400g strozzapreti or casarecce pasta , or another short pasta shape
100g walnut
3 roasted red peppers , roughly chopped
25g parmesan , or a vegetarian alternative, plus extra to serve
1 small garlic clove , roughly chopped
large pack basil , plus a few leaves to serve
2 tbsp extra virgin olive oil
50g mascarpone

Steps:

  • Cook the pasta following pack instructions. Meanwhile, toast the walnuts in a dry pan for a few mins. Add half the walnuts to the small bowl of a food processor or a hand chopper, along with the red peppers, Parmesan, garlic, basil, oil and some seasoning. Whizz to a paste, adding a splash of water from the pasta if it is a little dry.
  • Drain the pasta, reserving a cup of the cooking water. Return the pasta to the pan and set over a low heat. Add the pesto, mascarpone and 3-4 tbsp of the reserved pasta water, then stir until the mascarpone has melted, adding a splash more pasta water if the sauce needs thinning. To serve, crush the remaining walnuts in your hand and scatter over the pasta with a few more basil leaves and some extra Parmesan.

3 packed cups fresh basil leaves
3 large cloves garlic
1/3 cup lightly-toasted California walnuts
1/3 cup extra-virgin olive oil
1/3 cup grated Parmesan
Salt and pepper to taste
Optional: additional extra-virgin olive oil (for storage)
Tip: Try this with Spinach Lasagna with Walnut Pesto

Steps:

  • Place the basil leaves and garlic in a food processor or blender, and mix well. Add the walnuts, and continue to blend until the nuts are finely ground.
  • Keep the machine running as you drizzle in the olive oil. When you have a smooth paste, transfer to a bowl, and stir in the parmesan. Season to taste with salt and pepper.
  • If you are not going to use the pesto right away, place in a container that has a tight-fitting lid. Smooth out the top surface of the pesto, and pour on enough olive oil to cover it completely. This creates an air-proof seal that helps preserve it well. Cover tightly and store in the refrigerator.

3/4 cup walnuts, toasted
1 (5-ounce) package fresh arugula
2 cloves garlic
3/4 cup shredded Asiago cheese
3 tablespoons extra-virgin olive oil
2 tablespoons fresh lemon juice
1 1/2 teaspoons seasoned salt
1 (16-ounce) package orzo, cooked according to package directions and rinsed
1 (8-ounce) package mozzarella pearls
1 medium red bell pepper, chopped

Steps:

  • In the work bowl of a food processor, combine walnuts and next 3 ingredients. Pulse 5 times or until coarsely chopped. Add olive oil, lemon juice, and seasoned salt; process until smooth, stopping to scrape down sides of bowl as necessary. In a large bowl, stir together arugula mixture, orzo, mozzarella, and bell pepper. Cover and refrigerate until ready to serve.

Homemade pesto sauce is easy to make, and it's good on just about everything, from pastas to pizzas to salads.

⅓ cup walnuts
2 large garlic cloves, roughly chopped
2 cups packed fresh basil leaves
½ teaspoon salt
¼ teaspoon ground black pepper
⅔ cup extra virgin olive oil
½ cup grated Parmigiano-Reggiano

Steps:

  • Place the walnuts and garlic in the bowl of a food processor fitted with a steel blade. Process until coarsely chopped, about 10 seconds. Add the basil leaves, salt, and pepper and process until mixture resembles a paste, about 1 minute. With the processor running, slowly pour the olive oil through the feed tube and process until the pesto is thoroughly blended. Add the Parmesan and process a minute more. Use pesto immediately or store in a tightly sealed jar or air-tight plastic container, covered with a thin layer of olive oil (this seals out the air and prevents the pesto from oxidizing, which would turn it an ugly brown color). It will keep in the refrigerator for about a week.
  • Freezer-Friendly Instructions: Pesto can be frozen in an airtight container for up to 6 months. You can also divide your prepared pesto into the compartments of an ice cube tray and freeze. Once it's frozen, remove the pesto cubes from the tray and put in a sealable plastic bag or airtight container. You can add the defrosted pesto cubes to soups, pasta dishes, eggs, sandwiches, and potatoes.

1 stick plus 3 tablespoons, divided butter
3 finely chopped green onions
1/2 cup finely chopped green bell pepper
1/4 teaspoon garlic powder
1/2 quart plus 4 1/2 teaspoons heavy cream
1 tablespoon dijon mustard
1 dash cayenne pepper
1/2 cup saltine cracker crumbs
1/4 cup mayonnaise
1 egg
2 tablespoons fresh parsley
1/2 juiced lemon
1 lb picked over crabmeat
1 lb (about 24) peeled, deveined, tails on jumbo shrimp
12 slices halved crosswise bacon
cooked for serving (optional) white rice
1 cup plus 1 tablespoon olive oil
2 teaspoons minced, divided garlic
1/2 cup diced onions
1/4 cup white wine
1 teaspoon chicken base
3 tablespoons recipe follows pesto
1 teaspoon recipe follows Roux
2 cups fresh basil leaves
1 cup walnut pieces
1 cup grated Parmesan cheese
1 cup all purpose flour

Steps:

  • Preheat oven to 350 °F.
  • Melt 1 tablespoon butter in a skillet over medium heat and cook green onions, green pepper and garlic powder until peppers are limp. Place in mixing bowl and add 4 1/2 teaspoons cream, mustard and cayenne pepper to sauteed vegetables, mix well.
  • Add cracker crumbs, mayonnaise, egg, parsley and lemon juice; mix well. Gently fold in crabmeat. Form into small patties sized to stuff into shrimp; set aside.
  • Split shrimp down the bottom center to tail, being careful not to cut through. Stuff each shrimp with crabmeat mixture. Wrap shrimp in bacon and secure with a toothpick. Place on a baking pan and cook at 350 °F until bacon is crisp and shrimp are pink, about 15 to 20 minutes.
  • To serve, arrange 6 shrimp on each plate on a bed of rice, if desired, or serve as an appetizer. Drizzle with Basil Cream Sauce.
  • Basil Cream Sauce:
  • Heat 2 tablespoons butter and 1 tablespoon olive oil in a skillet over medium heat, add 1 teaspoon garlic and onion and cook until lightly browned, about 5 minutes. Add white wine and reduce by half. Add 1/2 quart heavy cream and chicken base and reduce by half again. Add pesto and roux, bring to a simmer and heat until slightly thickened, about 2 to 3 minutes.
  • Pesto:
  • In a food processor, blend basil leaves, walnuts, 1 cup olive oil, 1 teaspoon garlic and Parmesan cheese until a coarse paste is formed. Place in an airtight container and refrigerate until ready to use.
  • Yield: about 1 1/2 cups
  • Roux:
  • Melt 1 stick of butter in a large skillet over medium-low heat. Slowly add flour and stir until lightly browned. Leftover roux can be stored, tightly covered, in the refrigerator for several weeks.
  • Yield: about 1 1/4 cups

4 pieces sun-dried tomatoes
4 leaves fresh basil
3 tubs, 6 ounces each, soft garlic and herb cheese (recommended: Alouette brand)
1/4 cup sun-dried tomato tapenade
1/4 cup prepared basil pesto
1 baguette or whole grain baguette, pre-sliced at the bread counter
Handful baby carrots
Handful grape tomatoes

Steps:

  • Line a small shallow dish or bowl with plastic wrap or waxed paper. Coat wrap with vegetable spray. Arrange a pattern in bottom of the dish using the sun-dried tomatoes and basil. Add 1 1/2 tubs of garlic and herb cheese (about half a pound) to the dish and smooth over, then layer in the sun-dried tomato spread and the pesto. Spread the remaining cheese on top of the pesto. Place a serving plate over the bowl and invert the bowl. Hold on to the edges of the waxed paper or wrap to release the cheese. Remove the waxed paper or plastic wrap. Arrange the sliced baguette along 1 side of the torta.
  • Arrange carrots and tomatoes along the opposite side of the torta.

1 (8 ounce) package sliced provolone cheese
2 (8 ounce) packages cream cheese, at room temperature
20 pistachios, shelled
2 garlic cloves
1/2 cup fresh basil leaf
1/2 cup fresh parsley leaves
1/2 cup pine nuts
1/4 teaspoon salt
1/4 teaspoon fresh ground pepper
2 tablespoons extra virgin olive oil
3 ounces sun-dried tomatoes packed in oil

Steps:

  • Line a medium bowl with plastic wrap, leaving enough overhang to cover the top.
  • Reserving 3 slices of provolone, line the bottom and sides of the bowl with remaining provolone, overlapping slices.
  • For the cream cheese layer, process the cream cheese, pistachios, and 1 garlic clove in a food processor until blended; scrape the mixture into a bowl and set aside.
  • For the pesto layer, process the basil, parsley, pine nuts and the remaining garlic clove in the food processor until blended.
  • Dissolve the salt and pepper in the olive oil and mix well.
  • With the machine running, add the oil in a fine stream.
  • Scrape this mixture into a second bowl and set aside.
  • For the tomato layer, drain the tomatoes, reserving the oil.
  • Puree the tomatoes with a small amount of the reserved oil in a food processor.
  • Spread some of the cream cheese mixture over the cheese slices lining the bowl.
  • Layer the pesto mixture, half of the remaining cream cheese mixture, the sun-dried tomato mixture and then remaining cream cheese mixture in the bowl.
  • Cover with remaining provolone.
  • Bring edges of the plastic wrap together over the top and secure with a twist tie.
  • *Freeze until firm to the touch.
  • Remove the plastic wrap and invert the mold onto a serving platter.
  • To serve, slice thinly and serve with party crackers.
  • This will keep in the refrigerator for up to three months.
  • *Note:Original recipe says to freeze until firm, but I wasn't sure how that would work out.
  • I just froze for about an hour until it was firm enough to unmold.
  • Can be store easily in the refrigerator.
