Mushroom and Walnut Stuffed Cornish Hens image

This is a simple and easy recipe for roasted Cornish hens. This changes things up a bit from chicken!

1 tablespoon unsalted butter
2 tablespoons minced shallot
1 teaspoon minced garlic
1 (10 ounce) package button mushrooms, finely chopped
1 ½ teaspoons salt, divided
ground white pepper to taste
⅓ cup toasted walnuts
3 tablespoons dry white wine
4 Cornish game hens
1 teaspoon paprika
1 teaspoon onion powder
½ teaspoon garlic powder
½ teaspoon freshly ground black pepper
4 sprigs fresh thyme

Steps:

  • Melt butter in a large skillet over medium-high heat. Add shallot and garlic; cook and stir for 30 seconds. Add mushrooms, 1/2 teaspoon salt, and white pepper. Reduce heat to medium; cook, stirring often, until moisture has evaporated and mushrooms start to brown, about 12 minutes.
  • Stir walnuts and white wine into the skillet. Cook, scraping browned bits off the bottom of the skillet, until wine has evaporated, 3 to 5 minutes. Remove from heat and let cool, 10 to 15 minutes.
  • Preheat oven to 400 degrees F (200 degrees C).
  • Season Cornish hens inside and out with remaining 1 teaspoon salt, paprika, onion powder, garlic powder, and black pepper. Open cavities gently with your fingers; stuff with mushroom mixture. Pull skin back in place to cover stuffing. Place hens breast side-up in a roasting pan.
  • Roast in the preheated oven, basting once or twice with juices from the pan, until an instant-read thermometer inserted into the thickest part of the thigh registers 180 degrees F (82 degrees C), about 45 minutes. Garnish with thyme sprigs.

1/2 cup chopped onion
1/2 cup chopped celery
1/4 cup butter or margarine, 1/2 stick
1 (1-pound) package RITZ crackers, coarsely crushed, about 7 cups crumbs
2 Granny Smith apples, unpeeled, cored and large diced
1 cup walnuts, coarsely chopped
1 tablespoons chopped, minced rosemary
1/4 cup chopped fresh parsley
1 tablespoon poultry seasoning
1/2 teaspoon ground black pepper
1 (14.5-ounce) can chicken broth
2 eggs, beaten

Steps:

  • Preheat oven to 325°F. Cook mushrooms, onion, apples and celery in butter in skillet on medium heat until tender. Mix cracker crumbs, walnuts, parsley, rosemary, poultry seasoning, pepper and vegetable mixture in large bowl. Add broth and eggs, tossing until well blended. Spoon into 2 quart baking dish or pan; cover. Bake 30 to 40 minutes or until heated through.

1/2 pound sliced fresh mushrooms
1 medium onion, chopped
3/4 cup butter
2 to 4 teaspoons rubbed sage
1 teaspoon salt
1 teaspoon dried thyme, optional
1/2 teaspoon dried marjoram
1/4 teaspoon pepper
12 cups cubed day-old bread
3/4 cup chopped walnuts
1/2 to 1 cup chicken broth

Steps:

  • In a large skillet, saute mushrooms and onion in butter until tender. Stir in the sage, salt, thyme if desired, marjoram and pepper. Transfer to a large bowl. Add the bread cubes, walnuts and enough broth to reach desired moistness; toss to coat. , Spoon into a greased 2-qt. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until lightly browned. If stuffed into poultry, bake until a thermometer reads 180° for poultry and 165° for stuffing.

2 tablespoons extra-virgin olive oil, plus more for baking dish
2 large yellow onions, diced small
3 celery stalks, diced medium (about 2 cups)
Coarse salt and ground pepper
10 ounces cremini or button mushrooms, diced small
2 tablespoons fresh sage leaves, finely chopped
1/2 cup dry white wine, such as Sauvignon Blanc
1 cup toasted walnuts, roughly chopped
1 loaf crusty white bread, cut into 3/4-inch pieces (8 cups) and left uncovered overnight or toasted
1 to 1 1/2 cups low-sodium or homemade chicken or turkey broth
2 large eggs, lightly beaten

Steps:

  • In a large skillet, heat 1 tablespoon oil over medium-high. Add onions and celery; season with salt and pepper. Cook, stirring occasionally, until vegetables are soft, 5 to 7 minutes; transfer to a large bowl. Add 1 tablespoon oil, mushrooms, and sage to skillet; season with salt and pepper and cook, stirring often, until mushrooms are browned, 5 minutes. Add wine and cook, stirring and scraping up any browned bits with a wooden spoon, until wine is almost evaporated. Transfer to bowl with vegetables; add walnuts, bread, and enough broth to moisten (stuffing should feel moist but not soggy). Season with salt and pepper and toss to combine.
  • Add eggs to bread mixture and toss well to combine. Reserve 4 cups stuffing for turkey. Spoon remaining stuffing into a lightly oiled 2-quart baking dish. (To store, cover and refrigerate, up to 1 day.) Preheat oven to 400 degrees, with rack in upper third. Bake, uncovered, until golden brown on top, 30 minutes.

Steps:

  • In a small skillet, saute onion and garlic in butter until tender. In a bowl, combine the bread crumbs, walnuts, cheese, rosemary, salt and pepper; stir in onion mixture. 10 thin, crisp whole-grain crackers, such as Kavli
1 1/4 cups chopped walnuts, toasted
2 teaspoons extra-virgin olive oil
6 garlic cloves, minced
2 shallots, finely chopped
3 ounces shiitake mushroom caps, chopped (3 cups)
1 tablespoon fresh thyme
2 ounces spinach, trimmed
1 tablespoon water
3 boneless, skinless chicken breast halves (6 ounces each), butterflied and pounded evenly
Coarse salt and freshly ground pepper

Steps:

  • Preheat oven to 375 degrees. Pulse crackers and 3/4 cup walnuts in a food processor until finely ground.
  • Heat oil in a medium skillet over medium heat. Cook garlic and shallots until soft, about 4 minutes. Add mushrooms and thyme, and cook until mushrooms are slightly golden, about 4 minutes; transfer to a plate. Add spinach and water to skillet. Cook until wilted, about 1 minute. Chop spinach, and add to mushroom mixture. Stir in remaining 1/2 cup walnuts.
  • Season each chicken breast with 1/4 teaspoon salt and some pepper. Lay 1 chicken breast on a plate. Spread 1/2 cup mushroom-walnut mixture onto chicken, leaving a 1/2-inch border all around. Roll, and tie with kitchen twine. Cover with crumb mixture, pressing to coat. Repeat with remaining chicken, mushroom-walnut mixture, and crumbs. Transfer to a rimmed baking sheet, and bake until golden, about 30 minutes. Untie, and slice.

1 pound walnut bread, cut into 1-inch cubes
1/2 pound sweet French country bread, crusts removed and cut into 1-inch cubes
5 tablespoons unsalted butter + butter to grease pan
3 cups chopped onion, in 1/2-inch pieces
3 celery stalks, cut into 1/2-inch pieces
1/2 pound shiitake or other wild mushrooms, stemmed and quartered
1/2 pound brown or button mushrooms, quartered (or pre-sliced)
Kosher salt to taste
1 tablespoon finely chopped fresh thyme, or 1 teaspoon dried
1 1/2 teaspoons finely chopped fresh sage, or 1/2 teaspoon dried
1/2 teaspoon finely chopped fresh rosemary, or about 1/4 teaspoon dried
Freshly ground black pepper
3/4 cup currants or raisins
3 cups low-sodium chicken, turkey or vegetable broth

Steps:

  • Instructions: Place the bread cubes in a single layer on baking sheets and let dry overnight. Or, place in a 200° oven until very dry but not crispy, about 40 minutes. Let cool slightly. Preheat the oven to 350°. Butter a Dutch oven, deep casserole or a 13 x 9-inch glass baking pan. (A deeper casserole yields a moister stuffing.) Put the bread in a very large bowl. Melt 2 tablespoons of the butter in a large skillet over medium heat. Add the onion and celery and saute until tender but not browned, about 10 minutes, stirring occasionally. Pour the vegetables over the bread. Melt 2 more tablespoons butter in the skillet and add the shiitake and brown mushrooms. Sprinkle with a little salt and the thyme, sage and rosemary. Cook for about 2-3 minutes, until the mushrooms brown slightly, but don't cook long enough for them to begin releasing liquid. Scrape the contents of the pan into the bowl. Sprinkle the 2 teaspoons salt, lots of black pepper, and the currants over the stuffing. Toss together, then slowly drizzle in the broth, tossing well to moisten all of the bread in the bowl. If needed, add enough water so the bread is saturated with liquid. Place in the prepared pan, dot with remaining butter and cover the pan with foil. Bake for 30 minutes. Uncover, increase oven temperature to 400° and bake until crusty on top, 15-20 minutes.

30 large gourmet stuffing button mushroom
1/4 cup of chopped walnuts
1 cup of grated parmagiana-reggiano
1/2 cup of regular or Italian bread crumbs
1/2 cup freshed chopped italian parsley
4 cloves of garlic, minced
1 egg
2 cups of unsalted butter
salt & freshed cracked black pepper

Steps:

  • Brush mushrooms thoroughly to remove all dirt. Pop stems out and throw away. Mince 6 of the mushroom caps and put in large mixing bowl. Add bread crumbs, egg, 1/2 cup of parmagiano-reggiano, parsley, garlic, walnuts, pinch of salt and pepper to taste. Fold together until well blended. Melt unsalted butter and brush mushroom tops generously (all over and inside)...or do what I do and get messy by dunking the cap right into the butter. Stuff mushrooms with mixture. Bake for 15-20 minutes at 350 degrees. Once the mushrooms are out of the oven, top with rest of parmagiano-reggiano. Serve as appetizers or accompaniment to entree.
