; stir into baking-mix mixture until a dough forms. Pat into a 6-inch round on a parchment-lined baking sheet. Brush with cream; sprinkle with sanding sugar. Cut into 8 wedges, and pull them 2 inches apart.
  • Bake scones until golden brown, about 20 minutes. Let cool completely on pan on a wire rack.

This classic British recipe for Raisin Scones are fantastic straight from the oven or split and toasted the next day.

3 cups all-purpose flour
½ cup granulated sugar
2 egg
1 tablespoon baking powder
½ teaspoon salt
4 oz butter ((½ cup, 1 stick, 8 tablespoons), cut into small cubes)
1 cup cream or milk
1 cup raisins

Steps:

  • Preheat oven to 375F.
  • Sift together the flour, sugar, baking powder and salt.
  • Add the cubed butter into the flour mixture, coat, and work into the flour by rubbing between your palms to flatten the butter into the flour until it resembles large crumbs then mix in the raisins.
  • In a separate bowl, beat together the cream and eggs.
  • Mix the egg mixture into the flour mixture to bring together. If it's too sticky, add a little more flour. If the mixture seems too dry add more cream until the dough comes together.
  • Scoop the mixture out onto a lightly floured surface and with floured hands, knead until smooth and free of cracks, about 25 to 30 times.
  • Place a piece of parchment paper that is measured to your pan size onto your surface and dust the paper lightly with flour. Transfer the dough onto the paper and press the dough gently into a disk. Then using a floured rolling pin, roll the disk into a 9-inch round, about 1 inch thick.
  • Transfer the paper with the dough onto a sheet pan and cut it into 8 equal-sized wedges. Brush with milk and bake 20-25 minutes or until golden.

Steps:

  • Preheat oven to 400°F. Butter large baking sheet. Whisk flour, sugar, baking powder, and salt in large bowl to blend. Add butter. Using fingertips, blend mixture until coarse meal forms. Whisk egg yolks and buttermilk in small bowl to blend. Slowly stir egg mixture into flour mixture. Gently stir in raisins, walnuts, and fennel seeds. Turn dough out onto lightly floured work surface and knead gently just until smooth, about 4 turns. Divide dough in half; pat each half into 6-inch round. Cut each round into 6 wedges. 1½ cups (230g) of self raising flour
½ cup (110g) of caster sugar
1 teaspoon of ground cinnamon
1 cup (100g) of roughly chopped walnuts
1 cup (170g) of roughly chopped raisins
1 medium cooking apple*, peeled, cored and grated
1 cup of milk
60g of butter

Steps:

  • Preheat oven to 180 °C (350 °F).
  • Grease and line a standard loaf pan.
  • In a large mixing bowl combine flour, sugar, cinnamon, walnuts, and raisins.
  • Add grated apple and stir to combine.
  • Place butter and milk in a small saucepan and heat over low heat until the butter melts.
  • Once the butter is melted, remove from heat and add to the flour mixture.
  • Stir to combine and then pour mixture into the prepared loaf pan.
  • Bake for 50 - 55 minutes or until a cake tester comes out clean.
  • Allow to cool for several minutes in the pan before removing from the pan and placing on a wire rack.
  • Cool completely before slicing.
