WALNUT BROWNIES
I LEARNED to make these brownies in 1957 in home economics class. They were the first goodies I'd ever baked by myself. Now, 40 years later, I still make a batch occasionally. The recipe calls for basic ingredients on hand in most every kitchen, and the rich chocolate flavor is delicious. -Lorraine Silver, Chicopee, Massachusetts

Steps:
- In a small bowl, cream shortening and cocoa; beat in egg, sugar and vanilla. Combine dry ingredients; gradually add to creamed mixture. Beat on low speed until thoroughly combined. Stir in walnuts. , Pour into a greased 8x4-in. loaf pan. Bake at 350° for 15-20 minutes or until a toothpick inserted in the center comes out clean.

These are wonderful, chewy 'brownies' except that they are made with oatmeal instead of chocolate. Add your favorites (nuts, chocolate chips, chocolate candies, toffee chips) and create a truly delicious snack.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch baking pan.
- In a large bowl, beat the butter, brown sugar, and white sugar until thoroughly mixed and creamy. Beat in the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until well mixed, and mix in salt, baking soda, baking powder, flour, rolled oats, plus chocolate chips, raisins, and chopped nuts if desired. Mix well to moisten all ingredients, and spread into the prepared baking pan.
- Bake in the preheated oven until golden brown, 20 to 25 minutes. Let cool in the pan for about 5 minutes before cutting into bars.

OLD-FASHIONED OATMEAL BROWNIES

- Heat oven to 350°F. Spray 13x9-inch pan with cooking spray.
- In large bowl, mix oats, 3/4 cup flour, the brown sugar and baking soda. Stir in melted 3/4 cup butter. Reserve 3/4 cup oat mixture for topping. Press remaining oat mixture in pan. Bake 10 minutes. Cool 5 minutes.
- Meanwhile, in 3-quart saucepan, heat chocolate and 2/3 cup butter over low heat, stirring occasionally, until melted; remove from heat. Stir in granulated sugar, vanilla and eggs. Stir in 1 1/4 cups flour, the baking powder and salt.
- Spread batter over baked base. Sprinkle with reserved oat mixture. Bake about 30 minutes or until center is set and oat mixture turnes golden brown (do not overbake). Cool completely, about 2 hours. Cut into 8 rows by 6 rows.

"This recipe seems too good to be true, but these brownies really taste great," she assures. TIP: Use 1 cup plus 2 tablespoons of semisweet chocolate chips if you don't have six semisweet chocolate squares.

- In a microwave, melt chocolate and butter; stir until smooth. Cool slightly. In a large bowl, beat egg substitute and sugars. Stir in vanilla and chocolate mixture. - Set oven to 350. Place Quaker Gluten Free Oats in a food processor and blend into a fine flour. Set aside.
- Combine all the wet ingredients in a large bowl. Start with oil, add maple syrup or sugar. Add vanilla, mashed banana or applesauce, eggs.
- Combine all dry ingredients in a medium bowl: flour, espresso powder, cocoa powder, baking soda, salt, walnuts, chocolate chips. Mix well with a whisk. Add the dry ingredients slowly into the wet ingredients with a hand mixer or spatula.
- Line an 8x8 pan with parchment paper or grease it. Pour mixture into the pan. Place in oven and bake for 15 to 17 minutes (the longer they cook the less fudge like they will be). Let the brownies completely cool before cutting otherwise they will crumble a bit!
